β€’ 250g Chana Dal (soaked for 2-3 hrs)
β€’ 5 Dry Red Chilies
β€’ 5 Garlic Cloves
β€’ 1 Onion (finely chopped)
β€’ 5 Green Chilies (finely chopped)
β€’ Ginger, Curry Leaves & Coriander (finely chopped)
β€’ Salt to taste
β€’ Oil for deep frying

1. Coarsely grind soaked dal with red chilies and garlic.
2. Mix in finely chopped onion, chilies, ginger, herbs.
3. Shape into small flat rounds by hand.

πŸ₯” Base:
β€’ 3 medium-sized potatoes – boiled & mashed

🌢️ Veggies & Herbs:
β€’ 1 small onion – finely chopped
β€’ 1 tsp garlic – finely chopped or crushed
β€’ 1 tsp ginger – finely chopped or grated
β€’ 1-2 green chilies – finely chopped (adjust to spice level)
β€’ 1 tbsp coriander leaves – finely chopped
β€’ 5-6 curry leaves – finely chopped or crushed

πŸ§‚ Spices & Binding:
β€’ 1 tsp red chili flakes or red chili powder
β€’ Salt – to taste
β€’ 1 tsp cumin seeds or ajwain (optional for digestion)
β€’ 1 bowl (about Β½ cup) besan (chana gram flour)
β€’ 2 tbsp corn flour – for binding and light crispiness
β€’ A pinch of turmeric (optional for color)

🍳 Cooking Method (Zero Oil – Pan/Griddle Method)
1. Prep the Dough:
β€’ In a mixing bowl, combine mashed potatoes, chopped onions, garlic, ginger, green chilies, coriander, curry leaves, and spices.
β€’ Add besan and corn flour gradually while mixing. It should become a smooth but firm dough – not too sticky.
β€’ Taste and adjust salt or spice as needed.
2. Shape the Tikkis:
β€’ Take small portions and flatten them into round cutlets or patties using your palms.
β€’ Optionally, dust them lightly with corn flour for extra texture.
3. Cook Without Oil:
β€’ Heat a non-stick pan or tawa on medium flame.
β€’ Place the tikkis and cover with a lid. Cook each side for 4–5 minutes on low to medium heat.
β€’ Flip carefully using a spatula. Repeat until both sides are golden-brown and firm.
β€’ No oil is needed, but if the surface is very dry, you can brush with water or use a few drops of lemon juice for moisture.
4. Garnish & Serve:
β€’ Garnish with fresh coriander.
β€’ Drizzle some tomato ketchup or mint chutney for a spicy-sweet finish.
