Maize flour nachos

Ingredients:

2 cups maize flour

1 cup refined flour

1/2 teaspoon chili powder

2 pinches black pepper powder

Salt to taste

Oil for frying

Cooking instructions:

1. Firstly, mix maize flour and refined flour together well.

2. Now add salt, chili powder and black pepper powder and mix well.

3. Add water little by little and knead a soft dough. Make sure that the dough is neither too hard nor too thin. Keep it covered for 15 minutes.

4. Now make a slightly thick dough and roll it like a thin roti. Cut the edges of the roti and make it in a square shape. Prick the whole roti with a fork.

5. Now cut this square roti into equal sized pieces, as shown in the picture, you can also cut them in diamond shape.

6. Heat oil in a pan and fry these nachos till they become golden and crispy.

Now your corn flour nachos are ready. Serve them hot and enjoy.

Papaya Chutney

Ingredients

1 grated papaya

1/2 tsp mustard seeds

Pinch of asafoetida

1 tsp oil

2 pinches of turmeric powder

Salt to taste

2 tsp water

Cooking Instructions

1. Wash and peel the papaya, then grate it.

2. Now place a pan on flame, add oil and temper mustard seeds. Then add grated papaya and salt and stir with a spoon. Now add water and cover the pan and keep stirring in between. Cook till the papaya becomes slightly crisp. After this turn off the flame.

2-3 tomatoes

1 onion

2 green chillies

Some coriander leaves

3-4 garlic cloves

1 piece of ginger

1 tsp cumin seeds

Cauliflower Paratha

Ingredients

1 large cauliflower

1/2 cup finely chopped coriander leaves

3 green chillies finely chopped

1 large piece of ginger grated

1 teaspoon cumin seeds

1/2 teaspoon red chili powder

1 teaspoon coriander powder

1/4 teaspoon asafoetida

1/2 teaspoon garam masala powder

1 teaspoon dry mango powder

Salt to taste

1 teaspoon celery

Butter as needed

For making the dough

2 cups flour

1 teaspoon salt

Water as needed

Cooking instructions
40 minutes

1. First of all wash the cauliflower and grate it. Now put it in a cloth and squeeze out all the water.

2. Now we will prepare the dough for the paratha. Put the flour in a plate, add salt to it and prepare a soft dough with the help of water. Keep it covered.

3. Now mix all the spices mentioned above, green coriander, green chillies, ginger in the cabbage and mix well. (We have to add salt while making parathas.)

4. Now cut dough balls and fill the stuffing in them. Now roll it slowly and give it the shape of a paratha. Roll all the parathas in the same way and prepare them.

5. Now put them in the pan and fry them by turning them with butter till they turn red. Now our hot cauliflower parathas are ready. Add butter to them and serve with green chutney.

Paneer Paratha

Ingredients

3-4 servings

200 grams paneer

1-2 onions grated

1-2 green chillies finely chopped

3-4 tbsp coriander leaves chopped

1 tsp red chilli powder

1 tsp garam masala

Salt to taste

1 tsp desi ghee or mustard oil

1 tsp cumin seeds

1/4 tsp mustard seeds

1 bowl flour

2 tsp urad dal powder

1/2 tsp asafoetida

1/4 tsp carom seeds

Salt to taste

1/2 cup milk

Desi ghee

Cooking instructions

25-30 minutes

1. Put all the dough ingredients in a bowl and knead a soft dough by adding water little by little. Keep the dough covered for 5-10 minutes. Now put ghee in a pan and heat it. Then add cumin seeds, mustard seeds, asafoetida and fry it. Now add grated paneer and spices and fry while stirring. Switch off the gas flame. Then add onion, coriander leaves, green chillies and mustard oil and mix well. Let it cool down.

2. Now make 2 small balls of dough and roll them like puri. Then spread the stuffing in them and cover with another roti. Now apply dry flour and roll lightly. Heat a pan and apply ghee in it. Then add paratha and fry on medium flame from both sides till it becomes golden. Make all the parathas in the same way.

3. Paneer Paratha is ready!

4. Place parathas in a serving plate and serve with curd, chutney, sauce or butter.

1 bowl cabbage

2-3 boiled potatoes

1-2 green chillies

2-3 tbsp coriander leaves

1 tsp chaat masala

1 tsp fennel seeds

1 tsp cumin powder (roasted)

1 tsp red chilli powder

1 tsp dry mango powder

Salt to taste

1 tsp cumin seeds

1 tbsp desi ghee

2-3 tbsp tandoori mayonnaise

Butter as required

8-10 breading slices

Cooking instructions

1. First of all, heat ghee in a pan. Then add cumin seeds and green chillies and fry. Now add cabbage and salt and fry well.

2. After this, add spices and fry well. Now mash boiled potatoes and add and fry well while stirring well.

3. Then add coriander leaves and salt and fry. Now turn off the gas. Cut bread slices in round shape and then apply mayonnaise on it.

