Raspberry Chocolate Poke Cake 🍫🍇

Ingredients:

For the Cake:

1 box chocolate cake mix (or homemade chocolate cake batter) 🍫
3 large eggs 🥚🥚🥚
1 cup water 💧
1/2 cup vegetable oil 🛢️
For the Raspberry Filling:

1 cup fresh raspberries 🍇
1/2 cup raspberry jam or preserves 🍓
For the Chocolate Pudding Layer:

1 box instant chocolate pudding mix 🍫
2 cups cold milk 🥛
For the Whipped Topping:

1 ½ cups heavy whipping cream 🧴
¼ cup powdered sugar 🍩
1 tsp vanilla extract 🍦
For the Garnish:

Fresh raspberries 🍇
Shaved chocolate or chocolate chips 🍫
Instructions:

Prepare the Cake: Preheat your oven to 350°F (175°C) 🔥. Grease and flour a 9x13-inch baking pan 🎂. Prepare the chocolate cake mix according to the package instructions (mix the cake mix with eggs 🥚, water 💧, and oil 🛢️). Bake for 30-35 minutes, or until a toothpick comes out clean. Let the cake cool for about 10 minutes.

Poke the Cake: Once the cake has cooled slightly, use the handle of a wooden spoon or a fork to poke holes all over the cake, about 1 inch apart. Make sure you don’t poke all the way through to the bottom 🕳️.

Make the Raspberry Filling: In a small saucepan, heat the raspberry jam 🍓 over low heat until it becomes more liquid. Gently fold in the fresh raspberries 🍇. Pour the raspberry mixture over the cake, making sure it fills the holes.

Make the Chocolate Pudding Layer: In a mixing bowl, whisk the instant chocolate pudding mix 🍫 with the cold milk 🥛 for 2 minutes. Let it sit for a few minutes to thicken, then spread it over the top of the cake, smoothing it out with a spatula.

Make the Whipped Topping: In a mixing bowl, beat the heavy whipping cream 🧴 with powdered sugar 🍩 and vanilla extract 🍦 until stiff peaks form. Spread the whipped cream evenly over the pudding layer.

Garnish: Top with fresh raspberries 🍇 and shaved chocolate or chocolate chips 🍫 for an extra touch of indulgence.

Chill & Serve: Refrigerate the cake for at least 2 hours to allow all the flavors to meld together. Slice, serve, and enjoy!

Enjoy your delicious Raspberry Chocolate Poke Cake! 🍫🍇
