Masoor Dal Kofta

Ingredients

4 people

250 grams Masoor Dal

1 teaspoon garlic ginger paste

1/4 teaspoon red chili powder

1/4 teaspoon salt

For gravy

1/2 teaspoon coriander powder

1/2 teaspoon chili flakes

1/2 teaspoon oregano

3-4 green chili slices

Cooking instructions

1. To make Masoor Dal Kofta, clean the lentils and then soak them for three to four hours. After this, grind the lentils coarsely. The lentils should not be ground finely, coarse grinding gives taste to the kofta.

2. Now put asafoetida in a vessel and make a paste of garlic ginger. Then put the lentils in the vessel containing asafoetida and mix well.

3. Now add garlic ginger paste, salt, chili flakes and oregano. These will enhance the taste of the kofta even more. Now heat oil in a pan and add koftas one by one to fry.

4. When the koftas are cooked from one side, turn them over and cook from the other side on low flame. It will take about 5 minutes to cook.

5. When the koftas are fried well, take them out in a plate. Now reduce the remaining oil in the pan a little and sauté the onions in it. Fry the onions till they become light brown.

6. Add garlic ginger paste with onions and fry for 2 minutes. Then add long slices of green chilli to it and fry for a minute.

7. Now add red chilli, coriander powder, turmeric powder and a little chaat masala. Then add tamarind pulp and tomato puree to it.

8. Now after frying it for 2 minutes, add half a glass of water. Let it cook for 2 minutes. When the gravy is ready, add the fried koftas to it.

9. Keep the gas on slow flame and let it cook for 5 minutes so that all the spices get absorbed well in the koftas. Then turn off the gas and serve hot garnished with coriander leaves. You can serve it as a snack, lunch or dinner at any time.

Jackfruit Kofta Balls

Ingredients

4 people

1/2 kg jackfruit

Salt to taste

1/2 tsp turmeric powder

1 tsp red chilli powder

1 tsp coriander powder

1 tsp celery

2 green chillies chopped

1/2 cup gram flour

2 tsp cornflour

Oil for frying as required

Cooking instructions

1. Peel the jackfruit and cut it into small pieces. While cutting, apply oil on your hands so that the jackfruit does not stick.

2. Now put the jackfruit pieces in a vessel, add some water and boil it. Boil the jackfruit well till it becomes completely soft. After boiling, take out the jackfruit in a separate vessel and remove its water.

3. Now add all the ingredients mentioned above to the boiled jackfruit. Mix them well. Keep in mind not to add water, just make a dough. Then make small balls from that dough. Prepare all the balls.

4. Heat oil in a pan. Then add the prepared jackfruit balls and fry them till they become golden and crispy.

5. Fry all the balls in the same way and turn off the gas.

6. Now our delicious jackfruit kofta balls are ready. They are very tasty to eat and are prepared quickly.

Lauki Kofta Sabzi

Ingredients

5 people

For kofta

1/2 bottle gourd

1/4 tsp turmeric powder

1/4 tsp chili powder

5 tsp gram flour

1/2 tsp salt

For gravy

2 onions

2 tomatoes

1 tsp cumin seeds

6 garlic cloves

1 tsp turmeric powder

1 tsp chili powder

1 tsp coriander powder

1/2 tsp salt

1 tsp garam masala

Cooking instructions

1. To make kofta, cut half of the bottle gourd, peel it, wash it and then grate it. Now take the grated bottle gourd in a vessel and remove the water with a cloth. Then add gram flour, turmeric powder, chili powder, salt and mix well.

2. Now apply oil with the help of hands and make round koftas. Place a pan on the gas and heat oil in it. When the oil is hot, add all the koftas and fry them.

3. When the koftas turn light red, take them out. Again add some oil in the pan and when it gets hot add cumin seeds. After 10 seconds add chillies, onion and garlic and fry lightly. Then add tomato paste and mix all the spices well.

4. Now fry the spices for 5-7 minutes. Then add water as per requirement. Now when the gravy starts boiling, add fried koftas and add garam masala.

