Prawn Fried Rice 🦐🫛🥕

Ingredients :
15 - 20 Prawns
1 Cup Golden Sella Rice
2 Eggs
Salt as per taste
2 - 3tbsp Oil (to fry prawns and eggs)
2tbsp Oil
1tbsp Garlic (finely chopped)
1/2tbsp Ginger (finely chopped)
1 Chilli
2 Spring Onion Whites
1/4 Cup Chopped Carrot
1/4 Cup Chopped French Beans
Salt as per taste
1/2tsp Black Pepper Powder
1tbsp Green Chilli Sauce

Salt & Pepper Chicken

Ingredients - Marination :
250g Chicken Thighs
1/2tsp Salt
1/2tsp Pepper
1/2tsp Garlic Powder
4tbsp All Purpose Flour
2tbsp Cornflour
1 Egg
2 - 3tbsp Water or as required

Final Dish
2tbsp Oil
1 Cube Butter
1tbsp Garlic
1tbsp Celery
1 Small Onion
1/4 pc of each Red, Yellow Green Bell Peppers
Salt as per taste
1/2tsp Chicken Powder
1/2tsp B.Pepper Powder
1/2tsp W. Pepper Powder
1/2tsp Sugar
1/2tsp Light Soya Sauce
1/2tbsp Oyster Sauce
1/2 Cup Water
Cornflour Slurry (1tbsp Cornflour + 2tbsp Water)
Spring Onion Greens for Garnish

Fried Chicken Pulao Recipe

Ingredients
Chicken
Chicken – 1 kg (legs & thigh pieces preferred)
Ginger garlic paste – 2 tbsp
Red chilli powder – 1½ tsp
Coriander powder – 2 tsp
Garam masala – 1 tsp
Lemon juice – 1 tbsp
Salt – to taste
Oil – for frying
Rice
Basmati rice – 3 cups (washed & soaked 30 min)
Onions – 3 large (thinly sliced)
Green chillies – 3–4 slit
Yogurt – ½ cup
Oil + ghee – ½ cup total
Water / chicken stock – 5½–6 cups
Salt – to taste
Whole spices
Bay leaf – 2
Green cardamom – 5
Cloves – 6
Cinnamon – 2 small sticks
Black peppercorns – 1 tsp
Cumin seeds – 2 tsp

Method
1️⃣ Fry the Chicken
Marinate chicken with ginger garlic paste, chilli powder, coriander powder, garam masala, lemon juice & salt (30 mins).
Heat oil and shallow-fry chicken on medium flame until golden brown.
Remove and keep aside.
2️⃣ Prepare Pulao Base
In a heavy pot, add oil + ghee.
Fry sliced onions till deep golden brown.
Add whole spices & green chillies.
Add yogurt, cook till oil separates.
3️⃣ Rice Cooking
Add soaked rice, gently mix.
Add water/stock & salt.
Bring to boil.
4️⃣ Layering
Place fried chicken pieces on top of rice.
Cover and cook on low flame (dum) for 15–20 minutes.
5️⃣ Rest & Serve
Switch off flame, rest 10 minutes.
Gently fluff and serve.

Beef Korma Recipe (Dawat Style)

🟤 Ingredients
For beef marination:
Beef – 750g (boneless or with bone)
Curd (dahi) – ½ cup
Ginger garlic paste – 2 tbsp
Salt – 1 tsp
Turmeric – ¼ tsp
Red chilli powder – 1 tsp
Coriander powder – 1 tsp
For korma base:
Oil or ghee – 4 tbsp
Whole spices:
Bay leaf – 1
Cinnamon – 1 small stick
Green cardamom – 3
Cloves – 4
Onions – 2 large, thinly sliced
Green chilli – 2, slit
Tomato – 1 small (optional, traditional korma doesn’t use; skip if you want classic)
Khas khas paste (poppy seeds) – 1 tbsp (soaked + ground)
Cashew paste – 2 tbsp (optional but makes it rich)
Garam masala – ½ tsp

Kewra water – ½ tsp (optional)
🍳 Method
1️⃣ Marinate the beef
Mix beef with curd, ginger garlic, salt, turmeric, chilli powder, and coriander powder.
Let it rest for 30 mins.
2️⃣ Fry the onions
Heat oil/ghee.
Add sliced onions and fry until deep golden brown.
Take out half the onions and crush them — these fried onions will thicken the korma.
3️⃣ Cook the beef
In the same pot, add whole spices and green chillies.
Add marinated beef and sauté on medium-high for 8–10 minutes until the oil starts separating.
Add the crushed fried onions and mix well.
4️⃣ Add richness
Add:
Khas khas paste
Cashew paste
Cook for another 5 minutes.
5️⃣ Simmer
Add 1–1.5 cups hot water (depending on desired gravy).
Cover and cook:
Pressure cooker: 4–5 whistles on medium
Open pot: 50–60 minutes until beef is soft
6️⃣ Final touch
Once cooked and oil separates on top:
Add garam masala
Add kewra water
Simmer 2 mins

Mutton Yakhni Pulao Recipe

Ingredients
750 g mutton
3 cups basmati rice
1 large potato (optional)
2 onions, thinly sliced
4–5 green chillies
2 tbsp ginger garlic paste
1/2 cup curd
3–4 tbsp oil or ghee
Salt to taste
Whole Spices
2 bay leaves
1 black cardamom
4 green cardamoms
5–6 cloves
1 inch cinnamon
1 tsp black peppercorns
1 tsp cumin seeds

Method
Step 1: Prepare the Yakhni
In a pressure cooker add mutton, whole spices, salt, and enough water.
Cook for 5–6 whistles until the mutton becomes tender.
Strain and reserve the stock (yakhni).

Step 2: Fry the Onions
Heat oil or ghee.
Fry sliced onions until golden brown.
Remove some for garnish.

Step 3: Cook the Masala
In the same oil add ginger garlic paste.
Add curd and cook well.
Add boiled mutton and potato pieces.
Cook for 5 minutes.

Step 4: Add Rice
Soak rice for 30 minutes.
Add rice to the pot.
Pour reserved yakhni according to rice measurement.
Add green chillies.

Step 5: Dum
Cook on medium flame until water reduces.
Cover tightly and cook on low flame for 15–20 minutes.
Serve hot with raita, salan, or onion salad.
