સરસગવાના પાનના કુલવડા – Crispy Gujarati Tea-Time Snack
Ingredients

1 cup fresh fenugreek leaves (methi), finely chopped

1½ cups gram flour (besan)

1½ tbsp rice flour (for extra crispiness)

1 tsp ginger paste

1 tsp green chilli paste

1 tsp coriander seeds, crushed

2 tbsp sesame seeds

½ tsp turmeric powder

½ tsp red chilli powder

Salt to taste

Water as required (to make thick batter)

Oil for deep frying

Method

1. In a mixing bowl, add gram flour, rice flour, salt, turmeric, red chilli powder, sesame seeds, crushed coriander seeds, ginger paste and green chilli paste.

2. Add chopped fenugreek leaves and mix well.

3. Gradually add water and prepare a thick batter (not runny).

4. Rest the batter for 15–20 minutes.

5. Heat oil on medium flame.

6. Drop small portions of batter into hot oil.

7. Fry on low to medium heat until golden brown and crispy.

8. Remove and drain excess oil on tissue paper.

Serving Tips

Serve hot with green chutney, fried green chillies, or tomato ketchup, along with a cup of hot tea ☕.

શિયાળા માટે પરફેક્ટ: મેથી મટર મલાઈ નો ક્રીમી સ્વાદ હવે ઘરે જ!
Ingredients

50 g fresh fenugreek leaves (methi)

40 g green peas

30 g paneer (small cubes)

1 tsp sugar

1 tsp cardamom powder

2 chopped green chilies

30 g mawa (khoya)

Salt to taste

80 g milk

100 g cashews

2 tsp butter

2 tbsp fresh cream

For Garnish

Fresh cream

Tomato slices

Method (Step-by-Step)
1. Make Cashew Paste

Boil the cashews, blend into a smooth paste, and keep aside.

2. Prepare Methi & Peas

Wash methi leaves.
Microwave methi and green peas for 5 minutes to soften. Keep aside.

3. Sauté Chillies

Heat butter in a pan and sauté chopped green chillies.

4. Add Methi & Peas

Add boiled green peas and methi.
Sauté for 2 minutes.

5. Add Milk & Cashew Paste

Pour milk into the pan and mix.
Add the cashew paste and cook for 5 minutes, stirring continuously so it doesn’t stick.

6. Add Seasoning & Mawa

Add salt, cardamom powder and mawa.
Mix well and let it thicken. Add a little butter for richness.

7. Add Cream & Sugar

Add fresh cream and sugar.
Mix gently until creamy.

8. Final Serve

Your Jain Methi Matar Malai is ready!
Serve hot in a bowl and garnish with cream + tomato slices.

Perfect Winter Healthy Breakfast

Ingredients

1.5 cups Bajra flour

½ cup Wheat flour

1 cup Fresh fenugreek leaves (methi)

2 tbsp Curd

2 tbsp Warm water

2 tbsp Oil

1 tsp Ginger-garlic paste

2 tsp Sesame seeds

Spices: Turmeric, Red chilli powder, Carom seeds (ajwain), Salt

Oil for roasting

Method

1. Mix the flours

Add bajra flour, wheat flour, fenugreek leaves, sesame seeds, ginger-garlic paste and all spices together.

2. Knead the dough

Add curd + warm water gradually and knead into a soft dough.

3. Roll the theplas

Divide the dough into small balls and roll out evenly.

4. Roast

Roast on a hot pan using little oil until golden brown on both sides.

Keeping the dough slightly soft helps make crispy yet soft thepla that stay fresh for longer.

Ingredients

For Dhokli (Chapati Strips):

Wheat flour – 1 cup

Gram flour – 2 tbsp

Turmeric powder – ½ tsp

Red chilli powder – ½ tsp

Carom seeds (ajwain) – ½ tsp

Salt – to taste

Oil – 2 tsp (for kneading)

Water – as required

For Dal:

Leftover dal – 2–3 cups

Peanuts – 1 tbsp

Jaggery – small piece

Kokum (optional) – 2 pcs

Raw mango pieces (optional) – as needed

Green chilli – 1

Cloves – 2

Cinnamon – 1 small piece

Curry leaves – few

Lemon juice – ½ lemon

Coriander leaves – for garnish

Salt – as needed

For Tempering (Tadka):

