Kala Chana Chaat with Crispy Mathri
"Holi vibes continue! 🌸✨
In Episode 3 of my Holi Special Series, I’m making a delicious and protein-packed Kala Chana Chaat paired with crispy, flaky Mathri—the perfect combo for your festive snacking! 🌿✨ This spicy, tangy, and crunchy chaat is a must-have during Holi, bringing together bold flavors, crisp textures, and festive joy in every bite!

Ingredients:
For Kala Chana Chaat:
1 cup black chickpeas (Kala Chana) – soaked overnight & boiled
3 to 4 boiled potatoes
1 tbsp mustard oil
1 tbsp salt
1 tsp cumin seeds
A pinch of hing
400 to 500 ml water
1 small onion
1 green chili – finely chopped
2 tbsp coriander leaves – chopped
1/2 tsp roasted cumin powder
1/2 tbsp Coriander powder
1/2 tsp chaat masala
1/4 tsp black salt
1/2 tsp red chili powder
1 tbsp lemon juice
2 to 3 tbsp tamarind water (optional)
For Crispy Mathri:
1 cup all-purpose flour (maida) or whole wheat flour
1/2 tsp carom seeds (ajwain)
1/2 tsp nigella seeds
1/4 tsp salt
2 tbsp ghee or oil
Water (as needed for kneading)
Oil for frying

Method:
Step 1: Make the Kala Chana Chaat
Pressure cook soaked Chana and potatoes. Take a pan add oil. Add cumin seeds, hing. Then add boiled Chana and potatoes.
Add salt, turmeric powder, cumin powder, coriander powder, red chilli powder. Cook it for 5 minutes. Then add water and tamarind water. Cook it for 10 minutes on medium flame.
Step 2: Make the Crispy Mathri
1. In a bowl, mix flour, ajwain, and salt.
2. Add ghee or oil and rub it into the flour until it resembles breadcrumbs.
3. Gradually add water and knead into a tight dough. Rest for 15-20 minutes.
4. Roll out small portions into discs and prick with a fork to prevent puffing.
5. Fry in medium-hot oil until golden brown and crispy.
6. Drain on paper towels and let them cool completely.
Now, take a plate. Add some mathari, then pour some Chana gravy. Garnish it with some onions,coriander leaves, lemon juice.
