Food Icon Spotlight: Tisetso Moeletsi 🇱🇸🔥

From a small village in Lesotho to running kitchens in London, Ireland, and across South Africa this is the story of Tisetso Moeletsi, the chef putting Basotho cuisine on the global map.

Trained at *Dona@Balos School of Chefs and Hospitality*, Tisetso started in his mother’s kitchen and never stopped pushing. He’s worked at The Ritz London, Bochilli in Ireland, and led top kitchens in Cape Town and Johannesburg. Today, he’s back home as Head Chef at No.7 Restaurant , building the next generation of Basotho chefs.

His mission? Preserve, refine, and share Lesotho’s food with the world — without losing where it comes from.

In the fast-paced world of Lesotho’s culinary scene, few names resonate with as much versatile energy as Bokang Mohapi. From the rugged terrains of outdoor cooking to the refined precision of fine dining, Mohapi is a chef who refuses to be put in a box. This week, we sit down with the man who is currently redefining leadership at one of Maseru’s most beloved stops: The Thatch Cafè.
THE FOUNDATION: A DONA@BALOS PRODIGY
Every great architect of flavor needs a solid foundation, and for Mohapi, that foundation was laid at the prestigious Dona@Balos Chef School. As an alumnus of one of Lesotho’s premier culinary institutions, he carries the hallmark of professional excellence and technical discipline. It was here that his raw passion was forged into a professional craft, preparing him for the high-pressure environments of the country’s top kitchens.
THE JOURNEY: GRIND AND REFINEMENT
Following his formal training, Mohapi took his skills to the field. A pivotal chapter was written during his 13-month tenure as Sous Chef at Khatsi Lounge. It was here, in the heart of Lithabaneng, that he mastered the art of high-volume service without sacrificing quality. As a Sous Chef, he was the engine of the kitchen—balancing the demands of a diverse menu and mentoring a team to deliver the excellence Khatsi is known for.
But Mohapi’s soul has always been split between two worlds: the white-tablecloth elegance of Fine Dining and the raw, smoky allure of being a Camping Chef. This rare duality allows him to pivot from plating delicate textures to orchestrating gourmet meals over an open fire in the Maloti Mountains.
THE CURRENT COMMAND: THE THATCH CAFÈ
Today, you’ll find Mohapi at The Thatch Cafè, where he wears two heavy hats: General Manager and Head Chef.
Under his leadership, the café has become more than just a place to eat; it’s a destination. Whether he’s overseeing the operational flow of the business or personally crafting the "Ubuntu breakfast runs" for the local biking community, Mohapi’s touch is everywhere. He has successfully transitioned from the "how" of cooking to the "why" of hospitality management.
THE VISION: MŌHAPI ATELIER
The most exciting development in his career, however, is the birth of his personal brand: MŌHAPI ATELIER.
More than just a catering service, the Atelier is Mohapi’s creative workshop. It represents a move toward bespoke culinary artistry—a space where his years of experience as a camping expert and fine dining specialist converge. MŌHAPI ATELIER is a signal to the industry that Bokang is no longer just a chef in a kitchen; he is a brand in motion.