5. Turn off the gas in 1-2 minutes and the gourd kofta sabzi is ready. Serve it with roti, paratha or naan. It is very tasty.

Arbi Kofta

Ingredients

Serves 4

500 gms arbi

2 onions

2 tomatoes

2 tsp coriander powder

1 tsp turmeric powder

1 tsp red chilli powder or as per taste

1 tsp garam masala powder

2 tsp ginger garlic paste

1 tsp salt or as per taste

4 tsp gram flour

50 gms curd or half bowl of curd

5 tbsp oil

2 tsp finely chopped coriander leaves

2 bay leaves

1 tsp whole cumin seeds

Cooking Instructions

1. Firstly wash and boil the arbi. Then peel and mash it and add gram flour, all the powdered spices and ginger garlic paste and mix well.

2. Now heat oil and make small koftas from this mixture and fry them.

3. For the gravy, grind tomatoes and onions in a mixer to make a paste. Then heat oil and add whole cumin seeds and bay leaves to it. When the cumin seeds start crackling, add onion and tomato paste and fry well.

4. When the paste is fried well, add all the powdered spices, ginger garlic paste and salt and fry the spices well. Then add curd and keep stirring continuously so that the curd does not split. When the curd is fried well, add water and let it boil.

5. Now add the fried koftas and turn off the stove. Then add finely chopped coriander leaves and serve with hot rice or roti.

Cauliflower Kofta Curry

Ingredients

4 servings

For koftas

300 gms cauliflower florets

1 onion finely chopped

1/4 tsp red chilli powder

1/2 tsp coriander powder

2 green chillies finely chopped

1/4 cup gram flour

1/4 cup all-purpose flour

1/2 tsp salt

For gravy

Oil

1-2 bay leaves

4 cloves

1 inch cinnamon stick

6-7 black peppercorns

1 big cardamom

1/2 cumin seeds

1/2 turmeric powder

1/2 Kashmiri chilli powder

1/2 coriander powder

1/4 garam masala

1 tsp ginger garlic paste

2 onion paste

2 tomato paste

1 green chilli

Finely chopped coriander leaves

Salt to taste

Cooking instructions

1. Firstly, wash the cauliflower and grate it.

2. Now make a batter by adding gram flour, all purpose flour, red chili powder, coriander powder, chopped onion, green chili and salt and make round koftas from that batter.

3. After this, heat oil in a pan. After the oil is heated, add koftas in it and fry for some time and then fry them by turning them till they become golden brown from all sides. After they become golden brown from all sides, take them out and fry the rest of the koftas in the same way.

4. Now heat 2-3 tablespoons of oil in a pan. Add bay leaves, cinnamon, cloves, black pepper, big cardamom and cumin seeds in hot oil. Stir the spices a little, then add onion paste and ginger garlic paste and fry lightly. Then add tomato, green chili paste and salt and fry until the oil separates.

5. Now add some water to it and make gravy as per your choice (thick or thin) and cook it well. After cooking, turn off the gas and add chopped coriander and prepared koftas and mix well.

6. Cauliflower kofta curry is ready. Serve it with roti, puri or rice.

7. Note- If the koftas start breaking while frying, then add some more gram flour to the batter and mix, this will prevent the koftas from breaking.

Saunth Laddu

Ingredients

For 6 servings

3 cups wheat flour

1 1/2 tablespoon Saunth powder

1/2 cup Gum

1 1/2 cup pure ghee

1 1/2 cup sugar powder

1/4 cup finely chopped almonds, pistachios

Cooking instructions

1 hour

1. First of all, roast Saunth powder well by adding a little ghee. Then add the Gum to the hot ghee and puff it up. Put ghee in a pan and when it is slightly hot, add flour to it. When the Gum cools down, put it in the mixer and make a powder.

2. Keep roasting the flour on low flame till the ghee separates. Then turn off the gas.

3. Take out the roasted flour in a plate. When it becomes slightly lukewarm, add powder to it and mix it well. Then add gum powder, roasted Saunth powder and finely chopped dry fruits and mix all the ingredients well.

