Kofta ke Ajzaa (For Meatballs):
Qeema (Beef/Chicken) – 500g
Pyaz – 1 adad (baraik kati hui, pani nikal lein)
Adrak Lehsan Paste – 1 chamach
Hari Mirch – 2 (baraik kati hui)
Hara Dhania – 2 chamach
Namak – zaiqe ke mutabiq
Lal Mirch Powder – 1/2 chamach
Garam Masala – 1/2 chamach
Besan ya Breadcrumbs – 2 chamach
Anda – 1 (binding ke liye)
Kofta Curry ke Ajzaa:
Pyaz – 2 adad (baraik kati hui)
Tamatar – 2 adad (blend ya paste kiya hua)
Adrak Lehsan Paste – 1 chamach
Lal Mirch Powder – 1 chamach
Haldi – 1/2 chamach
Dhania Powder – 1 chamach
Namak – zaiqe ke mutabiq
Garam Masala – 1/2 chamach
Tel – 1/2 cup
Pani – 2–3 cups (gravy ke liye)

کوفتے بنانے کی ترکیب – اردو
کوفتے کے اجزاء:

قیمہ – 500 گرام

پیاز – 1 عدد (پانی نکال لیں)

ادرک لہسن پیسٹ – 1 چمچ

ہری مرچ – 2 عدد

ہرا دھنیا – 2 چمچ

نمک، لال مرچ، گرم مصالحہ – حسبِ ذائقہ

بیسن یا بریڈ کرمز – 2 چمچ

انڈہ – 1 عدد

گریوی کے اجزاء:

پیاز – 2 عدد

ٹماٹر – 2 عدد

ادرک لہسن پیسٹ – 1 چمچ

لال مرچ، ہلدی، دھنیا پاؤڈر – حسبِ ذائقہ

نمک – حسبِ ذائقہ

تیل – ½ کپ

پانی – 2–3 کپ

گرم مصالحہ، ہرا دھنیا – گارنش کے لیے

ترکیب:

تمام اجزاء مکس کرکے کوفتے تیار کریں۔

دیگچی میں پیاز کو سنہری کریں، پھر ادرک لہسن اور ٹماٹر شامل کریں۔

مصالحہ بھون کر پانی شامل کریں اور اُبال آنے پر کوفتے ڈال دیں۔

درمیانی آنچ پر 20–25 منٹ پکائیں۔

Chicken Aloo Cutlets | Resheydar Kabab Recipe
Try this crispy and juicy Chicken Aloo Cutlets (Resheydar Kabab) recipe by Cooking with Asifa. These cutlets are perfect for tea time, iftar, or as a side dish for guests. Made with shredded chicken and potatoes, seasoned to perfection!

Servings: 8–10 cutlets

🧂 Ingredients:
Chicken breast – 500g (boiled & shredded)

Potatoes – 3 medium (boiled & mashed)

Onion – 1 medium (finely chopped)

Green chilies – 2 (finely chopped)

Coriander leaves – 2 tbsp (chopped)

Mint leaves – 1 tbsp (chopped, optional)

Ginger garlic paste – 1 tbsp

Red chili flakes – 1 tsp

Black pepper – ½ tsp

Garam masala – ½ tsp

Salt – to taste

Lemon juice – 1 tbsp

Egg – 1 (for mixing)

Bread crumbs – ½ cup (for binding)

Egg – 1 (for coating)

Bread crumbs – for coating

Oil – for shallow frying

🔥 Instructions:
Boil and shred the chicken finely (resheydar style).

In a large bowl, combine shredded chicken, mashed potatoes, chopped onion, green chilies, coriander, mint, and all dry spices.

Add ginger garlic paste, lemon juice, and 1 beaten egg. Mix well.

Add ½ cup bread crumbs for binding. Adjust if mixture feels too soft.

Shape the mixture into oval or round cutlets/kabab shapes.

Beat an egg separately. Dip each cutlet in egg, then coat with breadcrumbs.

Heat oil in a pan and shallow fry until golden and crispy on both sides.

Serve hot with chutney, ketchup, or raita.
