Maple Pecan Oatmeal Cups

Ingredients
2 cups old-fashioned rolled oats
1/2 cup chopped pecans
1/2 tsp cinnamon
1/4 tsp salt
1 cup milk (dairy or non-dairy)
1/2 cup pure maple syrup
2 eggs
1 tsp vanilla extract
Whole pecans, extra maple syrup, and shredded coconut for topping (optional)
How to Make
Preheat oven to 350°F (175°C) and grease or line a muffin tin.
In a large bowl, combine oats, chopped pecans, cinnamon, and salt.
In another bowl, whisk together milk, maple syrup, eggs, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until well combined.
Divide the mixture evenly among the muffin cups.
Top each with a whole pecan, extra maple syrup, and coconut if desired.
Bake for 25–30 minutes, or until set and lightly golden on top.
Let cool for 10 minutes in the pan before removing.
Drizzle with more maple syrup before serving if you like it extra sweet!
