Paneer Cheese Pasanda 🍲

Diwali season calls for recipes that are pure comfort and feels just perfect 🤌🏼✨ And one such recipe is this Paneer Cheese Pasanda 🤪 its delicious, comforting and so good if you are hosting ✨

Recipe:

Ingredients:
Paneer 300g
Stuffing – grated cheese, pistachios, raisins, black pepper, chaat masala, coriander & mint.
Gravy – oil, whole spices, onion, garlic, ginger, green chillies, tomatoes, magaj, cashews, red chilli, salt, masalas, kasuri methi, cream & coriander.

Method:
Slice paneer and stuff with the cheese-nut mix. Seal and shallow-fry till golden.
In another pan, heat oil and whole spices, sauté onions till golden, then add garlic, ginger, chillies, tomatoes, magaj & cashews.
Cook, add spices, water, simmer, and grind to a smooth paste.
Reheat with ghee, adjust water, add cream & kasuri methi.
Add fried paneer sandwiches, coat well.
Garnish with cream & coriander. Serve hot! ✨

Paan Rasmalai! SAVE IT!

With so many paan Diwali recipes, I thought of making one of my favourite desserts with a twist! And it’s a good one! Try it!

Ingredients:
For chenna -
5-6 pan leaves
1 litre of milk
3 tbs vinegar mixed with 2 tbs water
1 pot full of water
3/4 cup sugar
3 cardamom pods

For Ras -
1 litre of milk + 1/4 cup of milk to blend with pan
1/2 cup condensed milk
1 pinch of kesar
2 tbs chopped almonds
2 tbs chopped pistachios
Dried rose petals for garnish
Silver leaf for garnish

Recipe-
Heat the milk but don’t bring it to a boil. You should be able to dip your finger into it.

Add the vinegar mix to curdle the milk. Once it curdles collect the chenna over cheese cloth over a strainer. Wash it with cold water. Wrap the cheese cloth and squeeze out the excess water. Place a weight over it for 30mins.

Take the chenna out on a plate and knead it with heel of your palm. Make a dough and divide into small dough balls. Flatten each ball slightly.

Bring water to boil with sugar and cardamom. In boiling water add the chenna balls. Cover and let it boil for 5-7 mins. It’s done once its comes afloat.

Make the Ras with milk. Bring it to a boil, add kesar, condensed milk and all the nuts. Chop off both ends of the pan leaves. Then blend the paan leaves with some milk and add it in the Kadai. Mix well.

Assemble everything in a glass dish. And garnish accordingly.

This Diwali, I decided to give the classic feast a little twist – and here’s my colorful stuffed bell pepper 🌶✨. If you were here, I’d totally make you try one (or three 😋).

Bright, festive, and just the right amount of spicy – perfect for lighting up our plates along with the diyas 🪔💛

Recipe:
Ingredients
4 Bell Pepper for your choice
3 potatoes boiled
Boiled corn
1/2 cup sweet corn boiled
1 cup shredded panner
Spices: 1 tsp chilli flakes, 1 tsp cumin powder, 1 tsp chilli powder, 1 tsp coriander powder, 1/2 tsp pepper, 1 tsp chaat masala and black salt to taste.
1 chopped onion
5 cloves of garlic chopped
1 cup of shredded mozzarella cheese
Garnish chopped red chilli and coriander leaves.

Slice the capsicums or bell peppers into halves. Season with salt, brush lightly with oil, and set aside.

Heat oil in a pan and sauté chopped onions, garlic, and green chillies until golden. Add boiled sweet corn, followed by boiled potatoes and shredded paneer. Season with the mentioned spices and salt, then mix well and cook for a few minutes until everything comes together.

Stuff the seasoned, oiled bell pepper halves with the prepared potato-paneer mixture. Top each half generously with shredded mozzarella cheese.

Cook one of three ways — air fry at 185°C for 6 minutes, bake in the oven until the cheese is melted and golden, or toast on a covered tawa or pan on low heat until the peppers soften and cheese melts.

Garnish with chopped coriander leaves or finely chopped red chilli, and serve hot.

Paneer Yakhni Inspired by Kashmiri food 😍

And this is the recipe:

Ingredients:
250 grams of high protein paneer
Garam Masala: 2-3 dry red chilli, 3 cardamom, 1/2 Badi elaichi, 1/2 tsp consider seeds, 1 tsp cumin seeds, 1 tsp fennel seeds, 1/2 inch cinnamon stick
1 inch ginger grated
2-3 sliced green chillies
1/2 capsicum diced
1/2 red capsicum diced
1/2 cup soaked cashews and melon seeds
1/2 cup curd/yogurt and 1 cub paneer in the same
2 tbs ghee
Kasuri Methi and coriander leaves
1 cup water

Instructions:
Dry roast the garam masala whole spices for 2mins. Once it cools. Grind them to a powder.

