Mutton Aloo ka Salan โ€” full desi, full satisfying ๐Ÿคค

๐Ÿงพ Ingredients:

* 500g mutton
* 3 medium aloo (peeled & halved)
* 2 onions (sliced)
* 2 tomatoes (chopped)
* 1 tbsp ginger garlic paste
* 1/2 cup dahi
* 2โ€“3 green chillies
* 1 tsp haldi
* 1.5 tsp red chilli powder
* 1 tsp dhania powder
* 1/2 tsp garam masala
* Salt as per taste
* 4 tbsp oil
* Fresh hara dhania for garnish

๐Ÿ‘ฉโ€๐Ÿณ Method:

1. Cooker mein oil garam karo, onions ko golden brown tak fry karo.
2. Ginger garlic paste daal ke bhuno till raw smell gone.
3. Mutton add karo, high flame par achhe se bhuno (ye step flavor ka game changer hai ๐Ÿ”ฅ).
4. Haldi, mirch, dhania powder + salt daal ke mix karo.
5. Tomatoes add karo aur soft hone tak pakao.
6. Ab dahi daal ke medium flame par oil separate hone tak bhuno.
7. Aloo + green chillies daal ke mix karo.
8. 1โ€“1.5 cup paani daal ke cooker band karo, 4โ€“5 whistles tak pakao.
9. Pressure release ke baad garam masala daal ke 5 min simmer karo.
10. Garnish with hara dhaniaโ€ฆ done!

* 500g mutton (washed, medium pieces)
* ยฝ cup chana dal (soaked)
* 5โ€“6 garlic cloves
* 2-inch ginger piece
* 1 large onion (roughly chopped)

Whole spices (coarsely crushed):

* 1 tbsp coriander seeds
* ยฝ tsp cumin seeds
* 6โ€“7 dried red chilies
* 4โ€“5 cloves
* 4โ€“5 black peppercorns
* 1 small cinnamon stick

Other:

* Salt (to taste)
* Water (enough to submerge meat)

1. Pressure Cook Everything Together
Add mutton, soaked chana dal, garlic, ginger, chopped onion, crushed spices, salt, and enough water into a pressure cooker.
2. Cook Until Tender
Cook for 6โ€“7 whistles or until the meat becomes very soft and fully cooked.
(Adjust timing depending on your cooker and meat quality.)
3. Mash Inside the Cooker (Key Step!)
Once cooked, open the cooker and mash everything inside the pot itself using a masher or spoon.

๐Ÿ“Œ Ingredients:

* Milk โ€“ 1 litre
* Rice โ€“ 3 tbsp (boiled & cooled)
* Meetha rusk โ€“ 3-4 pieces
* Sugar โ€“ 4 tbsp
* Elaichi powder โ€“ ยฝ tsp
* Dry fruits (badam, pista) โ€“ as required
* Ghee โ€“ 1 tbsp (for caramel)

๐Ÿ“Œ Method:

1. Sabse pehle rice ko paani mein boil karo, phir thanda hone do.
2. Ab boiled rice + rusk ko thoda sa milk ke saath grind karke paste bana lo.
3. Ek pan mein milk ko slow flame par garam karo.
4. Ab isme rice-rusk ka paste daal kar continuously stir karo.
5. Alag pan mein 1 tbsp sugar + ghee daal kar halka brown caramel bana lo.
6. Ye caramel kheer mein add karo (isse amazing colour aur flavour aata hai ๐Ÿ˜).
7. Ab baqi sugar aur elaichi powder daal kar 8-10 min pakao.
8. Last mein dry fruits daal kar serve karo.
