*Potato Tomato Curry*
A quick and easy dish made with boiled potatoes simmered in a tangy tomato-based gravy. Best enjoyed with puri, roti, or plain rice!
π§ *Ingredients:*
β€ 3 medium potatoes (boiled)
β€ 2 medium tomatoes (finely chopped or pureed)
β€ 1 green chili (optional, chopped)
β€ 1 tbsp oil or ghee
β€ 1/2 tsp cumin seeds
β€ 1/4 tsp asafoetida (hing)
β€ 1/2 tsp turmeric powder
β€ 1 tsp red chili powder
β€ 1 tsp coriander powder
β€ Salt to taste
β€ 1.5 cups water (adjust for consistency)
β€ Fresh coriander leaves for garnish
π©βπ³ *Instructions:*
1. Heat oil or ghee in a pan. Add cumin seeds and let them crackle.
2. Add a pinch of hing, followed by green chili and tomatoes. Cook till the tomatoes turn soft.
3. Add turmeric, red chili powder, coriander powder, and salt. Mix well.
4. Add the potatoes and stir.
5. Pour in water and mix. Let it simmer for 6β8 minutes until the curry thickens slightly.
6. Garnish with chopped coriander.
*Serve hot with puri, roti, or jeera rice*
