Made easy egg tarts! 😍Originally based on a Portuguese custard tart recipe but I’ve tweaked some bits to add more of caramel taste to the custard and make the recipe easier in general. Yet another recipe but I hope ya’ll try it out!
[Recipe]
Makes 18 egg tarts!
Dough Ingredients:
2 1/2 cups flour
1 teaspoon salt
1 1/2 sticks butter, cold, cubed
8 tablespoons ice water, or as needed
Filling Ingredients:
1/3 cup half cream and half condensed milk (Go for all cream if you don’t have that much of a sweet tooth)
1/4 cup brown sugar
1/4 cup white sugar
2 cups whole milk (300 ml, 3.5% milk fat)
3 egg yolks
4 teaspoons cornstarch
1¼ teaspoon vanilla extract
Dough:
Cube cold butter into small pieces
Add all the ingredients except ice water into a bowl
Incorporate the butter into the flour with a fork until only small pea-sized pieces of butter remain
Gradually add ice water and mix until the dough comes together (Add slowly and don’t let the dough become sticky)
Work the dough into a ball and refrigerate for 30 mins
Roll out the dough and cut them into circles
Put your dough circles in each tart tin / muffin tray / cupcake tray
Place in the freezer and proceed with preparing the filling
Filling:
Stir in all the ingredients for the filling in pot
Place the pot over medium low heat and continue whisking until mixture is thick enough to coat the back of a spoon
Let your filling cool completely
Putting Together & Baking:
Preheat the oven to 400 degrees F (204 degrees C)
Spoon in the filling inside each tart shell
Remove air bubbles by tapping your tins / tray onto a solid surface
Bake for 35 minutes
Take out of the oven, cool, and enjoy!