Ghee/Oil – 1 tbsp

Mustard seeds, Cumin seeds, Fenugreek seeds, Asafoetida

Dry red chillies

Sesame seeds (optional)

Method

1. Prepare Dhokli Dough

1. In a bowl, add wheat flour, gram flour, all spices, salt, and oil.

2. Knead into a medium-soft dough using water.

3. Rest for 10 minutes.

2. Make the Dhokli

1. Roll out thin chapatis and cut them into diamonds or small square pieces.

2. Keep them aside.

3. Prepare the Dal

1. Take leftover dal in a pot.

2. Add peanuts, jaggery, kokum, raw mango, green chilli, cloves, cinnamon, curry leaves, and water as required to adjust the consistency.

3. Bring it to a boil and cook for 10–12 minutes.

4. Add Dhokli to the Dal

1. Once the dal comes to a boil, slowly add the dhokli pieces while stirring continuously.

2. Cook for 12–15 minutes until dhokli becomes soft and cooked well.

5. Prepare Tempering

1. Heat oil/ghee.

2. Add mustard seeds, cumin, fenugreek, asafoetida, dry red chilli, and sesame.

3. Pour the tempering into the dal.

6. Final Touch

Add lemon juice and coriander leaves.

Mix gently and serve hot.

શિયાળામાં બનતી સૌથી ટેસ્ટી લીલવા કચોરી – ઘરેજ બનાવો રેસ્ટોરન્ટ જેવી!
⭐ Ingredients (Serves 3)

👉 1 cup fresh green tuvar (lilva)
👉 1 cup all-purpose flour (maida)
👉 2 tbsp roasted peanuts
👉 5 garlic cloves
👉 4 green chillies
👉 1-inch ginger
👉 1 tbsp grated coconut
👉 1 tsp garam masala
👉 1 tsp cumin seeds
👉 1 tsp carom seeds (ajwain)
👉 1 tsp sesame seeds
👉 ½ tsp turmeric
👉 1 tsp red chilli powder
👉 1 tsp coriander-cumin powder
👉 5 raisins
👉 4–5 cashew pieces
👉 1 tsp sugar
👉 ½ lemon juice
👉 2 tbsp chopped coriander
👉 1 tbsp ghee
👉 1 tbsp oil (for tempering)
👉 Salt to taste
👉 Oil for deep frying

⭐ Method (Step-by-Step)

Prepare the dough:
Mix maida with ghee, salt, and ajwain. Add water and knead into a soft poori-like dough. Cover and rest.

Prepare the stuffing:
Grind lilva, garlic, ginger, green chillies, and peanuts into a coarse paste.

Cook the stuffing:
Heat oil in a pan, add cumin, sesame, and hing.
Add the lilva mixture and sauté.
Add turmeric, chilli powder, coriander-cumin powder, salt and cook for 5–7 minutes on low flame.

Enhance the flavour:
Switch off the flame. Add raisins, cashews, sugar and garam masala.
Let it cool. Then add lemon juice and chopped coriander.
Make small stuffing balls.

Shape the kachori:
Make small dough balls, roll them into small puris, place the stuffing ball in the center, and seal to form kachori.

Fry the kachori:
Heat oil, add kachoris and immediately lower the flame.
Fry on low heat until crisp and golden.

Serve hot with green chutney or tomato ketchup.

ઓલ્ડ ઇઝ ગોલ્ડ લાપસી – ઘરમાં બને તેવી પરંપરાગત રેસીપી
Ingredients

👉 1 bowl coarse wheat flour

👉 4 tbsp oil

👉 6 tbsp jaggery

👉 Ghee as needed

Method

First, add oil to the wheat flour and mix well to make a smooth moin.

Heat ¾ bowl of water (slightly less than the amount of flour).

Add jaggery into the hot water and let it melt completely.

Now add the oil-mixed flour into this jaggery water and mix once.

Cover the pot and cook on low flame for about 10 minutes.

Open the lid, mix well, and add ghee as required.

Stir until the lapsi becomes soft, shiny, and well-cooked.

Your delicious Lapsi is ready to serve!
