Mutton stew 🍲-Recipe ⬇️

INGREDIENTS
* Mutton curry cut-250 gms
* Coconut 🌴 oil-10 ml
* Whole garam masala-cinnamon/cardamom and cloves
* onion 🧅 slice-1 small sized
* Ginger 🫚 -small piece
* Garlic 🧄- 4-5 cloves
* Green chillies-1 nos
* Curry leaves 🍃-1 sprig
* Salt-to taste
* Coconut 🥥 milk- 1st extract-150 ml
* carrots 🥕
* potatoes 🥔
* Crushed pepper-1/2 tsp
* Garam masala-1/2 tsp
* Fennel powder-1/2 tsl

METHOD
* Pressure cook your mutton with ginger garlic paste and salt for 5 whistle one in high and 4 in medium flame
* In a pan heat coconut oil and add whole garam masala followed by julienne of garlic,ginger/ sliced green chilies and curry leaves
* Add sliced onion and and salt saute till transparent
* Then add carrot and potatoes and sauté now add the cooked mutton along with the stock cover and cook for 8-10 minutes Or till the potatoes are cooked well
* Check for seasoning add salt/fennel powder/garam masala and crushed pepper
* Now add your first extract of thick coconut milk and keep the flame in simmer
* And your creamy mutton stew is ready
* Serve with steamed soft bread slices

Chilli 🌶️ paneer

INGREDIENTS
* Paneer -200 gms
* Green capsicum -quarter
* Onions -half
* Salt -to taste
* Pepper -tsp
* Ginger garlic paste-1 tsp
* Sugar-1/2 tsp
* Dried red chilli- 1 nos
* Chopped Ginger 🫚-small piece
* Chopped Garlic -4-5 cloves
* Sliced green chilli-1 nos
* Cooked chilli paste -1.5tbsp
* Corn flour -2 tbsp
* oil -10 ml
* Dark soya sauce-1 tsp
* Light soya-1/2 tsp
* Tomato ketchup -1tsp
* Chopped spring onions

METHOD
* Marinate the paneer with salt/pepper/ginger garlic paste and add corn flour and dust the paneer
* Heat oil in a pan the start shallow frying the paneer once paneer got colour and add the cut capsicum and onions in the same oil and sauté them too
* In the same pan with remaining oil add dried red chilli/chopped garlic/ginger and sliced green chilli and and sauté now add cooked chilli paste /dark soya /light soya sauce and tomato ketchup and mix them nicely along with quarter cup of water
* Season them with pepper and sugar then add the fried paneer along with capsicum and onions toss them nicely
* Finish it with chopped spring onions
* And our dry chilli paneer is ready serve with fried rice or noodles

Egg Fry🥚 -Recipe ⬇️

INGREDIENTS
* Eggs-3 nos
* Olive oil
* Salt
* Pepper
* Turmeric powder -1/4 tsp
* Chopped onions -1 small
* Cooked chilli paste-1 tsp
* Chopped coriander 🌿

METHOD
* Boil the eggs with salt and vinegar peel and cut into halves
* Heat oil add you boiled eggs season it with salt turmeric and crushed pepper and turn them
* Now add chopped onions and sauté once sautéed add cooked chilli paste and mix them well
* Once the eggs are nicely fried finish it with chopped coriander leaves
* Our egg fry is ready

Dry chilli 🌶️ chicken -Recipe ⬇️

INGREDIENTS
* Chicken leg boneless -250 gms
* Green capsicum -quarter
* Onions -half
* Salt -to taste
* Pepper -tsp
* Sugar-1/2 tsp
* Chopped Ginger 🫚-small piece
* Chopped Garlic -4-5 cloves
* Sliced green chilli-1 nos
* Cooked chilli paste -1 tbsp
* Corn flour -2 tbsp
* oil -5 ml
* Dark soya sauce-1 tsp
* Tomato ketchup
* Chopped spring onions
* oil-for frying
* Beaten eggs(optional)

