Chicken Fried Rice 🐔🔥

Ingredients :
2 - 3tbsp Oil
1tbsp Chopped Garlic
1/2tbsp Chopped Ginger
1 Chilli
1/4 Cup Spring Onion Whites
1/4 Cup Carrot
1/4 Cup French Beans
1/2tsp Salt
1tsp Sugar
2 Eggs (seasoned with 1/4tsp Salt and 1/4tsp Black Pepper)
1/2tsp Black Pepper Powder
1/2tsp White Pepper Powder
1/2tsp Chicken Powder
1/2tbsp Vinegar
2.5 cups Boiled Sela Rice
150gms boiled Chicken (season with 1/2tsp salt and 1/2tsp Pepper)
1tsp Dark Soya Sauce
1tbsp Chilli Garlic Sauce
1/4 Cup Spring Onion Greens

Method :
1. Wash and soak sela rice for 2 - 3 hours.
2. Add water to a sauce pan and season with 1/2tbsp Salt. Bring to a boil. Add soaked rice and cooked 100 %. Strain rice and set aside.
3. Add a little water to a sauce pan along with chicken. Season with salt and pepper. Cook for 8 - 10 mins. Cool and shredd the chicken.
4. Break 2 Eggs in a bowl. Add salt and pepper to it. Beat it.
5. Heat oil in a pan. Add finely chopped garlic, ginger and chillies. Saute for few seconds.
6. Add spring onion whites, carrot and french beans. Add salt and saute for 30 - 40 seconds. Make it all at one side.
7. Add beaten eggs. Wait for a few seconds and then scramble it. Mix it with the veggies.
8. Add black pepper powder, white pepper powder, sugar, vinegar and chicken powder. Mix well.
9. Add boiled rice, shredded chicken, dark soya sauce and chilli garlic sauce. Mix well.
10. Fry for 3 - 4 mins.
11. Lastly add spring onion greens and mix well.
12. Enjoy with ketchup or schezwan sauce.

KFC Fried Chicken 🍗

Ingredients - Brine the Chicken
4 Chicken Leg Piece
Water
1/2tbsp Salt
1/4 Cup White Vinegar

Method :
1. Mix salt and vinegar in water.
2. Add chicken to the water and let it sit in it for 30 mins.

Ingredients - Marination :
1/2 Cup Milk
1tbsp Lemon Juice
1tsp Mustard Powder
1tsp Red Chilli Powder
1tsp Garlic Powder
1/2tsp Ginger Powder
1tsp Chicken Powder
1 Egg

Method :
1. Mix above ingredients and add chicken pieces to it. Mix well and marinate for 2 - 3 hours.

Ingredients - Coating :
250g All Purpose Flour
1tsp Salt
1tsp Red Chilli Powder
1tsp Garlic Powder

Other Ingredients :
Cold Water
Oil to Deep Fry

Method :
1. Mix above ingredients in a bowl.
2. Coat chicken pressing the flour to it. Dust excess flour.
3. Dip chicken in cold water and let it sit in it for 30 secs.
4. Coat chicken with flour, pressing and making layers on it. Dust off excess flour.
5. Deep fry in hot oil for 20 mins on medium flame.
6. Sprinkle peri peri masala and enjoy.

Kurkuri Bhindi 🌿

Ingredients :
250g Lady Fingers (bhindi)
2tbsp Semolina
1/2tsp Turmeric Powder
1tsp K. Red Chilli Powder
1/2tsp Coriander Powder
1/2tsp Garam Masala
1/2tsp Amchoor Powder
2tbsp Chickpea Flour
2tbsp Cornflour
1tbsp Water
1tsp Salt Or as per taste
1tsp Chaat Masala

Method :
1. Wipe the ladfingers. Cut the heads and tails. Cut into fours. If they are bigger and size cut into 6.
2. Add semolina and mix well. This is well help us get rid of the seeds and will make the lady fingers crispy. Discard the seeds.
3. Add turmeric powder, red chilli powder, coriander powder, garam masala and amchoor powder. Mix well.
4. Add chickpea flour, cornflour, salt and very little water. Mix well and fry immediately.
5. Heat oil well. Add one at a time and fry on medium flame till golden and crispy.

