Lazy but not lazy dinner. It comes together with minimal effort. Tastes delicious and it’s still a comforting home cooked meal. It’s my take on the Italian penicillin soup. You can take this method and add what you like ☘️🥣

Chicken and black pepper sauce 🥡🥢 recipe👇ready in less than 20 mins start to finish 👏🏽

Serves 3-4

3x chicken fillets
1x tbsp chicken bouillon
1x large white onion
1x red pepper
1x green pepper
1 x tbsp garlic granules
1 -2 tbsp of crushed black peppercorns - you can always add more at the end depending on your preference to heat
2 tbsp dark soy sauce
2 tbsp light soy sauce
200ml chicken stock
1 heaped tbsp oyster sauce
Cornflour slurry to thicken - 1 heaped tsp of cornflower mix with 50ml cold water

On Sunday I had the most beautiful meal Gloria Osteria Dublin where they welcomed Restaurant Chestnut for the most outstanding collaboration of cuisine - marrying together beautiful seasonal Irish produce and Italian soul ☘️🍝

Gloria Osteria Dublin is such a perfect restaurant I’m looking forward to trying their full menu another time 😍

I never did get the chance to visit Restaurant Chestnut in county Cork. So it was so nice to have this special experience. I can wait to see what they have planned for 2027 🫶🏼
