Hot Masala Chai
Nothing quite captures the essence of the Indian monsoon like a steaming cup of spiced tea.

Ingredients:

1 cup water
½ cup milk
2 tsp black tea leaves (or 2 tea bags)
1-inch ginger, crushed
2-3 green cardamom pods, crushed
1-2 cloves
Pinch of black peppercorns (optional)
Sugar to taste

Instructions:

1. In a saucepan, combine water, crushed ginger, cardamom, cloves, and peppercorns (if using). Bring to a boil.
2. Add tea leaves and let it boil for 1-2 minutes until the color deepens.
3. Add milk and sugar. Bring the mixture to a rolling boil.
4. Reduce heat and let it simmer for 2-3 minutes, allowing the flavors to meld.
5. Strain the chai into cups and serve hot.

Purple Idli
Ingredients:

1 cup rice rava (cream of rice)
½ cup urad dal (split black lentils)
1 cup finely chopped purple cabbage
Water as needed
Salt to taste

Preparation:

1. Soak & Grind: Soak urad dal for 4-5 hours. Blend the purple cabbage with a little water until you get a smooth, lump-free puree.

2. Mix Batter: Grind the soaked urad dal to a fine paste with a little water. Mix this paste with the rice rava, purple cabbage puree, and salt. Add a little water to form a thick batter. Let it ferment overnight or for at least 8 hours.

3. Steam: Grease idli molds. Pour the purple batter into the molds and steam for 10-12 minutes until cooked through. Serve hot.

Kashmiri Chai (Pink Tea / Noon Chai)

Ingredients:

2 cups cold water
1 cup full-fat milk
2 tsp Kashmiri tea leaves
½ tsp baking soda
2–3 cardamom pods (crushed)
1–2 star anise (optional)
1 small cinnamon stick (optional)
Salt to taste (¼ tsp to start)
Sugar (optional)
Crushed pistachios/almonds + dry rose petals (for garnish)

Preparation:

1. Boil water with tea leaves, cardamom, star anise, and cinnamon.
2. Add baking soda → whisk continuously (phetna) for 15–20 mins until deep reddish-brown. Add a little cold water if too thick.
3. Pour in milk → boil again until the tea turns pink.
4. Season with salt (or sugar, if preferred).
5. Strain into cups → garnish with nuts and rose petals.
