Quick Aloo Paratha Recipe
Ingredients:
For the Dough: 1.5 cups whole wheat flour, water, pinch of salt, 1 tsp oil.
For the Filling: 2-3 medium potatoes (boiled, peeled, mashed), 1/2 tsp red chili powder, 1/2 tsp coriander powder, 1/4 tsp cumin powder, 1/4 tsp garam masala, 1/2 tsp dry mango powder (amchur), 1-2 green chilies (finely chopped), 2 tbsp fresh coriander (chopped), salt to taste.
For Cooking/Serving: Ghee or oil for frying, butter, pickle (achaar).
Short Steps:
Make Dough: Mix flour, salt, and oil. Add water gradually to knead into a soft, smooth dough. Cover and rest for 15 mins.
Prepare Filling: Combine mashed potatoes with all filling spices, green chilies, and fresh coriander. Mix well.
Stuff & Roll: Take a small ball of dough, flatten it slightly, and place a portion of the potato filling in the center. Bring the edges together to seal. Gently roll into a round paratha (about 6-7 inches diameter).
Cook Paratha: Heat a tawa or griddle over medium-high heat. Place the rolled paratha on it. Cook for about 30 seconds, flip. Apply ghee/oil, flip again, apply ghee/oil on the other side.
Fry until Golden: Press gently and cook until both sides are golden brown and crispy, with puffed spots.
Serve Hot: Remove from tawa. Serve immediately with a dollop of butter and your favorite pickle!
