One Pan Creamy Chicken Pesto Pasta! 🍝🍗

Ingredients:
3 chicken breasts (cut into cubes)
2–3 tbsp cornstarch
Garlic & herb seasoning
Rotisserie chicken seasoning (or any seasoning you like)
2 tbsp oil
5–6 tbsp butter (divided)
1 onion (diced)
16 oz mushrooms (sliced)
2–3 tbsp minced garlic
1 lb pasta (rotini or any pasta)
4 cups chicken broth
½ cup heavy cream
½ cup shredded Parmesan cheese
3 tbsp pesto

How to:
Season the cubed chicken with garlic & herb seasoning and rotisserie seasoning. Add cornstarch and toss well to coat.

Heat oil and 2–3 tbsp butter in a large skillet over medium-high heat. Add the chicken and cook for about 6 minutes (3 minutes per side). Remove the chicken and set aside.

In the same pan add 3 tbsp butter. Add diced onion and cook until soft. Add mushrooms and cook 3–5 minutes until tender. Stir in minced garlic and cook until fragrant.

Add the pasta and mix with the vegetables. Pour in 4 cups chicken broth and bring to a boil. Cook 8–9 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.

Reduce heat to low. Stir in heavy cream, Parmesan cheese, and pesto. Add the cooked chicken back to the pan and mix well.

Serve warm and enjoy! 😋🍝

Banana coffee cake

Crumb layers:
12 cup unsalted butter cut into cubes (8 tosp in total)
1 cup all purpose flour
1 cup packed light brown sugar
1/2 cup granulated sugar
1 tsp cinnamon

Cake:
2 cups all purpose flour
3 tsp baking powder
1 tsp cinnamon
1 tsp salt
3 ripe bananas
1/2 cup unsalted butter (room temp/8 tbsp butter in total
1 cup sugar
2 eggs
1 tsp vanilla
1 cup milk

Glaze:
1 cup powdered sugar
1-2 tbsp milk
Instructions:
Add all ingredients of the crumb mixture to a bowl and use a fork to mix it together until crumbly. Set aside.

Cake:
The get a separate bowl and add the dry ingredients (flour, baking powder, cinnamon, & salt) into the bowl and whisk it together. Set aside.
In a mixing bowl add butter and sugar. Miz together. Then add eggs and vanilla and mix.
Add ripe bananas and mix. Then alternate adding dry ingredients with milk until well combined.

Spray a 9 x 13 baking dish.
Place 1/2 of cake mix then sprinkle 1/3 of the crumb mixture on top of that. Then add the other half of the cake mixture over it and lastly add the rest of the crumb mixture on top.
Bake at 350 degrees for 45-55 minutes. Until a tooth pick comes out clean. Top with glaze.

Easy Crockpot Pasta and Meatballs! 🍝🍖

Ingredients:
32 oz bag frozen Italian style meatballs
1 jar (15 oz) Alfredo sauce
1 jar (24 oz) pasta sauce
12 oz pasta (any kind you like)
1–2 cups shredded Parmesan cheese (or mozzarella)

How to:
Add the frozen meatballs, Alfredo sauce, and pasta sauce to your crockpot. Mix well.

Cover and cook on HIGH for 3 hours or LOW for 5 hours.

Cook the pasta separately according to package directions. Drain and add it to the crockpot with the meatballs and sauce. Mix everything together.

Sprinkle shredded cheese on top, cover again, and let it melt.

Serve warm and enjoy! 😋🍝

One Pan Creamy Garlic and Herb Sausage Orzo! 🍝🧄

Ingredients:
½ stick garlic and herb butter
1½ smoked sausage links (sliced)
1 onion (diced)
1 lb orzo pasta
4 cups low sodium chicken broth
¼ cup half and half
1 package Boursin garlic & herb cheese
Seasoning of your choice

How to:
Melt the garlic and herb butter in a pan over medium-high heat. Add the sliced sausage and diced onion and sauté until golden brown.

Add the orzo and toss it in the pan, letting it toast for about 1 minute.

Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for about 5 minutes until the orzo is tender. Season to taste.

Stir in the half and half and mix well. Add the Boursin garlic & herb cheese and stir until melted and creamy.

Serve warm and enjoy! 😋🍝

Boston Cream Poke Cake! 🍰🍫

Ingredients:
1 box yellow cake mix (plus ingredients listed on the box)
2 boxes (3.4 oz each) instant vanilla or French vanilla pudding
4 cups milk
16 oz can chocolate icing

How to:
Bake the cake according to the package directions and let it cool completely.

Use the back of a wooden spoon to poke holes all over the cake, about 1–1.5 inches apart.

In a bowl mix the pudding and milk according to the package directions. Spread the pudding evenly over the cake, pushing it down into the holes.

Place the cake in the refrigerator for 1 hour.

Put the chocolate icing in a microwave-safe bowl and microwave for about 20 seconds, stirring halfway until smooth.

Pour the icing evenly over the pudding layer.

