Hotel Style South Indian Crispy Dosa (હોટલ સ્ટાઇલ દક્ષિણ ભારતીય ક્રિસ્પી ઢોસા)
Perfect golden, thin & super crispy dosa – just like restaurants!
🥣 Ingredients (સામગ્રી)
Rice (ચોખા) – 2 cups
Urad Dal (ઉરદ દાળ) – 1/2 cup
Methi Seeds (મેથી દાણા) – 1 tsp
Salt (મીઠું) – as per taste
Water (પાણી) – as required
Oil / Ghee (તેલ / ઘી) – for making dosa
👩‍🍳 Method (બનાવવાની રીત)
Rice, urad dal and methi seeds separately wash and soak for 6–8 hours.
ચોખા, ઉરદ દાળ અને મેથી દાણા અલગ-અલગ 6–8 કલાક પલાળો.
Grind soaked ingredients with little water to make a smooth batter.
પલાળેલી સામગ્રીને થોડું પાણી ઉમેરીને સ્મૂથ બેટર પીસી લો.
Add salt and mix the batter well.
બેટરમાં મીઠું ઉમેરી સારી રીતે મિક્સ કરો.
Cover and ferment the batter for 8–10 hours.
બેટરને ઢાંકી 8–10 કલાક ફર્મેન્ટ થવા દો.
Heat a pan, apply oil lightly, pour batter and spread thin in circular motion.
તવો ગરમ કરી થોડું તેલ લગાવો, બેટર નાખી પાતળી ગોળ આકારમાં ફેલાવો.
Cook till golden brown and crispy, then fold and serve hot.

Colocasia (Arvi) leaves
Gram flour (Besan)
Tamarind pulp
Jaggery (grated)
Ginger–green chilli paste
Coriander powder
Turmeric powder
Red chilli powder
Asafoetida (Hing)
Salt (to taste)

Sesame seeds
👩‍🍳 Method (Step by Step):
In a bowl, combine gram flour, tamarind pulp, jaggery, all spices, hing, salt, and a little oil to make a thick smooth batter.
Wash the colocasia leaves thoroughly and spread the batter evenly on each leaf.
Stack the leaves one over another, roll tightly, and seal the edges properly.

2 cups Besan (Gram Flour)
1 cup Ghee
1 cup Sugar
1/2 cup Milk
Cardamom & Dry Fruits (as required)
Method:
Roast besan slowly in ghee on low flame.
Add milk and mix well.
Prepare sugar syrup and add to the mixture.
Set in a tray and let it cool.
2) Soft Mohanthal
Ingredients:
2 cups Besan
1 cup Ghee
1 cup Condensed Milk
Cardamom Powder
Dry Fruits
Method:
Roast besan lightly in ghee.
Add condensed milk and mix well.
Cook till the mixture thickens.
Set and allow to cool.

1) સાદી તલ-ગોળ ચીક્કી (Classic Sesame Jaggery Chikki)
🧾 સામગ્રી (Ingredients)
👉 તલ – 1 કપ (Sesame seeds)
👉 ગોળ – ¾ કપ (Jaggery, grated)
👉 ઘી – 1 ટીસ્પૂન (Ghee)
👩‍🍳 રીત (Method)
કડાઈમાં તલ ધીમી આંચે સુવાસ આવે ત્યાં સુધી શેકી લો. (Dry roast sesame on low flame)
બીજી કડાઈમાં ઘી ગરમ કરી ગોળ ઉમેરો અને પીગળે ત્યાં સુધી ઉકાળો. (Melt jaggery with ghee)
ગોળમાં એક બુંદ ઠંડા પાણીમાં નાખો—કડક બોલ બને તો તૈયાર. (Check hard-ball stage)
શેકેલા તલ ઉમેરો, ઝડપથી મિક્સ કરો. (Mix quickly)

1 cup fresh coriander leaves
2–3 green chillies
1 teaspoon lemon juice
½ inch ginger
Salt to taste

Method
Heat butter on a tawa and add chopped onion. Sauté till light golden.

Slit the pav and toast them on the tawa with butter.

Ingredients
2 cups wheat flour
2 cups grated carrot
1/2 cup gram flour (besan)
1 teaspoon ginger–green chilli paste
1/2 teaspoon turmeric powder
1 teaspoon coriander–cumin powder
Salt to taste
Oil or ghee for cooking
Water (as needed for kneading)
Method
In a large bowl, add wheat flour, gram flour, grated carrot, ginger–chilli paste, turmeric powder, coriander–cumin powder, and salt.
Mix well and knead into a soft dough using water as required.
Cover the dough and rest it for 10 minutes.
Divide the dough into equal portions and roll each portion into a round paratha.
Heat a tawa (griddle) and place the rolled paratha on it.
Cook on medium flame, flipping both sides until golden brown spots appear.
Apply oil or ghee on both sides and cook until crisp and well cooked.
Serve hot.
Tips
Squeeze excess water from grated carrots before using.
