Ingredients:

- 250 grams colocasia (arbi or taro root), peeled and cut into small cubes

- Salt to taste
- 2 tablespoons oil
- Fresh cilantro leaves for garnish

Instructions:

3. Prepare the curry base: In the same pan, add the remaining oil. Add cumin seeds and let them splutter. Add chopped onions and sauté until they turn translucent.

5. Add tomatoes and spices: Add chopped tomatoes and cook until they become soft and mushy.

6. Cook the colocasia:Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook the masala for a couple of minutes until the oil starts to separate from the masala.

7. Simmer and cook: Add the fried colocasia cubes to the masala and mix gently so that the masala coats the colocasia cubes well. Add a little water (about 1/2 to 1 cup) to adjust the consistency of the curry.

8. Cover and cook: Cover the pan with a lid and simmer the curry on low heat for about 10-15 minutes, or until the colocasia cubes are tender and cooked through. Stir occasionally to prevent sticking.

9. Finish with garam masala: Once the colocasia is cooked, sprinkle garam masala powder and mix well. Cook for another minute and then turn off the heat.

10. Serve:Garnish with fresh cilantro leaves and serve hot with roti, paratha, or rice.

Enjoy your delicious Colocasia Curry! Adjust the spice levels according to your taste preferences.