Kaleji Curry with Potato | Mutton Liver Curry🧅🥩

📝 Ingredients:
Mutton kaleji (liver) – 300–350 g, cleaned & chopped
Potatoes – 2 small, quartered
Onions – 2 medium, finely chopped
Tomatoes – 2 medium, pureed or chopped
Ginger-garlic paste – 1 tbsp
Curd – 2 tbsp (whisked)
Green chilies – 2 (optional)
Oil – 3 tbsp

Whole spices –
Bay leaf – 1
Cloves – 3
Green cardamom – 2
Cinnamon – 1 small stick

🧂 Spice Powders:
Turmeric – ¼ tsp
Red chili powder – 1 tsp (adjust to taste)
Coriander powder – 1½ tsp
Garam masala – ½ tsp
Salt – to taste

🔥 Method:

1. Preparation:
Clean the kaleji pieces well. Boil potatoes till just 80% done; keep aside.

2. Sauté Base:
Heat oil in a pan. Add whole spices. Once aromatic, add onions and sauté till golden brown.

3. Masala:
Add ginger-garlic paste and sauté for a minute. Then add tomatoes and cook till oil separates.

4. Spice It:
Add turmeric, red chili powder, coriander powder, and salt. Mix well and cook the masala till it's roasted.

5. Yogurt & Kaleji:
Add whisked curd, stir quickly to avoid curdling. Now add the kaleji. Mix well and cook on medium flame for 5–7 minutes.

6. Add Potatoes:
Add the boiled potatoes. Mix everything gently.

7. Simmer:
Add ½ to 1 cup water depending on the gravy you want. Cover and cook for 10–12 mins or until liver is cooked through and potatoes are tender.

8. Finish:
Sprinkle garam masala and green chilies. Simmer for 2 mins and turn off the heat.

🧅 Serve with:

Sliced onions, lemon wedges, roti, or steamed rice.

📌 Tips:

Do not overcook the liver; it can turn rubbery.

You can add a splash of lemon juice at the end for extra zing.

Mutton Korma 🥩🧅

Ingredients :
500g Mutton
1.5 Onions
3tbsp Oil
Whole Spices (2 Cinnamon Sticks, 5 Black Pepper Corns, 3 Green Cardamoms, 1 Black Cardamom, 3 Cloves)
1tbsp Ginger Garlic Paste
1/2tsp Turmeric Powder
1/2tbsp Red Chilli Powder
1/2tbsp Coriander Powder
1tsp Salt or as per taste
1.5 Cups Water
100g Curd (whisked)
1/4tsp Nutmeg Powder
1/4tsp Mace Powder
1/2tsp Kewra Water

Method :
1. Slice Onions thinly.
2. Deep fry onions till they turn light golden brown.
3. Remove on kitchen towel to drain out excess oil.
4. Grind fried onions coarsely.
5. Heat oil in a pressure cooker. Add whole spices. Saute for few seconds.
6. Add mutton and cook on high flame stirring continuosly for 3 - 4 mins.
7. Add ginger garlic paste. Cook for 1 - 2 mins on medium flame.
8. Add turmeric powder, red chilli powder and coriander powder. Mix well and cook till oil separates.
9. Add salt and water. Mix well. Bring to a boil.
10. Pressure cook and take 5 whistles.
11. Open lid and reduce excess water for 2 - 3 mins on high flame.
12. Lower the flame and add whisked curd. Mix well and cook for 2 - 3 mins.
13. Add ground birista (fried onions) and mix well. Cook till it turn a little thick and oil is separated.
14. Add nutmeg powder, mace powder and kewra water. Mix well and cook for 2 - 3 mins.
15. Serve with rice, roti or naan and Enjoy.

Chicken Pota Kaleji 🐔🌿

Ingredients:
500g Pota Kaleji
1tsp Salt
1/2tbsp Ginger Garlic Paste
1/4 Cup Curd
1/4tsp Turmeric Powder
1tsp Kashmiri Red Chilli Powder
1/2tsp Degi Mirch Powder
1/2tsp Cumin Powder
1tsp Coriander Powder
1/2 Cup Oil
1tsp Cumin Seeds
3 Garlic Cloves
1/2inch Ginger
1 Spicy Green Chilly
3 Medium Sized Onions
1 Big Tomato
1 Sprig of Mint Leaves
1/4tsp Kashmiri Red Chilli Powder
1/2tsp Garam Masala
A little Water
Juice of Half Lemon
Chilli
Coriander leaves
Ginger

Method:
1. Marinated pota kaleji for 15 - 20 mins with salt, ginger garlic paste, curd, turmeric powder, kashmiri red chilli powder, degi mirch, cumin & coriander powders.
2. Heat oil in a pressure cooker.
3. Add cumin seeds & ginger, garlic & chillies. Saute for a few seconds.
4. Add onions. Fry till brown.
5. Add tomato. Cook till soft.
6. Add pota. Mix & cook for 8 mins on low flame.
7. Add kaleji & mint leaves. Mix Well. Add chilli powder & garam masala. Mix well again.
8. Mix Well. Add little water. Bring to a boil.
9. Close cooker lid. Take 4 whistles.
10. Once pressure is out. Open lid. Add lemon juice, coriander leaves, ginger & green chillies.

