3.FLANK
This is the primal cut just below the loin and before the ribs begin.It is boneless and very fatty when left untrimmed.uses: For preparation of corned beef,delicious for slow cooking and grilling.

2.LOINS
A)The full loin is a primal cut extending from the round to the ribs-the lower middle of the animals back-and containing the most tender cuts of the animal.

The full loin is typically divided into sirloin and short loin,sub primal cuts that share two muscles:the top sirloin/top loin, a long muscle along the top of the animals back and the tender loin (fillet) that lies below it.
The sirloin also contains the part of the same muscle found in the adjoining round.The sirloin portion of this muscle also known as the bottom sirloin yields the sirloin tip or tri-tip.

Bone-in sirloin provides excellent sirloin steaks named for the bone they contain(pin bone,flat bone,round bone,wedge bone).

When the top loin is removed from the bone,trimmed and well parceled it becomes a fine boneless joint for roast.Itshould be roasted fast and served pink.The french refer to it as contre-filet.

A T bone(potterhouse) steak is a cross section of the unfileted loin.

BEEF CUTS
I would concede that you don't have to understand the anatomy of a cow,and how it is butchered to be an adventurous beef cook-but it certainly helps.And there's always a chance that you will find the subject intrinsically interesting.

1.ROUND
It's the primal cut from the animals back leg.From it's shank to it's rump.
It's characterized by offering tougher cuts.

A) Heel of round or round tip:This is the cut right above the leg.Excellent for making corned beef,burgers,slow cooked stews,can be cut into strips and stir fried.

B) Bottom round: located at the top part of the thigh,it's tougher than the round tip: uses are similar to heel of round.

C) Top round: it's the long inner muscle of the cows massive thigh.Its a little more tender than bottom round. Uses: roasting,braising,marinating and flash frying.

D) Rump: This is a flavourful cut taken from the upper part of the round.If not properly matured can become chewy.Rump is suitable for grilling,stewing and barbequing...rump roast and rump steak are household name.

How does good beef looks like?

Previously we looked at the benefits of eating beef.Today we are focusing on what to look out for while purchasing beef 🍖 meat.

Once you become familiar with it after cooking severally, you'll notice the characteristics of a good beef from a poor quality raised beef.

1. The color should be a pleasing pink red,almost purplish, not pink or bright crimson.It should look dry but shining rather than wet and sweating and be pleasantly tacky to touch.If you prod it with a finger it should be nicely yielding not too firm or resistant(the opposite of fresh fish).

2. Look closely at the grain of the meat for marbling(these are the fine threads of fat that run through the meat muscle),A well marbled meat is more flavourful in nature.

3. A good layer of fat is also an excellent sign of good beef.It indicates that the animal was in good health at the time of harvesting.

In our previous post we have been challenged albeit temporarily on our understanding of what qualifies to be refered to as MEAT.

Our assumptions have been challenged and our imaginative minds stretched on finding a middle ground on what meat is.

So in our familiarization of different forms of meat we are going to learn how to identify good meat(purchasing),preparation(recipes),and how to create delicious mouth watering meats of all kinds.

What is MEAT?

MEAT: It's of many kinds and what may be understood from the word may vary considerably from culture to culture.

Personally, the culturally diverse aspect of meat has influenced how I perceive and answer the question 'what is meat?'...I've had the opportunity to travel and encounter diverse forms of cuisine that incorporate many kinds of meat,case in point once I've been served cows udder in an Asian restaurant,Frog in a french house,wild game in Kenyan steak house and lastly a cock's comb to boot..all these surprisingly fall under the category of meat.
