Greek Chicken Gyros Recipe 🥙🌮

Ingredients

•For the Chicken Marinade:
500g (1 lb) chicken thighs or breast (boneless, skinless)
• 3 tbsp olive oil
• 3 garlic cloves, minced
• Juice of 1 lemon
• 1 tsp dried oregano
• 1 tsp ground paprika
• 1 tsp ground cumin
• ½ tsp ground coriander
• ½ tsp salt
• ½ tsp black pepper

For the Tzatziki Sauce:

• 1 cup Greek yogurt (full fat)
• 1 cucumber, grated and squeezed to remove excess water
• 2 garlic cloves, minced
• 1 tbsp olive oil
• 1 tbsp fresh dill or mint, chopped (optional)
• 1 tsp lemon juice
• Salt and pepper to taste

For the Gyros:

• 4-6 pita breads
• 1 cup lettuce, shredded
• 1 cup cherry tomatoes, sliced
• 1 small red onion, thinly sliced
• Feta cheese (optional)

Instructions

1. Marinate the Chicken:

. In a bowl, combine olive oil, garlic, lemon juice, oregano, paprika, cumin, coriander, salt, and pepper.
Add the chicken and coat it thoroughly in the marinade.
Cover and refrigerate for at least 1 hour (or overnight for more flavor).

2. Prepare the Tzatziki Sauce:

. In a bowl, mix the Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill or mint, salt, and pepper.
Chill in the refrigerator until ready to serve.

3. Cook the Chicken:

. Heat a grill pan or skillet over medium-high heat.
Cook the marinated chicken for 5-7 minutes per side, until fully cooked and slightly charred.
Let the chicken rest for a few minutes, then slice into strips.

4. Assemble the Gyros:

. Warm the pita bread in a dry pan or microwave.
Spread a generous amount of tzatziki sauce on the pita.
Add sliced chicken, lettuce, tomatoes, onions, and feta cheese if desired.
Fold or wrap the pita to create the gyro.

Cheesy Garlic Chicken Wraps 🌯

-Ingredients (Makes 4 wraps)

- Chicken: 2 boneless, skinless chicken breasts, diced
- Garlic: 3-4 cloves, minced
- Cheese: 1 cup shredded mozzarella or cheddar
- Tortilla wraps: 4 large
- Butter: 2 tablespoons
- Olive oil: 1 tablespoon

- Seasonings:
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon chili flakes (optional)
- Salt and pepper to taste
- Vegetables (optional): Lettuce, tomatoes, or any preferred veggies
- Sauce: Ranch dressing, mayonnaise, or any preferred sauce

Instructions

1. Prepare the Chicken
- Heat olive oil in a skillet over medium heat.
- Add diced chicken, season with garlic powder, paprika, chili flakes, salt, and pepper. Cook for 6-8 minutes, stirring occasionally, until fully cooked and golden brown.

2. Make Garlic Butter
- In a small pan, melt the butter over low heat.
- Add minced garlic and sauté for 1-2 minutes until fragrant (don’t let it burn).

3. Combine the Chicken and Cheese
- Add the cooked chicken to the garlic butter and toss well.
- Sprinkle shredded cheese on top and mix until the cheese melts, coating the chicken.

4. Assemble the Wraps
- Lay each tortilla flat.
- Add a layer of lettuce or your chosen veggies (optional).
- Spoon the cheesy garlic chicken onto the wrap.
- Drizzle with your preferred sauce.

5. Wrap and Toast (Optional)
- Fold the sides of the tortilla and roll it tightly.
- Toast the wraps on a skillet for 1-2 minutes on each side until golden and crispy.

6. Serve
- Cut the wraps in half, serve warm, and enjoy!

Ingredients:

For the Cookies:

• 3 cups (360g) all-purpose flour
• 3/4 cup (150g) brown sugar, packed
• 3/4 cup (180g) unsalted butter, softened
• 2/3 cup (160ml) molasses
• 1 large egg
• 1 teaspoon baking soda
• 1 teaspoon ground cinnamon
• 1 teaspoon ground ginger
• 1/2 teaspoon ground cloves
• 1/2 teaspoon ground nutmeg
• 1/2 teaspoon salt

For the Icing:

• 1 cup (120g) powdered sugar
• 1-2 tablespoons milk
• 1/2 teaspoon vanilla extract
• Optional: Food coloring

Instructions:

1. Prepare Dough: Mix butter, sugar, molasses, and egg. Combine with dry ingredients (flour, baking soda, spices, salt) to form dough. Chill for 1 hour.

2. Cut Cookies: Roll dough to 1/4 inch thick, cut shapes with cookie cutters, and place on a baking sheet.

3. Bake: Bake at 350°F (175°C) for 8-10 minutes. Cool completely.

4. Decorate: Mix icing ingredients, decorate cookies, and let icing set.

Passion Fruit ice cream 🍨

Ingredients:
- 1 cup (240 ml) passion fruit pulp (fresh or store-bought)
- 1 cup (240 ml) heavy cream
- 1/2 cup (120 ml) whole milk
- 3/4 cup (150 g) granulated sugar
- 3 large egg yolks
- 1 teaspoon vanilla extract (optional)

Instructions:

1. Prepare the Passion Fruit Pulp:
- If using fresh passion fruits, cut them in half and scoop out the pulp. Strain to remove the seeds if you prefer a smoother texture.

2. Heat the Milk and Cream:
- In a medium saucepan, combine the heavy cream, milk, and half the sugar. Heat over medium heat until the mixture is warm but not boiling.

3. Whisk Egg Yolks:
- In a separate bowl, whisk the egg yolks with the remaining sugar until pale and creamy.

4. Temper the Egg Yolks:
- Slowly pour a small amount of the warm cream mixture into the egg yolks while whisking constantly. Gradually add more until the mixture is warm.

5. Cook the Custard:
- Pour the tempered egg yolks back into the saucepan with the cream mixture. Cook over low heat, stirring constantly, until the mixture thickens slightly and coats the back of a spoon. Do not let it boil.

6. Add Passion Fruit Pulp:
- Remove the custard from the heat and stir in the passion fruit pulp and vanilla extract.

7. Chill the Mixture:
- Let the mixture cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.

8. Churn the Ice Cream:
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.

9. Freeze to Set:
- Transfer the churned ice cream to an airtight container and freeze for at least 2-4 hours to firm up.

Tips:
- If you don't have an ice cream maker, pour the mixture into a container, freeze, and stir every 30 minutes for 2-3 hours to break up ice crystals.
- For added texture, mix in a few passion fruit seeds before freezing.