Pakistani Chicken Karahi 🇵🇰🍗🔥

Ingredients:
🧈 1/4 Cup Ghee
🌶️ 1 Green Chilli
🍗 500g Chicken
🧂 1/2 tbsp Salt
🧄 1 tbsp Garlic Paste
🍗 1/2 tsp Chicken Powder (optional)
🍅 3 Tomatoes
🥣 1/2 Cup Whisked Curd
⚫ 1 tsp Black Pepper Powder
🌿 1 tsp Cumin Powder
🌿 1/2 tsp Coriander Powder
🌶️🌿🫚 Chilli, Coriander and Julienned Ginger for Garnish

Method:

1. Heat ghee in a karahi. 🥘

2. Fry a chilli and remove it. 🌶️

3. Add chicken and mix well. 🍗

4. Add salt, garlic paste and chicken powder. Mix well. Cook for 5 mins on high flame. 🔥

5. Add tomatoes. Cover and cook till tomatoes are soft. 🍅

6. Add whisked curd. Cook till oil separates. 🥣

7. Add black pepper powder, cumin powder and coriander powder. Mix well. 🌿

8. Add fried chilli, chopped coriander and julienned ginger. Cover and cook for 2 mins. 🫚

9. Enjoy with roti, paratha or naan! 🫓

🌶️ Tandoori Lamb Chops Recipe

🥩 Ingredients:
Lamb chops – 6 to 8 pieces
Hung curd (thick yogurt) – ½ cup
Ginger-garlic paste – 2 tbsp
Lemon juice – 1 tbsp
Mustard oil – 1 tbsp (heated and cooled)
Kashmiri red chilli powder – 1 tbsp (for color)
Red chilli powder – 1 tsp (for heat)
Turmeric powder – ½ tsp
Garam masala – 1 tsp
Cumin powder – 1 tsp
Coriander powder – 1 tsp
Black pepper powder – ½ tsp
Salt – to taste
Kasuri methi (crushed) – 1 tsp
Optional: a drop of red/orange food color
Fresh coriander/microgreens – for garnish
Butter or ghee – for basting

🔥 Instructions:

1. Clean and prepare chops:

Clean the lamb chops and pat them dry. Score the meat lightly with a knife to allow the marinade to pe*****te.

2. First marination (30 mins):

Apply lemon juice, salt, and ginger-garlic paste. Mix well and let it rest.

3. Second marination (at least 4 hours or overnight):

In a bowl, mix hung curd with all the dry spices, mustard oil, kasuri methi, and optional food color.

Coat the chops thoroughly in this mixture. Cover and refrigerate.

4. Grill/Cook:

Preheat your grill, oven, or tandoor to high heat.

Grill the lamb chops for 8–10 minutes per side, basting with melted butter or ghee in between, until charred and cooked through.

Alternative (Oven Method):

Preheat oven to 220°C (430°F).

Bake the chops on a rack for 20–25 minutes, turning once halfway. Broil for 2–3 mins at the end for a nice char.

5. Serve:

Rest the chops for 5 mins.

Garnish with fresh coriander or microgreens.

Serve hot with mint chutney, onion rings, and lemon wedges.

Ingredients :
200g Paneer (cut into cubes)
1/2tsp Salt
1/2tsp K. Red Chilli Powder
1/2tsp Ginger Garlic Paste
1/2 Cup Cornflour
Oil to Deep Fry
2 - 3tbsp Oil
2tbsp Garlic (finely chopped)
1tbsp Ginger (finely chopped)
2 Chillies
Half Onion
Half each Red , Yellow & Green Bell Peppers
1/2tbsp Red Chilli Paste
1 Cup Water
1/2tbsp Dark Soya Sauce
1tsp White Vinegar
1/2tsp Salt
1tsp Aromat Powder
1/2tsp Black Pepper Powder
1/2tbsp Sugar
Cornflour Slurry - 1tbsp Cornflour + 2tbsp Water
Spring Onions light greens for Garnish

Method :
1. Cut paneer into cubes.
2. Add salt, red chilli powder and ginger garlic paste. Mix gently.
3. Coat the paneer in cornflour & set aside for 10 mins.
4. Deep fry paneer till light golden brown.
5. Heat 2 - 3tbsp oil in a pan.
6. Add garlic. Saute till light golden brown.
7. Add ginger. Saute for few seconds.
8. Add chillies. Saute for few seconds.
9. Add onion and bell peppers. Saute for few seconds.
10. Add red chilli paste and mix well.
11. Add water, soya sauce, white vinegar, salt, sugar, black pepper powder & aromat powder. Mix well bring to a boil.
12. Add cornflour slurry. Mix and cook till sauce thickens.
13. Add fried paneer. Mix well.
14. Garnish with chopped spring onions.
15. Enjoy with steamed rice or fried rice.

