The "Imperfect" Napolitaine

If you’ve noticed our napolitaines have a unique, hand-crafted look, there is a very delicious reason for it.

We believe a napolitaine should be about balance, not just sweetness. That’s why we do things a little differently:

The Biscuit: Our recipe uses a exceptionally high butter-to-flour ratio. This creates that signature "melt-in-the-mouth" texture, but it also makes the dough delicate and naturally rustic in shape.

The Glaze: We choose a very fine, thin layer of icing. While a thicker coating might create a more "perfect" uniform surface, we prefer a light touch so the rich, buttery flavor of the biscuit isn't overpowered by sugar.

We aren't aiming for factory-molded perfection. We’re aiming for the perfect bite—where the saltiness of the butter meets just a hint of sweetness.

To us, a slightly uneven edge is simply the mark of a biscuit that has nothing to hide.
