One Pan Creamy Chicken Pesto Pasta! 🍝🍗
Ingredients:
3 chicken breasts (cut into cubes)
2–3 tbsp cornstarch
Garlic & herb seasoning
Rotisserie chicken seasoning (or any seasoning you like)
2 tbsp oil
5–6 tbsp butter (divided)
1 onion (diced)
16 oz mushrooms (sliced)
2–3 tbsp minced garlic
1 lb pasta (rotini or any pasta)
4 cups chicken broth
½ cup heavy cream
½ cup shredded Parmesan cheese
3 tbsp pesto
How to:
Season the cubed chicken with garlic & herb seasoning and rotisserie seasoning. Add cornstarch and toss well to coat.
Heat oil and 2–3 tbsp butter in a large skillet over medium-high heat. Add the chicken and cook for about 6 minutes (3 minutes per side). Remove the chicken and set aside.
In the same pan add 3 tbsp butter. Add diced onion and cook until soft. Add mushrooms and cook 3–5 minutes until tender. Stir in minced garlic and cook until fragrant.
Add the pasta and mix with the vegetables. Pour in 4 cups chicken broth and bring to a boil. Cook 8–9 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Reduce heat to low. Stir in heavy cream, Parmesan cheese, and pesto. Add the cooked chicken back to the pan and mix well.
Serve warm and enjoy! 😋🍝
