Perfect healthy breakfast recipe....


Sabudana khichdi is a popular Indian dish made from tapioca pearls, often served during fasting periods or as a snack. Here's a simple recipe:

Ingredients:
- 1 cup sabudana (tapioca pearls)
- 2 cups water
- 2 medium potatoes, peeled and diced
- 1/4 cup peanuts
- 1/4 cup grated coconut
- 1 tablespoon ghee or oil
- 1 teaspoon cumin seeds
- 1 teaspoon ginger paste
- 1 green chili, finely chopped
- Salt, to taste
- Fresh cilantro, for garnish

Instructions:
1. Rinse sabudana and soak it in water for 4-5 hours or overnight. Drain and set aside.
2. Heat ghee or oil in a pan and roast peanuts until golden. Set aside.
3. In the same pan, add cumin seeds, ginger paste, and green chili. Sauté for a minute.
4. Add diced potatoes and cook until they're tender.
5. Add soaked sabudana, roasted peanuts, grated coconut, and salt. Mix well.
6. Cook for 5-7 minutes, stirring occasionally, until sabudana is soft and well combined with potatoes.
7. Garnish with cilantro and serve hot.

You can adjust the amount of chili and spices according to your taste preferences. Enjoy your sabudana khichdi.
