Hyderabadi Veg Biryani Recipe (Vegetable Dum Biryani)

Hyderabadi-style biryani features aromatic basmati rice layered with richly spiced vegetables, fragrant herbs, fried onions, saffron and yogurt gravy. This cooking to bring out the flavors.

Ingredients:

For Marinated Vegetable Gravy
Seasonal vegetables
Yogurt
Turmeric powder
Chilli Powder
Coriander Powder
Biryani Masala
Garam Masala
Ginger-Garlic Paste
Green Chillies
Onions
Cashews
Raisins
Ghee/Oil

For Rice
Basmati Rice
Whole Garam Masala
Salt
Lemon Juice

For Dum
Friend onions,
Coriander leaves
Saffron soaked in milk
Ghee
Cashews
Raisins

Cooking steps
1. Boil basmati rice with whole spices until 70% - 80% done.
2. Prepare Vegetable Masala
3. Layering: First layer vegetable gravy and then partially cooked rice
4. Seal & Dum Cook
5. Serve with raita, salan or a simple salad
