Hi all, Hope I all are doing good.
Garlic Soy Roasted Eggplant Cubes
Ingredients:
1 large eggplant, cubed
2 tablespoons soy sauce
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a bowl, mix together soy sauce, minced garlic, olive oil, salt, and pepper.
Add the cubed eggplant to the bowl and toss until well coated.
Spread the eggplant cubes in a single layer on the prepared baking sheet.
Roast in the preheated oven for 20-25 minutes, or until the eggplant is tender and golden brown.
Serve hot as a delicious side dish or over rice.
Prep Time: 10 minutes | Cooking Time: 25 minutes | Total Time: 35 minutes
Servings: 4
Tips:
You can sprinkle some sesame seeds on the roasted eggplant cubes before serving for extra flavor and crunch.

Hi all. It's long time was busy not able to share recipes.
Thank you for being there with me.

Today's recipe:
Sticky Soy Cashew Veggie Bowls
Ingredients:
1 cup cashews
1/4 cup soy sauce
2 tablespoons honey
1 tablespoon sesame oil
1 teaspoon minced garlic
1 teaspoon grated ginger
4 cups mixed stir-fry vegetables
2 cups cooked quinoa
Instructions:
In a large skillet, toast the cashews over medium heat until golden brown. Set aside.
In a small bowl, whisk together soy sauce, honey, sesame oil, garlic, and ginger.
Add the mixed stir-fry vegetables to the skillet and sauté until tender.
Pour the soy sauce mixture over the vegetables and stir to combine.
Serve the vegetables over cooked quinoa, topped with the toasted cashews.

Prep Time: N/A | Cooking Time: 15 minutes | Total Time: 20 minutes
Servings: 4

Tips:
Feel free to customize the vegetables based on your preferences.