Chicken Karahi 🐔🌿

Ingredients:
Chicken – 500 g (cut into medium pieces)
Tomatoes – 3 to 4 medium (chopped or pureed)
Onion – 1 large (optional, many authentic recipes skip onion)
Ginger – 1 tbsp (julienned)
Garlic – 1 tbsp (crushed)
Green chilies – 3 to 4 (slit)
Red chili powder – 1 tsp
Coriander powder – 1 tsp
Turmeric – ½ tsp
Cumin seeds – 1 tsp (roasted & crushed)
Black pepper – ½ tsp (freshly crushed)
Garam masala – ½ tsp
Fresh coriander leaves – a handful (chopped)
Oil or ghee – 3 to 4 tbsp
Salt – to taste

Method:
Heat oil/ghee in a karahi (or wok).
Add chicken pieces and sauté until lightly golden.
Add crushed garlic and ginger; cook until fragrant.
Stir in the chopped tomatoes and cook until they soften and form a thick masala.
Add red chili powder, coriander powder, turmeric, salt, and crushed cumin. Mix well.
Cover and cook the chicken on medium flame until tender and oil separates.
Add green chilies, julienned ginger, and black pepper. Stir-fry on high heat for 2–3 minutes.
Sprinkle garam masala and garnish with fresh coriander leaves.

Serve with:
Hot naan, roti, or steamed rice.

📝 Mutton Masala Recipe 🥩🌿

Ingredients:
Mutton (bone-in) – 1 kg
Onions – 3 large (finely sliced)
Tomatoes – 2 large (pureed or finely chopped)
Ginger-garlic paste – 2 tbsp
Yogurt (curd) – 1/2 cup (whisked)
Green chilies – 2 (slit)
Red chili powder – 2 tsp
Turmeric powder – 1/2 tsp
Coriander powder – 1 tbsp
Cumin powder – 1 tsp
Garam masala – 1 tsp
Kasuri methi (dry fenugreek leaves) – 1 tsp (crushed)
Fresh coriander leaves – for garnish
Salt – to taste
Water – as needed
Oil – 1/2 cup

Whole Spices (Optional but recommended):
Bay leaf – 1
Green cardamom – 3
Cloves – 4
Cinnamon stick – 1 inch
Black peppercorns – 5

🍳 Method:

1. Heat oil in a heavy-bottomed pan or pressure cooker. Add whole spices and let them sizzle.

2. Add sliced onions and sauté on medium heat till they turn deep golden brown.

3. Add ginger-garlic paste and green chilies. Sauté until the raw smell goes away.

4. Add turmeric, red chili, coriander, and cumin powders. Mix and cook for 30 seconds.

5. Add tomato puree and cook till oil starts separating from the masala.

6. Lower the heat, add whisked yogurt gradually while stirring to avoid curdling. Cook for 3–4 minutes.

7. Add mutton pieces and salt. Mix well so the masala coats the meat. Sear on medium-high flame for 8–10 minutes.

8. Add 1 to 1.5 cups of water, cover, and pressure cook for 4–5 whistles or simmer in a pot until mutton is tender.

9. Once cooked, open the lid and simmer uncovered to thicken the gravy.

10. Finish with garam masala and kasuri methi. Mix and cook for 2 more minutes.

11. Garnish with fresh coriander.

🍽️ Serving Suggestion:

Serve hot with:
Steamed basmati rice
Jeera rice
Naan / Roti / Paratha

Choco Lava Cake 🍰🍫

Ingredients :
10g Melted Butter
2tbsp Castor Sugar
3tbsp All Purpose Flour
1tbsp Cocoa Powder
1/4tsp Baking Powder
Hershey's Chocolate Syrup

Method :
1. Into a ceramic mug, add melted butter and castor sugar. Give it a good mix.
2. Add flour, cocoa powder, baking powder and milk. Mix well till lump free.
3. Microwave for 1 min 30 seconds.
4. Cut off a dent in the centre.
5. Pour chocolate syrup in the dent. Put the piece of cake back on it and Enjoy !