4. Now add the stuffing and cover it with another bread slice.

5. Heat the pan, apply butter on it, place the sandwich and apply butter.

6. Bake till it turns golden on both sides.

7. Now place the sandwich on a plate and serve with sauce, chutney, tea or coffee.

Tricolor Garlic Sandwich

Ingredients

For 2 people

4 slices bread

1 capsicum

1 onion

2 tomatoes

1 cup finely chopped cabbage

1 cup grated carrots

2 tbsp grated garlic

4 tbsp grated cheese

1 tbsp chaat masala

1 tbsp desi ghee

4 tbsp tomato sauce

4 tbsp chili sauce

1/2 tbsp ground black pepper

Salt to taste

Cooking instructions

1. First of all, cut onion, tomato, capsicum into round pieces. Finely chop cabbage and grate carrot.

2. Now take bread, apply chili sauce on it first and tomato sauce on the other bread. Then spread grated garlic on the bread.

3. Now spread cabbage on the bread, then add tomato slices, onion and capsicum, then spread grated carrot on top.

4. Now put cheese on it, then cover it with bread smeared with tomato sauce and apply ghee in the toaster and bake it.

Hariyala Sandwich

Ingredients

2 bread slices

1/2 capsicum

1 small tomato

Some cabbage as required

Some green coriander as required

Green coriander-mint chutney as required

Salt, chili powder, black salt as per taste

Chaat masala as per taste

Little ghee as per requirement

Cooking instructions

1. First of all, wash all the vegetables thoroughly and cut them into small pieces. Prepare the coriander leaves and mint chutney.

2. Now apply ghee on both the bread slices and spread the green chutney.

3. Then place cabbage on one bread slice and add the masala powder. After this, add tomato and capsicum one by one and then keep adding the masala powder again.

4. Finally place the coriander leaves and place the second bread slice on top. Now place a pan on the gas, add some ghee and bake the sandwich well on both sides on low flame.

Kulcha Cheesy Sandwich

Ingredients

2 cups cabbage

1 capsicum finely chopped

2 grated carrots

2 tomatoes finely chopped

1 tsp oil

1/4 tsp cumin seeds

1 tbsp coriander powder

1 tsp chaat masala

1/2 tsp garam masala

Salt to taste

Red chilli powder as required

4 tbsp tomato sauce

4 mozzarella cheese cubes

2 tbsp butter

Cooking instructions

1. First of all wash the vegetables well and chop them finely.

2. Heat one tsp oil in a pan, then add cumin seeds and crackle them. Now add tomatoes and stir for 2 seconds and then add capsicum and stir for 2 more seconds.

3. After this add cabbage and carrots and add all the spices and mix well. Then cover it and cook for 5 minutes. After 5 minutes, let the water of the vegetables dry on high flame. Keep in mind that the vegetables should not be cooked completely. The stuffing is ready.

4. Now apply tomato sauce on the kulcha and cut them into two parts. Place the prepared vegetable stuffing on one part and add grated cheese on top.

5. Cover it with the other part. Now heat a non-stick pan, add a little butter in it and fry the sandwich well from both sides. Then keep it covered on medium flame for 2 minutes.

Cabbage Cheese Pocket Paratha

Ingredients

1 cup wheat flour

1 cup grated cabbage

1 tsp garam masala

1/4 tsp chaat masala

2 pinches turmeric powder

Salt to taste

2 tsp chopped coriander leaves

1 cup grated mozzarella cheese

1/4 cup butter

1 tsp oil

3 tsp garlic sauce

Cooking instructions

15 minutes

1. First of all, heat 1 tsp oil in a pan and add grated cabbage and sauté lightly. Now add turmeric powder, chaat masala, garam masala and salt and mix well. Finally add finely chopped coriander leaves and turn off the gas and keep it aside to cool.

2. To make the dough for the paratha, take 1 cup flour in a bowl, add a pinch of salt and carom seeds and mix well and prepare a soft dough with the help of water.

3. Now break a big ball from the dough and roll it into a normal sized roti.

4. Apply garlic sauce on the rolled roti and put 2 spoons of cabbage stuffing in the middle and put 2 spoons of cheese on top and close the edges by bringing them together and give it a pocket shape.

5. If you want, you can roll it lightly again with light hands or you can leave it as it is.

6. Heat the griddle and apply butter on it and put the paratha on it and apply butter on both sides and fry it well.

7. Hot cabbage cheese paratha is ready.

8. You can serve it with any gravy, chutney, pickle or curd.

4-5 large cucumbers

1 bowl of pomegranate seeds

Thick and sweet curd as required

Chopped coriander leaves as required

2-3 tbsp finely chopped green chillies

2 tbsp grated ginger

1 tsp black salt

1 tsp white salt

2 tsp chaat masala

1/2 tsp lavan bhaskar powder

2 tsp roasted cumin powder

1. Firstly, peel the cucumber, grate it and drain its water. Now, remove the seeds from the pomegranate.

2. Then drain the water from the cucumber, add coriander, ginger and chillies and mix well. Now, add curd, black salt, white salt, roasted cumin powder and lavan bhaskar powder.

3. Now, add pomegranate seeds and mix everything well.