4. Now mix all the ingredients well and make laddus. Delicious Saunth Laddu is ready.

Gond Laddu

Ingredients

100 grams of gum

1/2 cup almonds

1/2 cup cashews

50 grams of pistachios

1 teaspoon cardamom powder

1 teaspoon dry ginger powder

500 grams flour

400 grams ghee

250 grams sugar

Cooking instructions

30 minutes

1. To make Gond Laddu, first collect all the ingredients. Do not take very big pieces of gum, if it is big then cut it into small pieces so that it is easy to fry and the gum does not harden. Now heat ghee in a pan.

2. When the ghee is hot, add gum to it. Keep the flame slow because the gum can burn on high flame. The gum will start swelling slowly. When it swells, turn it over and fry it from the other side as well. The gum will double its size. Now take it out and keep it in a plate. In this way fry all the gum and keep it aside.

3. Add dry fruits in the remaining ghee and fry lightly for 2-3 minutes. Then take them out and put them in the mixer jar after they cool down.

4. Grind these dry fruits coarsely and keep them in a plate. Now put the gum in the jar and grind it. If you want, you can mash the gum by pressing it lightly with a masher.

5. Again add ghee in the pan and fry the flour on low flame. Keep stirring the flour continuously. It may take 10-15 minutes to fry it. Gradually the color of the flour will start changing.

6. Now add sugar powder to it and mix it well. Sugar gets mixed well in hot flour, which also makes it easy to make laddus. Then add dry fruits and gum to it and mix it well.

7. When the flour becomes light brown after roasting, add dry ginger powder to it. Then turn off the gas, but let the pan remain hot. Keep stirring for 2-3 minutes more because the flour at the bottom may get roasted more due to the heat of the pan. Then add cardamom powder and mix well.

8. After mixing all the ingredients well, now make laddus of the size as per your requirement. Once all the laddus are made, store them in an air tight box. You can easily store and eat these laddus for 1 month.

Crispy Semolina Potato Bites

Ingredients

For 4 servings

1 cup semolina

2 medium size potatoes

2 cups water

4 tsp refined oil

1 green chilli finely chopped

1 tsp cumin seeds

1 tsp mustard seeds

2 tsp white sesame seeds

1/2 tsp crushed red chilli powder

1/2 tsp black pepper powder

5 or 7 curry leaves finely chopped

1 tbsp coriander leaves finely chopped

Salt to taste

Oil for frying

Cooking instructions

1. First of all, collect all the ingredients to make crispy semolina potato bites. Then wash and peel the potatoes and grate them.

2. Potato contains a lot of starch, so wash it with water several times and squeeze it to remove all the water. Now heat 2 or 3 tsp oil in a pan on gas flame. Add cumin seeds, mustard seeds and sesame seeds and fry them, then add finely chopped green chillies. After this add red chili and black pepper powder.

3. Now add 2 cups of water and also add grated potatoes. Add salt according to taste, then add coriander leaves and curry leaves. When the water starts boiling, add semolina little by little and keep stirring continuously so that it does not get kneaded.

4. Now cook it by stirring continuously until it forms a dough like flour. Then cover it and keep it for 7 or 8 minutes and turn off the gas.

5. After 7-8 minutes the semolina will swell. Now when it cools down a bit, knead it till it becomes smooth. Then break a big dough and spread it lengthwise as shown in the picture below.

6. Now cut small bites with a knife. Keep them in the fridge for a while and let them cool. Then heat refined oil in a pan on gas flame and put them in the pan. Put 7 or 8 bites at a time.

7. Fry them on medium flame till they become golden brown.

8. Now serve hot, tasty and crispy Suji Aloo Bites with tomato ketchup.

Stuffed Cauliflower Paratha

Ingredients

1 kg cauliflower

2 onions

7 green chillies

7 garlic cloves

2 bowls wheat flour

1 tsp turmeric powder

2 tsp red chilli powder

1 tsp cumin seeds

Salt to taste

Refined oil for making parathas as required

1/2 cup soya coriander leaves finely chopped

Cooking instructions

1. Separate the cauliflower florets and wash them well. Slice 1 onion. Now put the cauliflower in a food processor and add garlic, onion slices and green chillies and chop them finely.

