Sausage, Peppers, Onions
A couple ingredients a nice piece of Italian bread and everyone is happy. Complicated recipes are just too complicated and simple recipes like this one are always delicious.
You’ll need for 4-6 people-
•2-pounds Italian pork sausage mild or hot you choose cut them into 2” pieces
•2-bell peppers cleaned, sliced you pick the colors they all are delicious
•1-large onion sliced
•olive oil
•salt
•pinch of red pepper flakes
•2-garlic cloves sliced

1-using a large skillet add the sausage tossed with 2 tablespoons of the olive oil
2-on a medium heat cook the sausage until they are almost done
3-add the onions, peppers, garlic, pinch of salt, red pepper flakes
4-toss this together add 1/4-cup of water (this will steal the peppers and onions a little) cover and cook on low heat for 10 minutes toss a couple times along the way.
5-finish with a drizzle of extra virgin olive oil
Make the sandwich, enjoy just like it is or however you want

Shrimp and Bacon Nacho-Stuffed Mac Slabs 🍤🥓

Crispy mac and cheese slabs stuffed with juicy shrimp, smoky bacon, and crunchy nacho toppings.

Ingredients:
- 2 cups cooked macaroni
- 1 cup shredded cheddar cheese
- 1/2 cup cooked shrimp, chopped
- 4 slices bacon, crispy and crumbled
- 1/4 cup crushed nacho chips
- 1/4 cup milk
- 1 egg
- 1 tbsp butter
- 1/2 tsp garlic powder
- Salt and pepper to taste

Directions:
1. Preheat oven to 375°F (190°C). Grease a baking dish.
2. Mix macaroni, cheese, milk, egg, butter, garlic powder, salt, and pepper in a bowl.
3. Press half the mac mixture into the dish. Layer shrimp, bacon, and nacho chips on top.
4. Cover with remaining mac mixture, pressing gently.
5. Bake for 20–25 mins until golden and crispy. Cool slightly before slicing.

Ingredients

For the Chicken:

- 1½ lbs boneless, skinless chicken breast or thighs, chopped
- 3 tbsp honey
- Juice and zest of 2 limes
- 2 cloves garlic, minced
- 1 tsp chili powder
- ½ tsp cumin
- Salt & pepper to taste

For the Wonton Tacos:

- 24 square wonton wrappers
- Oil for frying
- 1 cup black beans, rinsed and drained
- 1 avocado, diced
- 1 small tomato, diced
- ¼ cup red onion, finely chopped
- 2 tbsp cilantro, chopped

For the Avocado Crema:

- ½ ripe avocado
- ¼ cup sour cream or Greek yogurt

Oven-Fried Squash

Ingredients:

• 2 medium yellow squash or zucchini, sliced into 1/4-inch rounds
• 1/2 cup buttermilk (or milk mixed with 1 tsp lemon juice)
• 1/2 cup cornmeal
• 1/2 cup panko breadcrumbs (or regular breadcrumbs)
• 1/4 cup grated Parmesan cheese (optional, for extra flavor)
• 1/2 teaspoon garlic powder
• 1/2 teaspoon paprika
• Salt and black pepper, to taste
• Olive oil spray or nonstick cooking spray

Instructions:

Step 1: Preheat the Oven
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
Step 2: Soak the Squash
Place the squash rounds in a bowl and pour over the buttermilk. Let them soak for about 10 minutes while you prepare the breading.
Step 3: Prepare the Breading
In a shallow bowl, mix together the cornmeal, panko breadcrumbs, Parmesan (if using), garlic powder, paprika, salt, and pepper.
Step 4: Bread the Squash
Take each squash round out of the buttermilk, allowing the excess to drip off. Coat both sides in the cornmeal mixture, pressing gently to adhere.

Ingredients
12 oz pappardelle pasta | 340 g
1 lb wild boar or pork shoulder, cubed | 450 g
1 onion, 1 carrot, 1 celery stalk, finely chopped
2 garlic cloves, minced
1 cup red wine | 240 ml
1 ½ cups crushed tomatoes | 360 ml
2 tbsp olive oil | 30 ml
1 bay leaf, rosemary sprig
Salt & pepper

Instructions
1️⃣ Brown the meat – 🥩 In olive oil, sear meat until golden. Remove.
2️⃣ Sauté soffritto – 🧅 Add onion, carrot, celery, and garlic. Cook until soft.
3️⃣ Deglaze – 🍷 Pour in wine, simmer 5 min. Return meat to pot.
4️⃣ Simmer ragù – 🍅 Add tomatoes, herbs, salt & pepper. Cover and simmer 1.5–2 hours.

Bold and flavorful Roman pasta with pancetta, tomato, and Pecorino Romano—simple and unforgettable.

Ingredients
12 oz bucatini | 340 g
4 oz pancetta or guanciale, diced | 115 g
1 can peeled tomatoes | 14 oz / 400 g
1 tbsp olive oil | 15 ml
1 pinch chili flakes
½ cup Pecorino Romano, grated | 50 g
Salt & pepper

Instructions
1️⃣ Cook pasta – 🍝 Boil bucatini until al dente. Reserve ½ cup pasta water.
2️⃣ Sauté pork – 🥓 Cook pancetta in olive oil until crisp.
3️⃣ Add tomatoes – 🍅 Crush tomatoes and add with chili. Simmer 10–15 min.

*Ingredients:*

- 1 pound large shrimp, peeled and deveined
- 4 garlic cloves, minced
- 1/4 cup white wine (optional)
- 1/4 cup freshly squeezed lemon juice
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
- 1/2 teaspoon red pepper flakes (optional)
- Freshly grated Parmesan cheese (optional)

*Directions:*

One-Pot Smoky BBQ Meatball Pasta

Ingredients:

1 lb ground beef

½ cup breadcrumbs

1 large egg

2 tablespoons milk

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and black pepper, to taste

For the Pasta:

12 oz penne or rotini pasta

2 tablespoons olive oil

3 cups beef broth

1 cup smoky BBQ sauce

1 cup tomato sauce

½ teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon chili powder (optional)

1 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Directions:

In a large bowl, combine ground beef, breadcrumbs, egg, milk, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until just combined. Form into 1-inch meatballs.

In a large deep skillet or Dutch oven, heat olive oil over medium heat. Add meatballs and cook until browned on all sides (they do not need to be fully cooked through). Remove from the skillet and set aside.

In the same skillet, add beef broth, BBQ sauce, tomato sauce, smoked paprika, garlic powder, and chili powder. Stir well and bring to a simmer.

Add pasta and stir to coat. Reduce heat to medium-low, cover, and cook for 12-15 minutes, stirring occasionally, until pasta is al dente.

Return meatballs to the skillet, nestling them into the pasta. Simmer uncovered for 5 minutes to fully cook the meatballs and thicken the sauce.

Sprinkle shredded cheddar cheese over the top and cover for 2 minutes, until melted.

Garnish with fresh parsley and serve hot.
