Masala Matar Cauliflower Sabzi

Ingredients

Serves 4

1/2 cup frozen peas

300 grams chopped cauliflower

Refined oil as required (for frying cauliflower)

Ingredients required for Masala Sabzi:

Fried Cauliflower Matar

3 medium tomatoes

12-15 cashews

1/2 piece capsicum

1/2 piece ginger

2 tablespoons refined oil

1 teaspoon cumin seeds

1 teaspoon crushed whole spices (cloves, cardamom, cinnamon)

7-8 curry leaves

2 teaspoons red chilli powder

1 teaspoon garam masala

1/2 teaspoon dried mango powder

2 teaspoons coriander powder

Salt to taste

1 cup water

1 tablespoon dried fenugreek leaves

Cooking instructions
40 minutes

1. Heat oil in a pan, add chopped cauliflower and fry for 5 minutes. Then add frozen peas and fry a little more.

2. Now our fried vegetable is ready. Now we will prepare the masala.

3. Prepare a paste by adding tomatoes, cashews, ginger and capsicum in a mixer jar.

4. Heat oil in a pan and temper cumin seeds, crushed masala and curry leaves.

5. Then add the paste and cook.

6. Cook the masala on low flame for 5 minutes. After cooking, add all the spices and salt and cook while mixing.

7. Then add the fried vegetable and mix, add water and cook on medium flame for 5 to 7 minutes.

8. After cooking, add kasuri methi and mix and turn off the gas.

9. Our delicious and spicy masala matar gobi ki sabzi is ready.

10. Enjoy this delicious masala matar gobi ki sabzi with hot puri.

Mithi Mathri Recipe

Ingredients:
• Wheat flour – 2 cups
• Semolina (sooji) – ½ cup
• Desiccated coconut – ¼ cup
• Sesame seeds – 3 tablespoons
• Cardamom powder – 1 teaspoon
• Aniseed (saunf) – 1 teaspoon
• Powdered sugar – 1 cup
• Clarified butter (ghee) – ⅓ cup
• Water – as needed
• Oil or ghee – for frying

Instructions:
1. Prepare the Dough:
• In a large mixing bowl, combine wheat flour, semolina, desiccated coconut, sesame seeds, cardamom powder, aniseed, and powdered sugar.
• Add the clarified butter (ghee) and mix well with your fingers until the mixture becomes crumbly.
• Gradually add water, a little at a time, and knead into a firm dough. The dough should be tighter than chapati dough.
2. Rest the Dough:
• Cover the dough with a damp cloth and let it rest for 20–30 minutes.
3. Roll and Cut the Mathris:
• Divide the dough into small balls.
• Roll each ball into a small thick disc (about 2–3 inches in diameter). You can also roll out a larger piece and cut it into shapes using a cutter or small lid.
• Prick each disc with a fork to prevent puffing while frying.
4. Fry the Mathris:
• Heat oil or ghee in a deep frying pan over medium-low heat.
• Once hot, fry the mathris in batches until golden brown and crisp. Make sure to fry on low to medium heat to cook them evenly.
5. Cool and Store:
• Remove the mathris from oil and drain on paper towels.
• Let them cool completely before storing in an airtight container.

Cauliflower Barfi

Ingredients

4 people

1 cauliflower

100 grams sugar

1 teaspoon ghee

1 teaspoon cardamom powder

Cooking instructions

10 minutes

1. First wash the cauliflower well and grate it.

2. Add 1 teaspoon ghee in the pan and cook for 2 to 3 minutes.

3. Then add 1 cup sugar and cook it well for 2 minutes.

4. After this, add 1 teaspoon cardamom powder and cook the mixture till it separates from the pan and turn off the flame. Pour this mixture in any vessel greased with ghee.

5. Add some dry fruits on top, cool it, cut it in your favorite shape and serve.
