Laswa is an Ilonggo (from Iloilo, Philippines) boiled vegetable soup that is simple, flavorful, and healthful. It is made with fresh, in-season vegetables like squash, okra, eggplant, and leafy greens, seasoned with a hint of fish sauce or shrimp paste (bagoong), and frequently includes shrimp/ dried shrimps or fish for a light but nourishing meal.
