A true Bengali feast, straight from the heart of a Bengali kitchen! 🍚🐟🌿✨

Golden Ilish Maach Bhaja (hilsa fish 🐟 fry ) fried to perfection in mustard oil, served with steamed rice, a comforting curry of potatoes, bottle gourd (lau) lau data (stems & branches) and soya chunks, and earthy Lau Pata Bharta made with bottle gourd leaves. And of course, a little bowl of that precious Ilish Maach Bhajar Tel β€” the mustard oil infused with the rich flavour of hilsa, and salad πŸ₯— πŸ’›

Simple ingredients, traditional flavours, and the unmistakable taste of Bengal. ❀️

LAU PATA (BOTTLE GOIRD GREENS ) BHARTA RECIPE 🌿🌿

Ingredients:
Lau pata🌿 500 gms
Garlic 8 to 10 cloves (adjustable to taste)
Green chilli as required
Nigella seeds ( Kalo Jeera/ kalonji) 1/2 tsp
Salt πŸ§‚ to taste
Mustard oil as required for cooking + 1-2 tsp for drizzling over bharta

Method:
1. Wash the lau pata thoroughly & chop them finely.
2. Heat mustard oil in a pan. Add kalo jeera (nigella seeds), let them splutter.
3. Add garlic & green chillies. SautΓ© until garlic turns lightly golden & aromatic.
4. Add chopped lau pata & salt, mix well & cook uncovered on medium heat until leaves become soft & the excess moisture evaporates.
5. Keep stirring & dry-fry until the bharta becomes nicely cooked & slightly dry. Adjust the chillies to taste.
6. Let it cool for sometime & grind it into a semi coarse paste.
7. Finish with 1–2 tsp mustard oil drizzled over the bharta for that authentic Bengali flavour. πŸŒΏπŸ’›

Bengali Style Semi Spicy 🌢️ Egg πŸ₯š Curry πŸ›

Hard boiled eggs πŸ₯š are fried with a seasoning of salt πŸ§‚ and turmeric powder then cooked in a semi thick sauce or gravy made with finely chopped onions πŸ§… & tomatoes πŸ…, ginger 🫚 garlic πŸ§„ paste, chopped coriander 🌿 leaves, salt πŸ§‚, mustard oil and some basic Bengali spices , little sugar can be added to balance the taste.

This can be nicely paired with rice 🍚, roti πŸ«“ or paranthas πŸ«“.

As we mostly prefer rice 🍚 in lunch or dinner 🍽️ so I have served this egg πŸ₯š curry πŸ› with white steamed rice 🍚, mixed salad πŸ₯— and a spoonful of green chilli 🌢️ pickle πŸ₯’.

It was our yesterday night dinner 🍽️ & we enjoyed it a lot ❀️πŸ₯šπŸ›.

🍳 Bengali Style Egg Curry β€” Dim Kosha πŸ₯šπŸš

A rustic, flavourful Bengali-style egg curry made with golden-fried eggs, caramelised onions and a rich mustard-oil masala.

Ingredients:
6 hard-boiled eggs, shelled, with 4 shallow slits on each
Salt & turmeric powder, for marinating eggs
1 cup finely chopped onion
1 tbsp ginger-garlic paste
2–3 medium tomatoes, finely chopped
2 tbsp finely chopped coriander leaves
Β½ tsp cumin seeds
1 tsp each β€” turmeric powder, cumin powder, coriander powder, red chilli powder & Kashmiri red chilli powder
Β½ tsp shahi garam masala powder
Salt to taste
Mustard oil, as required
A little water

Method:
Marinate the boiled eggs with a little salt and turmeric. Heat mustard oil and lightly fry the eggs until golden. Remove and keep aside.

In the same pan, add cumin seeds. Once they splutter, add the chopped onions and sautΓ© until golden.

Add ginger-garlic paste and cook for a minute.

Add the chopped tomatoes and coriander leaves, cook until soft and the oil begins to separate.

Add turmeric, cumin, coriander, red chilli and Kashmiri chilli powders. Mix well and cook the masala on medium-low heat, adding a splash of water if needed.

Add salt and a little water to make a thick gravy. Add the fried eggs and gently coat them with the masala.

Cover and simmer for 5–7 minutes so the eggs absorb the flavours.

Finish with shahi garam masala, mix well and you are done.

🍚 Serve hot with steamed rice for the classic Bengali comfort-food experience.

HILSA FISH 🐟 CURRY πŸ› AND RICE 🍚

Nothing comforts the soul quite like a quintessential Bengali meal! 🐟🍚 Savoring hot steamed rice paired with a delicate Jhinge diye Ilish Maacher Jhol (Hilsa with ridge gourd), accompanied by fresh salad, cool curd, and a piece of dry fruit burfi to wrap it up on a sweet note.

Pure bliss on a plate! ✨❀️

Jhinge Diye Ilish Maacher Jhol🐟🐟 ( Bengali Style Hilsa Fish 🐟 Curry With Ridge Gourds):

Recipe:

Ingredients:

* Fish: 6 pieces Hilsa (Ilish)

* Vegetables: 600g Ridge Gourd (Jhinge - peeled and chopped into batons), 1 onion (thinly sliced)

* Tempering: 1/2 tsp Kaalo Jeera (nigella seeds), 3–4 green chillies (slit)

* Spices: 1 tsp turmeric powder, 1 tsp cumin powder, 1 tsp red chilli powder, salt (to taste)

* Oil: Mustard oil as needed

Method:

* Marinate & Light Fry: Rub the fish pieces with 1/2 tsp of turmeric powder and salt. Lightly fry them in hot mustard oil for 1–2 minutes per side, then set aside.

* Temper the Oil: In the same oil, add kaalo jeera (kalonji) and slit green chillies until fragrant.

* SautΓ© Onions & Veggies: Add the sliced onions and sautΓ© until soft. Toss in the ridge gourd along with salt, turmeric, cumin, and red chilli powders. Mix well.

* Simmer: Cover and cook on medium heat. The ridge gourd will release its own juices, softening as it cooks down.

* Add Fish & Gravy: Once the veggies are tender, add a splash of warm water for the desired gravy consistency. Place the fried fish back into the pan, cover, and simmer for 5 minutes so the flavors meld together.

* Finish: Garnish with fresh green chillies and serve hot with steamed rice!🍚
