સરસગવાના પાનના કુલવડા – Crispy Gujarati Tea-Time Snack
Ingredients
1 cup fresh fenugreek leaves (methi), finely chopped
1½ cups gram flour (besan)
1½ tbsp rice flour (for extra crispiness)
1 tsp ginger paste
1 tsp green chilli paste
1 tsp coriander seeds, crushed
2 tbsp sesame seeds
½ tsp turmeric powder
½ tsp red chilli powder
Salt to taste
Water as required (to make thick batter)
Oil for deep frying

Method
1. In a mixing bowl, add gram flour, rice flour, salt, turmeric, red chilli powder, sesame seeds, crushed coriander seeds, ginger paste and green chilli paste.
2. Add chopped fenugreek leaves and mix well.
3. Gradually add water and prepare a thick batter (not runny).
4. Rest the batter for 15–20 minutes.
5. Heat oil on medium flame.
6. Drop small portions of batter into hot oil.
7. Fry on low to medium heat until golden brown and crispy.
8. Remove and drain excess oil on tissue paper.

Serving Tips
Serve hot with green chutney, fried green chillies, or tomato ketchup, along with a cup of hot tea ☕.
