Puliyogare. Pulisadam. Tamarind Rice. Three names, one dish, endless family versions.
This is the rice served as prasadam in South Indian temples, packed for school lunches, and somehow better the day after it's made. Tangy tamarind, roasted spice powder, curry leaves, peanuts, a hint of jaggery for balance.

For the powder masala:
1 tsp whole pepper, 1 tbsp urad dal, 1 tbsp chana dal, 1 tsp coriander seeds, 2 tsp sesame seeds, 1/4 tsp fenugreek seeds, 3 dry red chilies, pinch of hing. Dry roast on low flame until fragrant, cool, and grind fine.
For the tamarind sauce:
5 tbsp sesame oil, 1 tsp mustard seeds, 1 tbsp urad dal, 1 tbsp chana dal, 2-3 dry red chilies, 1/8 tsp hing, 1/2 tsp turmeric, salt to taste, 2 tsp Kashmiri red chili powder, 2 sprigs curry leaves, 1/2 cup peanuts, 1.5 tbsp jaggery, tamarind pulp (from 1 lemon-sized ball soaked in 1.5 cups hot water for an hour).
Temper mustard seeds, dals, red chilies, curry leaves, and peanuts in oil. Add salt, chili powder, turmeric, and the powder masala. Add tamarind pulp, cook 6-7 minutes till thick. Stir in jaggery, cook a minute more, and switch off.
Mix into room-temperature rice and let it rest a few hours before serving for the best flavor.
