DIP FROM DRIED PEPPERS, LEEKS, AND GARLIC

Remember that fiery hot dip I shared before? The one that could wake a bear from hibernation? Well, this is its sweeter, gentler cousin. This time, I’ve toned down the heat, added some leeks for extra flavor, and even tweaked the preparation process. The result? A dip so delicious and versatile, it’s basically the superhero of your dinner table.

Both this and the spicy version are absolutely fantastic (and ridiculously healthy). They pair perfectly with sausages, kebapi, or anything else you’re grilling. Just don’t forget the fresh bread—you’ll need something to mop up every last bit of this goodness.

For this recipe, you’ll need sweet dried red peppers. And guess what? It’s perfect for fasting periods, too!

From this dosage I made half kifli and the other half pogacha. So if you're only making pogacha, half the ingredients. Basically, you can make pogacha with any dough for kifli.

We Macedonians have a sweet tooth that borders on a national characteristic. You can test it anywhere. Finish any lunch, no matter how heavy or light, and someone at the table will quietly ask the golden question: “Do we have something sweet?” It’s almost a tradition at this point. Sweet is not just dessert for us. Sweet is comfort, reward, celebration, cure for stress, a reason to gather and sometimes the only thing that can fix a bad day.

Our desserts carry memories. They smell like old kitchens with wooden cupboards, grandmothers who measured everything by hand and never used a scale, holiday tables that stretched longer than the room, and childhood moments when we licked the spoon before anyone noticed. They show up at weddings, baptisms, slavas, name days, random visits, and every time someone wants to show love without saying a single word.

Every region prepares its sweets in a slightly different way. Every family believes their version is the best. Every grandmother has a secret that she tells nobody. And every household keeps at least one recipe handwritten on a notebook that has survived time, stains and generations.
