Quick Aloo Paratha Recipe
Ingredients:

For the Dough: 1.5 cups whole wheat flour, water, pinch of salt, 1 tsp oil.

For the Filling: 2-3 medium potatoes (boiled, peeled, mashed), 1/2 tsp red chili powder, 1/2 tsp coriander powder, 1/4 tsp cumin powder, 1/4 tsp garam masala, 1/2 tsp dry mango powder (amchur), 1-2 green chilies (finely chopped), 2 tbsp fresh coriander (chopped), salt to taste.

For Cooking/Serving: Ghee or oil for frying, butter, pickle (achaar).

Short Steps:

Make Dough: Mix flour, salt, and oil. Add water gradually to knead into a soft, smooth dough. Cover and rest for 15 mins.

Prepare Filling: Combine mashed potatoes with all filling spices, green chilies, and fresh coriander. Mix well.

Stuff & Roll: Take a small ball of dough, flatten it slightly, and place a portion of the potato filling in the center. Bring the edges together to seal. Gently roll into a round paratha (about 6-7 inches diameter).

Cook Paratha: Heat a tawa or griddle over medium-high heat. Place the rolled paratha on it. Cook for about 30 seconds, flip. Apply ghee/oil, flip again, apply ghee/oil on the other side.

Fry until Golden: Press gently and cook until both sides are golden brown and crispy, with puffed spots.

Serve Hot: Remove from tawa. Serve immediately with a dollop of butter and your favorite pickle!

Quick Chole

Ingredients:
1.5 cups chickpeas, soaked overnight
1 large onion, chopped
2 tomatoes, puréed
1 tbsp ginger-garlic paste
1 tsp garam masala
1 tsp coriander powder
½ tsp red chili powder
2 tbsp oil
Salt to taste
Preparation :
1. Boil Chole: Pressure cook the soaked chickpeas with enough water and a pinch of salt for 4-5 whistles until soft.
2. Make Gravy: In a pan, heat oil. Sauté onions until golden. Add ginger-garlic paste and cook for a minute.
3. Add Masala: Stir in tomato purée and all the spice powders. Cook until oil separates.
4. Combine: Add the boiled chickpeas (with their water) and salt. Simmer for 10-15 minutes until the gravy thickens.
Bhature
Ingredients:
2 cups all-purpose flour (maida)
½ cup yogurt
1 tsp sugar
½ tsp baking soda
Salt to taste
Oil for kneading and frying

Preparation:
1. Make Dough: Mix flour, yogurt, sugar, baking soda, and salt. Add a little water and a tsp of oil to knead into a soft, smooth dough.
2. Rest: Cover the dough and let it rest in a warm place for at least 2 hours.
3. Fry: Knead the dough again. Divide into balls, roll into ovals, and deep-fry in hot oil until they puff up and turn golden brown.
4. Serve: Serve the hot bhaturas immediately with the chole.

Ingredients:

All-purpose flour (maida) – 2 cups
Semolina (sooji) – 2 tbsp
Carom seeds (ajwain) – ½ tsp
Salt – to taste
Ghee/oil – 2 tbsp
Water – as needed
Oil – for frying

Method:

1. Mix flour, semolina, ajwain, salt, and ghee.

2. Add water little by little, knead into a stiff dough.

3. Roll out, cut into strips or diamonds.

4. Deep fry on medium flame until golden and crisp.
