High Iron Dinner💪🍛😋 so that Hemoglobin🧬 better be Heme-ing🌟🧘🏻‍♀️

•Beetroot Carrot Coconut Fry♥️🥕🥥🌿

with Rice🍚 + Quinoa🌾, homemade Ghee🧈✨ & homemade Yogurt🤍

Beetroot Carrot Coconut Fry♥️🥕🥥🌿
👉Beetroot + Carrot steamed in a foldable steamer basket for 3 whistles in a pressure cooker with water at the bottom, added quickly into a tadka in the same pan after discarding the water - (oil, mustard, cumin, urad dal, chana dal, curry leaves, garlic, heing, dry red chilli), onion, coriander powder, salt & added shredded coconut(microwaved frozen for 1min) to cook for 2 mins only.

Chukkakura Sorakaya Iguru🌱🍐🍲
👉Tadka - (same as in () above) + green chillies, chunky cut onions, chunky cut bottlegourd, salt, turmeric, chilli powder, coriander powder - cook covered until bottle gourd softens 80%
👉Add finely chopped sorrel leaves, pearl onions, sauté until soft & thick, add 1 cup water, adjust salt, continue cooking on medium heat for 10mins, low heat for 10mins until oil floats.
🍽️Serve hot with Rice & something crunchy like Saggubiyyam Vadiyalu/Tapioca Crisps or Appadam/Thin Lentil Crisps as a contrast to the irresistable sour gooey texture of Sorrel for optimum flavor!🤤

For all those Iron deficient girlies🙋🏻‍♀️:
Sorrel should be your best friend! And so should Beetroot, as both are great sources of Vit C & Iron together and since Vit C helps in iron absorption, with sorrel, you are hitting 2 birds with 1 stone in 1 shot! 👍

Peethala Iguru🦀🌿🌶️🍲/Crab Masala🤤 on the occasion/opening ceremony of my new tri-ply stainless steel kadai🥘😃 Recipe👇

Crab Iguru🦀🌶️🌿🧅🫚🧄🍲 - Easy peasy, takes hardly 20mins to cook.
📌Made with 1 humongous Dungeness Crab (can be sourced live from the tank at Ranch Market or any Asian store selling seafood, asked to be cleaned and cut into ¼ths) - plenty quantity for 2 people.
👉Clean crabs twice with sea salt + turmeric + lime juice and break off any unnecessary pointy ends. Also hit the thick claw parts with a heavy object to crack slightly so it’s easy on your teeth while eating and the masala gets inside.
👉Grind masala into a smooth paste(no water) - small piece of cinnamon, 2 cardamoms, 2 cloves, ½spoon white poppy seeds, 2 green chillies🌶️, 1½ Onion🧅, 1 inch peeled ginger🫚, 4 garlic cloves🧄.
👉Heat oil in a heavy bottom pan, add 7 fenugreek/methi seeds, all the ground masala, curry leaves & salt - cook until slightly brown.
👉Add the cleaned crab, cook for 3 mins until it turns orange, add turmeric, 1 tbsp coriander powder, ¼ tbsp red chilli powder, 1 tbsp kashmiri red chilli, ¼ tbsp cumin powder - cook until leaves oil.
👉Add ½ Tomato🍅, cover cook until pulpy, then add water until pieces submerge. Adjust salt🧂
👉Cook covered on high heat for 10mins, low heat for 5 mins, cilantro garnish. Rest for 10mins before serving.
🍽️Serve hot with white rice🍚 - Yum Yum Yum!🤤🤤🤤

