Bengali Style Semi Spicy πΆοΈ Egg π₯ Curry π
Hard boiled eggs π₯ are fried with a seasoning of salt π§ and turmeric powder then cooked in a semi thick sauce or gravy made with finely chopped onions π§
& tomatoes π
, ginger π« garlic π§ paste, chopped coriander πΏ leaves, salt π§, mustard oil and some basic Bengali spices , little sugar can be added to balance the taste.
This can be nicely paired with rice π, roti π« or paranthas π«.
As we mostly prefer rice π in lunch or dinner π½οΈ so I have served this egg π₯ curry π with white steamed rice π, mixed salad π₯ and a spoonful of green chilli πΆοΈ pickle π₯.
It was our yesterday night dinner π½οΈ & we enjoyed it a lot β€οΈπ₯π.
π³ Bengali Style Egg Curry β Dim Kosha π₯π
A rustic, flavourful Bengali-style egg curry made with golden-fried eggs, caramelised onions and a rich mustard-oil masala.
Ingredients:
6 hard-boiled eggs, shelled, with 4 shallow slits on each
Salt & turmeric powder, for marinating eggs
1 cup finely chopped onion
1 tbsp ginger-garlic paste
2β3 medium tomatoes, finely chopped
2 tbsp finely chopped coriander leaves
Β½ tsp cumin seeds
1 tsp each β turmeric powder, cumin powder, coriander powder, red chilli powder & Kashmiri red chilli powder
Β½ tsp shahi garam masala powder
Salt to taste
Mustard oil, as required
A little water
Method:
Marinate the boiled eggs with a little salt and turmeric. Heat mustard oil and lightly fry the eggs until golden. Remove and keep aside.
In the same pan, add cumin seeds. Once they splutter, add the chopped onions and sautΓ© until golden.
Add ginger-garlic paste and cook for a minute.
Add the chopped tomatoes and coriander leaves, cook until soft and the oil begins to separate.
Add turmeric, cumin, coriander, red chilli and Kashmiri chilli powders. Mix well and cook the masala on medium-low heat, adding a splash of water if needed.
Add salt and a little water to make a thick gravy. Add the fried eggs and gently coat them with the masala.
Cover and simmer for 5β7 minutes so the eggs absorb the flavours.
Finish with shahi garam masala, mix well and you are done.
π Serve hot with steamed rice for the classic Bengali comfort-food experience.
