Today's Breakfast platter 🍽

Rice and whole wheat flour rotlas (Pancakes) 🥞

Banana 🍌

Red grapes 🍇

Dry fruits 🥜

Green chilli 🌶 pickle

Homemade curd 🍶

RICE AND WHOLE WHEAT FLOUR ROTLA (PANCAKES)

This is super delicious, yummy & nutritious.
Can be made with freshly cooked rice & leflt over rice too.
Perfect for school tiffin & breakfast.

RECIPE
In a mixing bowl take left over rice or freshly cooked rice & a mashed medium sized potato.

To it add yoghurt (curd), salt, turmeric powder & red chilli powder.

Mix it well & allow it to soak for 15 minutes.

Now add chopped onions, coriander leaves & green chillies (optional), mix it gently.

Add wheat flour to make it a dough, the dough will be wet not dry.

Take a big lemon size ball, dust with dry atta (wheat flour), roll it out in a flat plate with your palm.

Slide it to a pre heated non stick griddle (tawa), as it is wet it may break.

Do not worry as long as it holds together on the non stick griddle, you can flatten it on the griddle too, but carefully as it the griddle will be hot.

Add oil on the sides and spread little oil over too.

Cook on one side. Flip & make it golden brown.

Cook till both sides becomes golden brown.

And its done. In this way make all the rotlas.

Serve with green chutney, yoghurt (curd) and achar (pickle).

মাইক্রোওয়েভ ওভেনে ইলিশ ভাপা🐟🍚🌧

Ilish Maach Bhapa 🐟 – Steamed Hilsa fish 🐟 cooked to perfection in a microwave oven, bursting with mustard flavors and a spicy kick.

Here is the recipe for Ilish Bhapa in Microwave Oven:

ইলিশ ভাপা (মাইক্রোওয়েভ ওভেনে)

Steamed Hilsa in Microwave Oven

🐟 Ingredients:

Hilsa fish – 3 medium-sized round pieces (marinated with salt, turmeric, and red chilli powder for 15 minutes)

Black mustard seeds – 6 tsp

Green chillies – 2 to 3 (pasted with mustard)

Salt – A pinch (for mustard paste)

Water – As required (for mustard paste & gravy)

Curd (dahi) – 3 tbsp (whisked)

Coconut paste or coconut milk – 2 tbsp

Mustard oil – 2 tbsp + to drizzle raw on top

Turmeric powder – ¼ tsp

Red chilli powder – ¼ tsp

Whole green/red chillies – 3

🔪 Method:

1. Make the paste:
Grind black mustard seeds, green chillies, a pinch of salt & required water into a smooth paste.

2. Prepare the marinade:
In a microwave-safe bowl, mix:
Mustard-chilli paste
Whisked curd
Coconut paste or coconut milk
Salt (as needed)
Turmeric powder
Red chilli powder
2 tbsp mustard oil
A little water to adjust the consistency

3. Add the fish:
Place marinated Hilsa fish pieces in the bowl & coat well with mixture. Top with 3 whole chillies.

4. Microwave Cooking:
Cover the bowl with a microwave-safe lid.
Microwave on high power for 4 mins.
Stop & carefully flip the fish pieces.
Microwave again for another 4 mins.
Give 3-5 mins standing time (let it rest inside the microwave after cooking is done).

5. Finishing Touch:
Take it out, remove the lid & drizzle some raw mustard oil on top for an authentic punch.

🍚 Serve with:
Steamed rice and a slice of fried eggplant or onion salad 🥗.

MANGO MOJITO 🥭 🍹

Good Morning, Friends 🍹🍹

🥭✨ Refresh your summer with this chilled mango mojito – a tropical twist to your classic drink! 🍹🌿

Recipe:

Ingredients:

1 cup ripe mango pulp

2 tbsp lemon juice

2 tbsp sugar or honey

Fresh mint leaves as required

1 cup soda water

Ice cubes as required

Lemon slices & mint sprigs for garnish

Method:

1. In a glass, muddle mint leaves with lemon juice & sugar or honey 🍯.

2. Add mango pulp & mix well.

3. Fill the glass with ice cubes & top it up with soda water.

4. Garnish with lemon slices & mint sprigs.

5. Stir gently and serve chilled.

School tiffin love 💕

Homemade Aloo Pyaaz ke Paranthe (potato and onion flatbreads) 🫓 packed with sliced pear 🍐 for sweetness and a little spicy kick of mirchi ka achar 🌶️(green chilli pickle)… a perfect balance of taste and nutrition for my princess 👧✨

RECIPE OF ALOO PYAAZ KE PARANTHE 🥔🧅🫓🌶
INGREDIENTS:

Whole wheat flour (atta) as required
Potato 🥔 2 large, peeled & mashed smoothly
Onion 1 medium, finely chopped
Coriander leaves 🍃 a handful, finely chopped
Red chili 🌶 flakes as required
Oregano 1 tsp
Roasted cumin powder 1/2 tsp
Chaat masala or amchoor powder 1/2 tsp
Sunflower 🌻 refined oil as required
Salt 🧂 to taste
Water 💧 as required

PROCESS:

Take whole wheat flour in a mixing bowl.
Add mashed potatoes 🥔, onion, coriander leaves, salt, all the spices, and 2 tsp oil to it.
Mix and mash everything nicely.
Now, make a smooth and firm dough with the required amount of water.
Keep covered the dough for 15-20 mins.
Now make medium-sized balls from it and roll it into thin chapatis (discs).
And roast each paranthas till both sides become golden brown with sunflower 🌻 refined oil or ghee in a griddle or tawa over medium to high flame.
Serve the paranthas hot with curd, pickle, or tea 🍵 or pack it in the tiffin box.