Chicken Dum Biryani🍗🌿🍚 & Mutton Paya🥩🍵 night✨🤤

Mutton Paya🥩🍵🔥/Goat Trotters Soup(Natural Collagen Soup, Kid-friendly👍)
👉Pressure cook for 20 whistles💨(IP 3mins = 1 cooker whistle):
🔸Goat Trotters/Paya(pre-cleaned, pre-prepped/pre-charred, wash thrice before using)
🔸A little of each of Whole Garam Masala: 3 C’s Cinnamon, Cardamom, Cloves, Shahi Jeera, Cumin, Javitri/Mace, Bay Leaves, Pepper Corns
🔸½ tbsp Ginger Garlic paste, 1 Green Chilli, 1 Dry Red Chilli, Turmeric, Salt, 2 cups water.
👉Strain & Save the broth. Separate the trotters from all masalas as shown to add next.
👉In the same cooker, heat 1 tbsp ghee, add finely chopped curry leaves, onion, tomato, cilantro, mint, cooked trotters & sauté until brown.
👉Add the saved broth and boil on high heat for 5mins, check seasoning, lower heat & simmer for 10mins.
👉Squeeze ½ Lime🍋 after turning off heat.
🍽️Enjoy piping hot with toasted bread/naan to sop up and inhale all that natural collagen goodness your body was craving for!🤤
You can tell if it’s a good soup after cooling down, from all the collagen you can see in the video🫨😋

Chicken Dum Biryani🍗🌿🍚
👉Marinate chicken overnight:
Salt
Turmeric
Red Chilli Powder
Ginger Garlic paste
Shan Biryani Masala
Green Chillies
Cilantro, Mint
Lime Juice
Greek Yogurt
Whole spices: Shahi Jeera, bay leaves, 3 C’s(cinnamon, cardamom, cloves), javitri, star anise
👉Add Fried Onion(thinly sliced, deepfried & removed excess oil)
👉Cook 50% in an enameled cast iron dutch oven/pot with a heavy lid.
👉Cover with 80% cooked basmati rice (water, salt, oil, shahi jeera, cinnamon, cardamom, clove, strain after rice starts dancing on top but still has a bite when chewed)
👉Top with lots of ghee, more fried onion & cilantro+mint
👉Bake covered for 30min at 400F in a pre-heated oven, rest for 15mins before opening lid😶‍🌫️
🍽️Serve hot with onion, lime & LOVE❤️ - Easy Peasy & full of tasty nap-worthy😴🛌 goodness!🤤

Vegetarian vibes✨using up the last of all veggies🍅🍄🍃 before grocery shopping🛒😊

On the menu🍽️:
•Mushroom Soup🍄(healthy version - no maida/APF, no cream, no MSG)
•Dal Makhani⚫️🧈🌶️
•Palak Paneer🍃▫️
•Jeera Rice🫚🌿🍚
& homemade Yogurt🤍

Used up the only 2 tomatoes I had for both the curries
Used up all the ginger hunted down from all corners of the refrigerator just enough for ginger garlic paste & jeera rice
Emptied ⅔ container of baby spinach in 1 shot
Used up those sad looking mushrooms which have been sitting for a while
Used up all those sprouting shallots I had lying around as there were Zero onions at home.

👩🏻‍🍳Mushroom Soup🍄🧄🧈
👉Sauté in butter+oil: garlic, mushroom(cut into pieces), salt until moisture reduces but doesn’t brown.
👉Add 2 cups of water, bring to a strong boil, let cook for 10-15mins, add soy sauce, a pinch of sugar, black pepper & corn starch slurry(made with 2tbsp cornstarch + ½ cup water) , let boil for 5mins or until thick.
👉Serve hot with toasted bread or as is before your main meal - a warm hug in a cup♥️

👩🏻‍🍳Dal Makhani⚫️🧈🌶️ (modified .shooking recipe)
👉Pressure cook for 10 whistles and mash: overnight soaked black skin-on Urad dal ½cup, butter, salt, kashmiri red chilli powder, 1 tomato, 1 black cardamom, water.
👉Tadka: Oil+butter, cumin seeds, heing, shallots, ginger garlic, bay leaf, cumin powder, kashmiri red chilli powder, turmeric, kasoori methi
👉Add the cooked dal to the tadka, add 1 cup water, adjust salt, cook on low heat for 20mins stirring every 5 mins while mashing. Cook until oil gathers on top.
👉Serve hot with Jeera Rice or Roti/Chapati/Phulka - comfort food max!🤤

Oil, whole Garam Masala: 3Cs, gg paste, shallots,🍅, salt,Aamchur, coriander pwdr, cumin pwdr, kashmiri red chilli pwdr, turmeric, kasoori methi, cook until brown & dry, add blanched pureed spinach, adjust water - cook slow until oil floats, add paneer 2mins before end to keep it soft. Serve with Jeera Rice or Phulka or Naan - 🤤🤤🤤
