Chicken Samosa Recipe
Ingredients:
For Dough:

1 ½ cups all-purpose flour

½ tsp salt

2 tbsp oil

¾ cup water (as needed)

For Filling:

2 tbsp oil

1 large onion (finely chopped)

1 tbsp ginger-garlic paste

2 green chilies (finely chopped)

2 chicken breasts (boiled and shredded)

1 tsp turmeric powder

1 tsp red chili powder

1 tsp garam masala

1 tsp coriander powder

½ cup chicken stock or water

Salt to taste

Fresh coriander leaves (finely chopped)

For Sealing:

2 tbsp flour + 3 tbsp water (to make paste)

Method:
Make dough: Mix flour, salt, and oil. Add water gradually and knead into stiff dough. Cover and rest for 30 minutes.

Prepare filling: Heat oil in a pan. Sauté onion, ginger-garlic paste, and green chilies for 2 minutes.

Add spices (turmeric, chili powder, garam masala, coriander powder) and mix well.

Add chicken pieces and chicken stock. Cook until chicken is done and mixture thickens. Add coriander leaves and cool.

Divide dough into small balls, roll into thin circles. Fold each into a cone shape, fill with chicken mixture, and seal edges with flour paste.

Deep fry samosas in hot oil until golden and crispy.

Drain on paper towels and serve hot.

Ingredients:
500 gm boneless chicken (boiled and shredded)

2 cups boiled and mashed potatoes

¼ cup finely chopped carrot

⅓ cup finely chopped capsicum

½ cup finely chopped onion

1.5 tsp chopped green chilies

2 tsp finely chopped garlic

½ tbsp grated ginger

1.5 tsp garam masala powder

½ tbsp roasted cumin powder

¼ cup chopped coriander leaves

50 gm bread crumbs

Juice of one lemon

Salt and black pepper to taste

2 tbsp oil (for sautéing)

Oil for deep frying

3 eggs (beaten)

Bread crumbs (for coating)

Method:
Heat oil in a pan. Add cumin seeds and sauté. Add garlic and ginger; sauté until golden.

Add onions and cook until pink. Add carrot and capsicum; sauté for 4-5 minutes. Remove from heat and cool.

In a large bowl, mix shredded chicken, mashed potatoes, sautéed vegetables, green chilies, garam masala, cumin powder, bread crumbs, coriander, lemon juice, salt, and pepper well.

Shape the mixture into equal-sized balls and flatten them into patties.

Dip patties in beaten eggs, then coat with bread crumbs.

Deep fry in hot oil on medium heat until golden and crispy.

Drain excess oil on paper towels. Serve hot with ketchup or green chutney.

Garlic Chicken Recipe

Ingredients:

550 grams chicken breast or thigh, cut into bite-sized pieces

2 tsp lemon juice

¾ tsp sea salt (adjust to taste)

½ tsp black pepper

1 tsp Italian herbs or seasoning (mix of basil, oregano, rosemary, thyme, parsley)

½ tsp garlic powder

½ tsp onion powder

2 tbsp all-purpose flour (or corn starch for crispy chicken)

2 tbsp olive oil (or cooking oil)

For the sauce:

2 tbsp unsalted butter

1½ tbsp fresh minced garlic

2 tsp all-purpose flour

1 cup chicken broth or stock

Salt to taste

½ to 1 tbsp lemon juice (optional)

½ to 1 tsp chili flakes and/or black pepper

Fresh parsley or rosemary for garnish

Instructions:

Pat dry chicken pieces and toss with lemon juice, salt, black pepper, Italian herbs, garlic powder, onion powder, and flour to coat lightly.

Heat oil in a pan and pan-fry chicken for about 3 minutes on each side until cooked through. Remove and set aside.

In the same pan, add butter and sauté minced garlic on low heat for 40-50 seconds.

Stir in flour and cook for a minute.

Gradually add chicken broth, stirring continuously, and cook until sauce thickens and coats the back of a spoon (about 7-8 minutes).

Add lemon juice and adjust salt to taste.

Return chicken to the pan and cook on high heat for 2 minutes to absorb some sauce.

Sprinkle chili flakes and black pepper.

Garnish with fresh herbs and serve hot over rice, pasta, or with flatbreads.

This dish is flavorful but not very spicy; you can add red chili powder or garam masala for heat.

