I couldn’t come to Ireland and not cook cabbage. This was my final dish with Leanne from and it’s the most perfect braised cabbage. These sweetheart cabbages had so much flavor and when cooked this way became melt in the mouth tender. I can eat this dish all year round.

Of course we had to make a potato dish. This one is fantastic. Crunchy, creamy, savory, buttery and just oh so good. This is Part 2 of my Cooking in Ireland series and I am cooking again with Leanne from I couldn’t stop eating these

Are these the best strawberries in the world? They very well could be

Some of the best meals I have ever had have just been by happenstance. Like this one. We stumbled upon this little restaurant and it was perfection. Truly one of the best soups I have ever had was this Cream of Vegetable soup. Simplicity at its finest

Travel day from Newport Beach CA to Galway Ireland. Starting out our trip here as my husband’s family are from here and are still here. It’s a long day of travel but worth it and it’s the kids first time in Ireland. Cannot wait for all the food and sights and memories

Cooking in Ireland Part 1. I am so happy to spend the day cooking with Leanne from This dish is called the Dublin Lawyer and it originates from the Seafood Cafe in Dublin. I would never think to pair a whiskey cream sauce with prawns but oh my god it works so well. It’s so simple to make but feels so decadent to eat. You will love this one

Sauce of the Summer Part 3. It’s somewhere between a sauce and a salsa. It’s peppery, a little spicy, zingy, lemony and some heat from the garlic that comes through. The peppers and balsamic lend a sweetness and it’s perfectly balanced. I would serve this with grilled fish or chicken or shrimp. Spread it over focaccia on a sandwich or just serve it as a dip for your bread for a dinner party. Super versatile which is why I love this series so much.

My latest fav low carb lunch. Using the chicken salad I made yesterday, my no mayo version and turning it into delicious little mini lettuce wraps. I can eat 3-4 of these for lunch. They are easy and delicious and perfect when I want a low carb high protein meal

Because I hate mayo so much I have never been able to eat chicken salad. But last Summer at Cafe Della in Hailey Idaho I at a version of this made with crème fraiche and it was out of this world. I finally got to try chicken salad!! This is big on flavor but it’s also light. It’s soft yet crunchy and everything about it is delightful. It’s perfect for Summer. Whether you hate mayo like me or love it, this version is a winner

I can’t believe I have never made this before. It’s a bit of East meets West with the rice flavored by the dashi and then finished with the good olive oil. It’s light, flavorful and has no business being this good. Perfect for the warmer months and it’s just so easy