Cut the paneer into cubes and fry them in ghee till golden on all sides. Keep aside.

Blend 1 paneer cube with yogurt, soaked cashews and melon seeds and 1/2 cup water to a smooth paste.

Sauté the capsicums and red pepper on the aside.

In the same pan heat ghee again. Add ginger and green chillies. Add the blended cashew and yogurt paste. Add salt and cook it. Add the paneer and the sauted capsicum. Cover and cook for a few mins. Add some water too.

Once you see oil on top. Add Kasuri Methi and coriander leaves. Enjoy with paratha.

Basunti Pulav 🍛

This puja season, I made a comforting bowl of Basundi Pulao 🍚✨ A dish that feels festive, wholesome, and close to my heart. Nothing makes puja days more special than cooking recipes that carry warmth, flavour, and tradition 🙏💛

Basunti Pulav
Marination of rice:
1 cup of Gobindo Bhog Rice
1 tbs ghee
1 tsp ginger paste
1 tsp Turmeric powder
Salt to taste
2-3 green chillies
1-2 tsp sugar (or as much less or more you like)
For pulav-
1 tbs ghee
3 cardamom pods
3 cloves
2 bay leaves
1 cinnamon stick
2 cups of hot water
1/4 cup cashews and raisins

Recipe:
Wash and soak the rice for 10mins and then drain the water.

Mix it with ghee, ginger paste, turmeric, green chillies, salt and sugar.

Heat ghee, temper it with the mentioned whole spices, add the cashews and raisins, roast lightly.

Add the rice mix. Roast it in low flame for 5-6 mins.

Add boiling water. Simmer till the top layer of water evaporates. Close the lid and cook on the lowest flame till the rice gets cooked. It should take about 6 to 7 minutes.

switch off the flame and keep it covered for the next five minutes.

Open and serve

Recipe:
Chena’r Payesh
Ingredients:
2.5 litres of full fat milk (1 liter to make chena and 1.5 to make payesh)
1cup water
1/4 cup of vinegar
1 whole pack of Nestle Milkmaid Mini
1/2 cup chopped almonds and pistachios
1/4 cup kesar water. (Two pinch worth kesar soaked in hot water)
1/2 tsp cardamom powder

Heat 1liter of milk in a pan or pot. Add 1/2 cup water. Just before it comes to a boil, switch off the flame. Add vinegar to separate the fat from the milk.
The fat is chena. Collect the chena in a cloth with strainer. Squeeze out the excess water. Wrap and keep aside.

Now for the payesh heat 1.5 L of milk, bring it to a boil and then add one pack of Nestlé milkmaid mini.

Reduce and thicken the milk for 10 minutes. Then add chopped almonds and pistachio along with Kesar water and the chena. You can grate the chena and add it or crumble it and add it. Give it a good mix. Cook for more five minutes.

Finish it off with cardamom powder.

Serve with the garnishing of more Kesar, nuts and rose petals.

Aloo Kees Chat 🥔

This Navratri make sure you are trying something fun and unique 🫶🏻 Inspired by Batatya chi Kess, this aloo Kees chaat has no onion, no garlic and is totally vrat friendly 🤩 one bite in you will want to have every day🤤

Recipe:
3 potatoes grated
Water to soak the grated potato
1 tbs ghee
1/2 tsp cumin
1 green chilli
Grated ginger
Salt to taste
1/4 tsp Red chilli powder (optional)
Crushed peanuts
1/2 cup beaten curd
Green chutney and tamarind chutney
Pomegranate

Grate and soak the potatoes in cold water.

Heat ghee and temper it with cumin, ginger and green chilli. Remove the grated potatoes from water and squeeze out the water.

Add the potatoes in the pan and sauté till it’s cooked. Add salt (sendha namak) and chilli powder (optional)
Usually you can stop here but I you can also over roast it to make it crispy.

Add crushed peanuts. Serve over a layer of beaten curd and top it with green chutney, tamarind chutney and pomegranate.

Kosha Mangsho Luchi 🤌🏼✨

During Pujo, everything is about yummy food 😍. Every home has its own way of celebrating and for me, it’s always about creating something new and fresh for the table.
Recipe:

Soak together red chilli, coriander and cumin seeds.

Marinate the mutton with the chilli paste, yogurt, salt, turmeric, mustard oil and raw papaya paste

Temper the oil with whole spices and fry onion and ginger garlic paste. Once the onion is brown, add the mutton pices. Now keep slow roasting till it leaves oil, changes colour. It can take up to 1.5 hours. Add curd and garama masala. Keep adding water bit by bit. Cover and cook too. Finish off with green chillies

For the tacos, heat the luchi with cheese, add meat of the Mangsho Kosha, pickled sliced onion, yogurt Siracha dip and coriander leaves