Method:

In a bowl, combine minced chicken, onions, ginger-garlic paste, spring onions, soy sauce, black pepper, salt, and oil. Mix well.

Ingredients:

500 gm boneless chicken

1 cup all-purpose flour (maida)

4 eggs

1 cup sliced onions

4-6 chopped green chilies

2 tbsp ginger-garlic paste

1 cup coriander leaves

1 cup mint leaves

1/2 cup vinegar

Red chili powder, black pepper powder, cumin powder, coriander powder, garam masala, amchur powder, turmeric, salt to taste

Oil for cooking and frying

Method:

Knead soft dough with flour, salt, oil, and water. Let it rest with some oil on top.

Marinate chicken with vinegar, salt, ginger-garlic paste, red chili powder, and black pepper powder for 15-30 minutes.

Heat oil in a pan, sauté half the onions and remaining ginger-garlic paste. Add dry spices.

Add marinated chicken and cook until tender. Finish with garam masala and vinegar.

Blend coriander, mint, and green chilies to make green chutney.

Roll small balls of dough into thin rotis and cook on a griddle.

Beat eggs and pour on the griddle, place roti on top, flip when egg cooks.

Ingredients:

1 pizza base (ready-made or homemade)

200 gm boneless chicken (cut into pieces)

4 tbsp tomato sauce

1 tbsp ginger-garlic paste

1 small onion (finely chopped)

1 capsicum (finely chopped)

1 tomato (thinly sliced)

1 ½ cups mozzarella cheese (grated)

1 cup cheddar cheese (grated)

1 tsp oregano or Italian seasoning

1 tbsp oil

Salt and black pepper to taste

Method:

Marinate chicken with salt, red chili powder, garam masala, curd, and ginger-garlic paste for 1 hour.

Heat oil in a pan and cook chicken on low flame until done.

Spread tomato sauce on the pizza base.

Add marinated chicken, onion, capsicum, and tomato on top.

Sprinkle mozzarella and cheddar cheese over it.

Sprinkle oregano or Italian seasoning.

1/2 tsp black pepper

2 tbsp oil

1 tbsp chopped garlic

2 dried red chilies (broken)

1 onion (chunky pieces)

1/2 cup capsicum (chunky pieces)

2 tbsp soy sauce

1 tbsp chili sauce

1 tsp sugar

1/4 cup roasted peanuts

1/2 cup water

Method:

Mix chicken with cornstarch, salt, and black pepper.

Heat oil in a pan, add chicken, and fry for 3-4 minutes.

Add garlic, ginger, and dried red chilies. Fry for 1 minute.

Add onion and capsicum. Cook for 2 minutes.

1/2 tsp black pepper

2 tbsp oil (for frying)

1/4 cup lemon juice

2 tbsp sugar

1 tbsp cornstarch (mixed in water)

Method:

Mix chicken pieces with egg, cornstarch, salt, and black pepper.

Heat oil in a pan and fry chicken pieces until golden brown.

In a small pan, add water, lemon juice, sugar, and salt. When it boils, add cornstarch mix and cook till sauce thickens.

Chicken Black Bean Sauce
Ingredients:

500 gm boneless chicken, cut into pieces

4 tbsp oil

3 garlic cloves, finely chopped

25 gm ginger, julienned

3-4 dried red chilies (adjust to taste)

1 large red onion, thinly sliced

2 bell peppers (red and yellow), sliced

1 tbsp fermented black bean sauce

2 tbsp light soy sauce

2 tbsp dark soy sauce

2 tsp sugar

½ tsp black pepper powder

2 tbsp Shaoxing rice wine (or dry sherry)

2 tsp sesame oil

Salt to taste

Method:

(Optional) Brine the chicken in salted water for 10-15 minutes, then drain and pat dry.

Heat oil in a wok, add garlic, ginger, and dried chilies; stir-fry until fragrant.

Add chicken and stir-fry on high heat for 3-4 minutes until lightly browned.

Add black bean sauce and light soy sauce; stir-fry for 20 seconds. Then add dark soy sauce, black pepper, sugar, and Shaoxing wine.

Cover and simmer on low heat for 10 minutes until chicken is cooked through.

Increase heat, add onion and bell peppers; stir-fry for 1-2 minutes.

Drizzle sesame oil and mix well.

Serve hot with steamed rice or noodles.