CHAL KUMRO DIYE ILISH MAACHER JHOL 🐟🐟

HILSA FISH CURRY WITH ASH GOURDS 🐟🐋

Prepared flavor packed hilsa fish curry with ash gourds for dinner tonight. Served it with white steamed rice 🍚. Low in spices but full of flavors is excellent to enhance your taste buds.

RECIPE:
INGREDIENTS:
Hilsa fish (Ilish maach) 6 round pieces
Ash gourds (chal kumro), peeled & cubed 2 cups (discard the seedy part)
Or
Half of a medium-sized sized ash gourds, peeled & cubed (discard the seedy part)
Green chilies 2-3, slited up to middle
Paanch foron (Bengali five spice)1/2 tsp
Turmeric powder 1 tsp
Red chili powder🌶 1tsp
Cumin powder 1/2 tsp
Salt to taste
Mustard oil as required

PROCESS:
Cut, clean wash, drain & pat dry the fish nicely.
Season the fish pieces with little salt & turmeric powder, keep aside for 10 mins.
Now heat oil in a kadai.
Shallow fry fish pieces nicely till both sides become golden.
Remove & keep aside.
Fry in batches.
Now, in the same oil, add the paanch foron & green chillies, allowing them to crackle.
Add ash gourd pieces, stir fry for 2 minutes over low to medium flame.
Add turmeric, red chili & cumin powder & saute well till the raw smell of the spices goes off.
Now add required water (arou d 2 cups), bring it to boil.
Cook covered over low flame till the ash gourds are almost cooked.
Now add the fried fish pieces, stir well.
If required, add a little warm water & mix well.
Now cook covered over low to medium flame till the ash gourd pieces are tender & fish pieces are soft. But not overcooked.
Check for seasonings. If required, fix it now.
Leave the gravy little runny for better taste.
Turn the flame off.
Give 5 mins standing time.
Transfer it to a serving dish.
Serve hot with white steamed rice🍚.

Note: Don't throw out the ash gourds peel. With this, you can make ash gourds peel chutney (chal kumror khosa Bata).

Monsoon Special Bengali Style Mixed Vegetables Khichuri (khichdi ) Thali 🍽

Monsoon indulgence on a plate 🌧️🍴

Bengali-style khichuri loaded with veggies, crispy Pomfret masala fry, fluffy omelette, golden potol bhaja (pointed gourds fry), homemade creamy curd, sweet mango slices 🥭 & a tangy lemon twist 🍋.

Pure comfort, pure Bengali food pleasure on my plate 🍽 🐟🍛✨

RECIPE OF MIXED VEGETABLES MASOOR DAL KHICHURI 🍛

INGREDIENTS:

Masoor dal (red lentils) 1 cup
Gobindo bhog rice 1.2 cup
Tomato 2 chopped
Onion 2 chopped
Ginger garlic paste 1 tbsp
Carrot 1 medium peeled & chopped
Beans 8-10 chopped
Potato 2 medium, peeled & chopped
Green peas (shelled) 1 medium-sized bowl
Pumpkin, cubed 1 cup
Salt to taste
Cooking oil
Ghee 1-2 tbsp

For tempering
Cumin seeds 1tsp
Bay leaves 2medium
Dry red chili 2 (optional)

Dry spices
Turmeric powder 1tsp
Cumin powder 1tsp
Coriander powder 1tsp
Red chilli powder 1tsp
Garam masala powder 1/2tsp

PROCESS:

Wash lentils (dal) nicely & soak in water for 30 mins, drain & keep aside.
Wash rice & soak in water for 30 mins, drain & keep aside.
Heat oil in a large kadai.
Crackle all tempering ingredients.
Add chopped potatoes & fry for a minute.
Add onion & saute for 1 more min.
Add ginger garlic paste, saute well till raw aroma goes off.
Add carrot & beans, saute for 2 mins.
Add salt & all the dry spices, mix & saute well.
Add chopped tomato, saute till tomatoes are almost mushy.
Add lentils & rice separately, saute.
Now add required hot water, mix & stir well.
Cook covered over low to medium flame till the khichuri is half cooked, stirring occasionally.
Now add pumpkin cubes & green peas 🫛, mix well.
Now again cook covered stirring occasionally, till khichuri is fully cooked.

Whenever necessary, add water, stir & cook until you get the khichuri consistency or you get the khichuri consistency or your desired thickness.
After you get the desired thickness, add the ghee, mix well.
Turn the flame off.
Keep covered for sometimes .
Transfer into a serving bowl.
Serve hot with the accompanied of your choice.

Our Today's and Daughter's together ❤️

🥬 Aloo Peyaj'er bhaja (potato and onion stir fry) 🥔🧅

🥬 Roti (soft phulkas) Indian flatbreads 🫓 made with whole wheat flour

🥬 Green chilli 🌶 pickle

🥬 Apple slices 🍎

🥬 Banana 🍌

🥬 Milk tea 🥛☕️

And daughter's consists of onion & potato stir fry, roti (flatbreads), apple 🍎 slices, and green chilli sauce.

A very common, comforting, and super delicious Bengali style and for kids.