Return the cake to the fridge for another hour to set. Serve cold and enjoy! 😋🍫🍰

One Pan Bacon Sausage Cheesy Pasta! 🥓🍝🧀

Ingredients:
½ lb bacon (chopped)
1½ smoked sausage links (sliced)
1 onion (diced)
2 tbsp minced garlic
1 lb pasta (rotini or your choice)
4 cups chicken broth
¾ cup heavy cream
8 oz shredded cheese (Colby Jack or your choice)

How to:
Cook the chopped bacon in a large skillet over medium heat until crispy. Remove the bacon and leave about 3 tbsp of the bacon grease in the pan.

Add the sliced sausage and diced onion to the same pan. Cook over medium-high heat until golden brown. Stir in the minced garlic and cook until fragrant.

Add the pasta and mix with the sausage and onions. Pour in the chicken broth and bring to a boil, stirring occasionally.

Cook for 9–11 minutes until the pasta is tender and most of the liquid is absorbed.

Reduce heat and stir in the heavy cream. Gradually add the shredded cheese, stirring until melted and creamy.

Crispy Creamy Brown Sugar Pork Chops! 🍖✨

Ingredients:
6 medium pork chops
¾ cup brown sugar
¾ cup grated Parmesan cheese
¾ cup Italian style panko bread crumbs
½ cup mayonnaise
½ tbsp vegetable oil
1 tbsp Dijon mustard (optional)

How to:
Preheat oven to 425°F (220°C) and grease a baking dish.

Season the pork chops with your favorite seasoning.

In a bowl mix brown sugar, Parmesan cheese, and panko bread crumbs.

In another bowl mix the mayonnaise (and Dijon mustard if using). Spread a thin layer of the mayonnaise mixture on both sides of each pork chop.

Dip the pork chops into the breadcrumb mixture, pressing to coat well.

Place the coated pork chops in the greased baking dish and lightly spray or drizzle oil on top.

Bake for 25–30 minutes until golden and crispy.

Serve hot and enjoy! 😋

Crockpot Swamp Potatoes!

Ingredients:
1.5 lbs baby yellow potatoes (cleaned and cut into quarters)
1 small onion (diced)
2 cloves garlic (minced)
13.5 oz andouille sausage (sliced)
2 cans (14.5 oz) green beans (drained)
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
1 packet Lipton onion soup mix
1 stick butter

How to:
Spray the crockpot with nonstick spray. Add the potatoes and season with salt, pepper, garlic powder, and onion powder. Mix well.

Add the diced onion, garlic, and sausage on top. Then add the drained green beans and spread them evenly.

Sprinkle the onion soup mix over everything and place the stick of butter on top.

Cover and cook on HIGH for 5 hours until the potatoes are very tender. Stir gently before serving so everything is coated in the buttery sauce. Enjoy! 🍽️

Stuffed Pepper Casserole! 🫑🍲

Ingredients:
2 tbsp olive oil
1 red bell pepper (sliced)
1 green bell pepper (sliced)
1 yellow bell pepper (sliced)
1 large onion (sliced)
3 cloves garlic (minced)
1 lb ground beef
6 oz tomato paste
14 oz diced tomatoes
1 cup beef broth
2 cups cooked white rice
1 cup mozzarella cheese (shredded)
Salt and pepper to taste
1 tbsp garlic powder (divided)
2 tbsp Italian seasoning (divided)
Parsley for garnish (optional)

How to:
Preheat oven to 375°F (190°C).

Heat olive oil in a large skillet over medium-high heat. Add the sliced peppers and onion. Season with salt, pepper, and half of the Italian seasoning. Cook for 7–10 minutes until soft.

Add the ground beef and cook until browned, breaking it into small pieces. Drain any excess fat and season lightly with salt and pepper.

Stir in the garlic and tomato paste and cook for 1–2 minutes. Add the diced tomatoes and beef broth and mix well.

Add the cooked rice and season with the remaining garlic powder and Italian seasoning. Stir everything together.

Transfer the mixture to a greased baking dish and spread evenly. Top with shredded mozzarella cheese.

Bake uncovered for 20–25 minutes until the cheese is melted and bubbly.

Let it rest 5–10 minutes, garnish with parsley if desired, and serve. Enjoy! 😋

So easy & delicious! Pineapple Upside Down Cake

Ingredients
• 1 stick butter, melted
• 1 cup light brown sugar
• 10 maraschino cherries
• 1 (20 oz) can pineapple rings (save 1 cup juice)
• 1 box yellow cake mix (plus oil and eggs listed on box)
• 1 extra egg
• 1 (20 oz) can crushed pineapple, drained
• 1 (3.4 oz) French vanilla instant pudding mix

Instructions
1. Preheat oven to 350°F.
2. Pour melted butter into a 9x13-inch baking dish. Sprinkle brown sugar over the butter and spread evenly.
3. Drain pineapple rings and save 1 cup of the juice. Arrange rings over the brown sugar. Place cherries in the center of each ring and in empty spaces.
4. In a bowl, mix cake mix, oil, and eggs as directed on the box — do not add water. Replace the water with the reserved pineapple juice and add 1 extra egg.
5. Stir in ¾ of the crushed pineapple and the dry pudding mix until combined.
6. Pour batter over the pineapple layer and spread evenly.
7. Bake for 40 minutes, or until a toothpick inserted in the center comes out clean.
8. Let cool in the pan for 30 minutes, then carefully flip onto a serving plate.

Slice and serve warm. Enjoy! 🍍
