Namak Paare, a popular and delicious Indian snack that's perfect for tea time or as a savory treat. These crispy, crunchy delights are made from simple ingredients like flour, carom seeds (ajwain), and a hint of spice, all seasoned with salt to perfection.​⁠

Ingredients:
- Maida (All-purpose flour): 1/2 kg
- Wheat flour: 1 cup
- Salt: 1 1/2 tsp (adjust to taste)
- Meetha soda (Baking soda): 1/4 ts
- Ajwain (Carom seeds): 2 tsp
- Ghee: 1/2 cup (melted)
- Water: As needed to knead the dough
- Oil: For frying

Recipe:

1. Prepare the Dough:
- In a large mixing bowl, combine the maida, wheat flour, salt, meetha soda, and ajwain. - Add melted ghee to the flour mixture and mix well until it resembles coarse crumbs. - Gradually add water, a little at a time, to knead the dough into a firm, smooth consistency. (It should not be too soft.)
- Cover the dough with a damp cloth and let it rest for 20-30 minutes.

2. Shape the Namak Paare:
- After resting, divide the dough into small equal-sized portions.
- Roll each portion into a smooth ball and then flatten it into a small disc and cut into even small pieces.

3. Fry the Paare:
- Heat oil in a deep-frying pan on medium heat. The oil should be hot enough but not smoking.
- Fry the namak paare in batches, turning them occasionally, until they are golden brown and crispy.
- Once fried, remove them and drain on paper towels to remove excess oil.

4. Cool and Serve:
- Allow the namak paare to cool completely. They will become crispier as they cool down.
- Store in an airtight container for up to a week.

These mathris make for a great snack with tea, or you can pair them with chutneys or pickles.

Recipe: Murkul

Ingredients:
- Rice flour: 1/2 kg
- Salt: 1 tsp
- Red chili powder: 3 tsp
- Turmeric powder: 1/2 tsp
- Ajwain (carom seeds): 1 tsp
- Oil (for dough): 4 tsp
- Water: (as needed for dough)
- White sesame seeds: 1/2 cup
- Oil (for frying): (as needed)

Instructions

1. Prepare the Dough:
In a large mixing bowl, combine the rice flour, salt, red chili powder, turmeric powder, ajwain, white sesame seeds, and 4 tsp of oil.Gradually add water, a little at a time, mixing with your hands until you form a smooth and pliable dough. The dough should not be too stiff or too soft.

2. Fill the Murukku Maker:
Take the prepared dough and fill the murukku maker (or a piping bag with a star nozzle) with it.

3. Heat the Oil:
In a deep pan, add enough oil for frying and heat it over medium flame. Allow the oil to reach the right temperature for frying (you can test it by dropping a small piece of dough into the oil; it should sizzle and rise to the surface).

4. Shape the Murukku:
On a plate or a sheet of parchment paper, squeeze the dough from the murukku maker to form spiral shapes or any desired design.

5. Fry the Murukku:
Carefully add the shaped murukku into the hot oil in batches. Fry until they turn golden brown and crispy, usually about 4-5 minutes.Be cautious not to overcrowd the pan to ensure even cooking.

6. Drain and Cool:
Once fried, use a slotted spoon to remove the murukku from the oil and place them on paper towels to drain excess oil.

7. Serve:
Allow the murukku to cool completely before serving. Enjoy them as a snack or with tea!

8. Tips:
Store any leftover murukku in an airtight container to keep them crispy.
Adjust the spices to your liking, especially if you prefer it spicier.

1. In a plate, combine 2 cups of maida, 1 tsp of ajwain, 1 tsp of salt, and 1/4 tsp of meetha soda. Mix them well.
2. Add 1/4 cup of ghee to the dry mixture and mix until the mixture resembles breadcrumbs.
3. Gradually add warm water and knead to form a smooth dough.
4. Cover the dough with a damp cloth and let it rest for 10 minutes or more.
5. After resting, divide the dough into small pieces. Roll each piece into small, thick puris.
6. Use a knife to make small cuts on the surface of each puri to prevent puffing while frying.
7. Let the shaped mathris dry for a few minutes.
8. In a pan, heat oil on medium flame until it’s hot.
9. Carefully add the mathris to the hot oil and fry them on medium flame.
10. Fry until they turn golden brown and crispy.
11. Once fried, remove the mathris and let them drain on paper towels.

Enjoy your homemade mathris with tea or chutney!

Fini Recipe: Diwali snacks and sweets are much needed to enjoy the festival and here are some recipes which i will be adding every day.

Fini Recipe:
Ingredients:

For the Dough:
2 cups maida (all-purpose flour)
1/2 tsp meetha soda (baking soda)
Water (as needed)

For the Filling:2 tsp ghee (clarified butter)
1 tsp jowar atta (sorghum flour) For Frying:Oil (for deep frying)
For the Syrup:
1 cup water
1 cup sugar
Step by Step Recipe:

In a plate, take 2 cups of maida.
Add 1/2 tsp of meetha soda.
Gradually add water and mix until a soft dough forms.

Cover the dough with a damp cloth and let it rest for 5 minutes.

After resting, divide the dough into small equal pieces.

Roll each piece into a small, thin roti.In a cup, mix 2 tsp of ghee with 1 tsp of jowar atta to make a paste.

Take one roti, apply the paste evenly on its surface, and sprinkle a little jowar atta on top.

Place a second roti on top of the first and repeat the process.

Continue layering until you have three rotis stacked together, applying paste and jowar atta in between each.

Roll the stacked rotis gently into a larger round shape.

Using a knife, cut the rolled roti into even pieces.

Take each piece and slightly press using a rolling pin.

Set them aside.In a pan, heat oil for deep frying.

Once the oil is hot, deep fry the prepared pieces until they turn golden brown. Remove and keep them aside on paper towels to drain excess oil.In another pan, add 1 cup of water and 1 cup of sugar.

Heat until the sugar dissolves and a sticky syrup form.

Add the fried pieces (fini) into the syrup and mix for about 30 seconds, ensuring they are well coated.

Let them cool slightly, then serve warm.