METHOD
* Marinate the chicken with salt/pepper/oil/ soya sauce and corn flour drizzle little water and make a thick batter
* Heat oil and frying the chicken till its cooked don’t make it too crispy and add the cut capsicum and onions in the same oil and fry them too
* In a pan heat oil then add chopped garlic/ginger and sliced green chilli and and sauté now add cooked chilli paste /dark soya sauce and tomato ketchup and mix them nicely along with quarter cup of water
* Season them with salt/pepper and sugar then add the fried chicken along with capsicum and onions toss them nicely
* Finish it with chopped spring onions

* White till-1 tbsp
* Dried Red chilli 🌶️ -6-8 nos
* Curry leaves 🍃-1 sprig
* Rock salt-1 tbsp
* Hing powder-1 tsp
* gingelly oil-5 ml

METHOD
* Roast all the ingredients separately

Pepper chicken 🍗-Recipe ⬇️

INGREDIENTS
* Chicken curry cut-300 gms
* Gingelly oil-15 ml
* Mustard seeds-1/4 tsp
* Dried red chilli-1 nos
* Chopped garlic 🧄-5 cloves
* Chopped ginger-small piece
* Curry leaves 🍃 -1 sprig
* Sliced shallots -8-10 nos
* Chopped tomatoes- 1 nos( small)
* Salt 🧂
* Turmeric powder -1 tsp
* Chopped coriander leaves

FOR POWDER (pepper chicken masala)
* Pepper corns- 1 tbsp
* Coriander seeds-1 tsp
* Cumin seeds - 1/2tsp
* Dried Red chilli -2 pieces

METHOD
* Marinate the chicken with salt/ turmeric and chilli powder set aside for half an hour
* Heat a pan and dry roast the above mentioned ingredients and powder them in a blender
* Heat gingelly oil in a kadai
* Add chopped ginger/ chopper garlic and saute then add curry leaves
* Add sliced shallots Sauté till become golden brown then turmeric powder and salt sauté till raw flavours are gone
* Now add chopped tomatoes and cook till it is mashed
* Then Add marinated chicken pieces and mix well cook for one minutes then cover and cook for 5 to 7 minutes
* Add roasted pepper chicken powders powder to it and mix well cook then cover and cook for 5 to 7 minutes or till the chicken is well cooked
* Finish it with chopped coriander leaves you can keep it as a semi-thick preparation
* Or you can Start drying up the masalas on a medium flame till it become dry and and serve as a starter
* Serve it with steamed rice or dry them and serve as starter

Mixed fried rice -Recipe ⬇️

Ingredients
* Chicken cubes-50-75 gms
* Prawns-25-50 gms
* Eggs -2 nos
* oil -10 ml
* Chopped garlic-3-5cloves
* Chopped ginger-small piece
* Chopped spring onions-2
* Boiled basmati rice
* Cooked chilli paste
* Salt
* pepper powder
* Light soya sauce

METHOD
* Boil the rice with salt and strain them and add allow it to cool
* Heat oil in a wok scramble the egg and keep it aside then add little oil and chopped ginger and garlic saute
* Now add the chicken cubes and sauté then add the prawns and give it a mix and add the whites of the spring onions
* Once chicken and prawns are cooked season it with salt and pepper and then i add the chilli paste and mix nicely and add the scrambled eggs
* Now add the boiled rice and season them with salt/pepper and add light soya sauce and mix well
* Check for seasoning and finish it with spring onions

INGREDIENTS
* Chicken strips(breast)-200 gms
* Curd- 75 ml(total)
* Salt
* Pepper
* Turmeric powder
* Chilli powder
* Coriander powder
* Jeera powder
* Garlic -5 cloves
* Sliced green chilli
* Curry leaves 🍃
* Corn flour -2 tbsp
* Olive oil -10 ml
* Dark soya sauce-1tsp
* oil-for frying
* Beaten eggs i

METHOD
* marinate the chicken with curd /salt/pepper/ turmeric powder - and set aside for 30-45 minutes
* Remove the excess curd and add ginger garlic paste and chilli powder drizzle oil and beaten eggs and corn flour and marinate and keep aside for 30 minutes
* Heat oil and fry the strips till its cooked
* In a pan add olive oil then sliced garlic/green chilli and curry leaves and sauté now add salt/turmeric/chilli and cumin powder then saute and little water and mix
* Now add curd and mix followed by adding dark soya sauce mix weel and add the fried chicken strips
* toss them nice and our majestic chicken is ready