2. Now take out this mixture in a vessel. Place a pan on the gas and add 1 tablespoon oil in it. Then add 1 tsp cumin seeds and finely chopped cauliflower in it. Also add all the spices and salt and fry well for 2 minutes. Then turn off the gas. Now take it out in a plate and add 1 finely chopped onion and coriander leaves on top. Now prepare to knead the dough and let it cool.

3. Take flour in a big vessel and knead it and keep it on rest for 10 minutes. The dough has rested, now keep a pan on the gas to make parathas. Make a dough ball and give it the shape of a bowl. Now put the stuffing in it and close it and press it a little with the hands and roll it with a rolling pin. Do not roll the paratha too thin, roll it a little thick.

4. The pan is hot, now put the paratha on the pan and turn it over and apply oil on it and bake it till it becomes golden brown.

5. Make all the parathas in the same way and take them out.

6. Delicious stuffed cauliflower paratha is ready. Take it out in a plate and serve with raita, chutney or pickle.

Refined oil as required

Salt as per taste

1 tsp carom seeds

2/3 tsp Chat Masala

2 tsp Pani Puri Masala

1 tsp roasted cumin seeds

1 tsp mint powder

1/2 tsp asafoetida

Cooking instructions

1 hour

1. First of all, sift the all purpose flour in a plate. Then add some oil to it and mix it well. Do not add too much ghee, just enough so that the dough binds with the hand.

2. Now add salt and carom seeds to it and knead the dough with lukewarm water. Then heat oil in a pan and keep the gas on medium flame.

3. Now take a dough ball and roll it in a round shape with the help of a rolling pin on the rolling board. Then give it the shape of a cashew nut with the help of a small bowl and make all of them in the same way.

4. Add cashews slowly to the pan and fry till they become golden and crispy. Then take them out in a plate. On the other hand, add asafoetida, chaat masala, pani puri masala, mint powder, and roasted cumin seeds in a bowl and mix well.

5. Now add all the cashews in the prepared masala and coat them well. Enjoy them with tea.

Bathua Parathas

Ingredients

1 tsp cumin seeds

1 green chilli

1/4 cup wheat flour

Salt as per taste

Cooking oil or ghee as per requirement

Cooking instructions

1. First of all, wash and clean the bathua thoroughly and then chop it finely.

2. Now heat 1 tsp oil in a pan. Then add a tempering of asafoetida and cumin seeds to it. Add green chillies in the tempering and saute. Now add the finely chopped bathua.

3. Add salt as per taste to the bathua and cook it. When the bathua is cooked and its water dries up, then turn off the gas. Now leave the bathua to cool.

4. On the other hand, add salt as per taste to the wheat flour and knead a soft dough. After 10 minutes, make balls from the dough and fill the stuffing of bathua vegetable in it.

5. Now roll the paratha with a roller pin. Heat the pan and put the Bathua paratha on the pan.

6. When red spots appear on the paratha, add ghee or cooking oil and fry it.

7. Hot Bathua paratha is ready.

8. Serve the Bathua paratha with your favorite chutney or sauce.

Potato Sandwiches

3 potatoes

10 bread slices

Oil or ghee as required for frying potatoes

1/2 teaspoon cumin seeds

2 pinches of asafoetida

1/4 teaspoon red chili powder

1/2 teaspoon dry mango powder

Salt as per taste

Garam masala as per taste

Some coriander leaves (if desired)

Butter or ghee as required for frying sandwiches

15 minutes

1. Keep bread slices to make sandwiches. Boil potatoes, peel them and cut them into small pieces. Now add all the spices and mix well.

2. Then place the potato mixture on one bread slice.

3. Now place the second bread slice. Apply ghee in the pan and fry the sandwich in it. If you have a sandwich maker, you can make it in that too. Turn both sides well and fry and then serve with tomato sauce. Children like it very much.
