• Curry leaves – few
• Tamarind – as needed
• Kudampuli / malabar tamarind – 2 to 3 pieces
• Chilli powder – 1 tbsp
• Coriander powder – 2 tbsp
• Turmeric powder – ½ tsp
• Grated coconut – 3 tbsp
• Thin & thick coconut milk
• Salt – to taste

👩🍳 Method
In a clay pot or pan, add cleaned ayala, crushed ginger, crushed shallots, green chillies, curry leaves, rock salt, kudampuli / malabar tamarind, turmeric powder, and a drizzle of coconut oil.
Grind grated coconut, chilli powder, and coriander powder into a smooth paste. Add it to the fish.
Mix gently and pour in thin coconut milk along with tamarind water.
Cook until the fish is tender and the gravy thickens slightly. Adjust salt and tamarind if needed.
Add thick coconut milk and gently bring the curry to a boil. Do not overcook after adding thick coconut milk.
Heat coconut oil in a small pan, fry sliced shallots until golden, then add ½ tsp chilli powder. Pour this tempering over the curry.
