🍗🥔 Chicken Wings with Potato Salad, Broccoli & Cauliflower

Crispy, juicy chicken wings paired with a creamy, veggie-packed potato salad. Perfect for family dinners, game nights, or weekend gatherings!

Ingredients (4 servings):

For the chicken wings:

1 kg chicken wings

2 tbsp olive oil

1 tsp paprika

1 tsp garlic powder

1 tsp onion powder

½ tsp cayenne pepper (optional)

Salt & black pepper to taste

For the potato salad:

4 medium potatoes, peeled & cubed

1 cup broccoli florets

1 cup cauliflower florets

½ small red onion, finely chopped

½ cup mayonnaise

2 tbsp Greek yogurt (optional, for creaminess)

1 tbsp Dijon mustard

1 tbsp apple cider vinegar

Salt & pepper to taste

Fresh parsley (for garnish)

Instructions:

Cook the wings: Preheat oven to 200°C (400°F). Toss wings with olive oil, paprika, garlic powder, onion powder, cayenne, salt & pepper. Spread on a baking tray and roast 35–40 minutes, flipping halfway, until golden and crispy.

Make the potato salad: Boil potatoes in salted water until tender (10–12 min). In the last 3–4 minutes, add broccoli and cauliflower florets. Drain and cool slightly.

Assemble salad: In a bowl, mix mayo, yogurt, mustard, vinegar, salt & pepper. Add potatoes, broccoli, cauliflower, and red onion. Toss gently to coat.

Serve: Plate crispy chicken wings alongside creamy potato salad. Garnish with parsley and enjoy warm or chilled.

These individual beef wellingtons combine tender beef, savory mushroom duxelles, and flaky puff pastry for a sophisticated appetizer or main dish. Elegant enough for dinner parties yet simple enough to make ahead for any celebration.

Ingredients (makes 6–8 minis):😍🍖🥩🥩🥩🥩🍖🍖🍖🍖🍖

500 g beef tenderloin (cut into 6–8 small medallions)

2 tbsp olive oil

2 tbsp butter

1 shallot, finely chopped

250 g mushrooms, finely chopped

2 cloves garlic, minced

1 tbsp fresh thyme leaves

2 tbsp Dijon mustard

1 sheet puff pastry (or more, as needed)

1 egg (for egg wash)

Salt & pepper to taste

Instructions:

Prepare beef: Season medallions with salt & pepper. Sear quickly in hot olive oil (about 1 minute per side). Set aside to cool. Brush with Dijon mustard.

Make duxelles: In a skillet, melt butter. Add shallots, mushrooms, garlic, and thyme. Cook until mixture is dry and caramelized. Cool completely.

Assemble: Roll out puff pastry and cut into squares large enough to wrap each beef piece. Place a spoonful of duxelles on pastry, top with beef medallion, then fold and seal edges.

Bake: Brush with egg wash. Bake at 200°C (400°F) for 15–20 minutes, until pastry is golden brown.

Serve: Let rest a few minutes before serving with a red wine sauce or green salad.

For the choux pastry:

½ cup unsalted butter (115 g)

1 cup water

1 tbsp sugar

¼ tsp salt

1 cup all-purpose flour

4 large eggs

For the filling:

2 cups heavy cream (whipped) or pastry cream

2 tbsp powdered sugar

1 tsp vanilla extract

For the chocolate glaze:

1 cup dark chocolate, chopped

½ cup heavy cream

For the caramelized hazelnuts:

1 cup whole hazelnuts, toasted & peeled

½ cup sugar

2 tbsp water

Instructions:

Make the choux pastry: Preheat oven to 200°C (400°F). In a saucepan, heat butter, water, sugar, and salt until boiling. Stir in flour all at once, mix until dough pulls from sides. Cool slightly, then beat in eggs one at a time until smooth. Pipe small rounds onto a baking sheet. Bake 20–25 minutes until puffed and golden. Cool completely.

Prepare filling: Whip cream with powdered sugar and vanilla until soft peaks form (or use pastry cream). Fill cooled puffs by cutting in half or piping through the bottom.

Chocolate glaze: Heat cream until simmering, pour over chocolate, and stir until smooth. Dip tops of filled cream puffs in glaze.

Caramelized hazelnuts: In a pan, melt sugar with water until amber caramel forms. Stir in hazelnuts, coat well, then spread on parchment to cool. Roughly chop.

2 tbsp olive oil

1 small onion, finely chopped

1 bell pepper, finely chopped

1 cup crushed tomatoes

½ cup dry red wine

1 cup beef broth

1 tsp cumin

1 tsp oregano

1 bay leaf

Salt & pepper to taste

For the purple cauliflower purée:

1 medium purple cauliflower, cut into florets

2 tbsp olive oil

½ cup heavy cream (or milk for lighter version)

2 tbsp butter

Salt & pepper to taste

Instructions:

Prepare the beef: Preheat oven to 200°C (400°F). Rub tenderloin with olive oil, garlic, thyme, rosemary, salt, and pepper. Sear in a hot skillet until browned on all sides. Transfer to oven and roast 20–25 minutes (medium-rare). Rest 10 minutes before slicing.

Make the Boliche sauce: Heat olive oil in a pan, sauté onion, bell pepper, and garlic until soft. Add crushed tomatoes, red wine, beef broth, cumin, oregano, and bay leaf. Simmer 15–20 minutes until thickened. Season to taste, remove bay leaf.

Purple cauliflower purée: Toss florets with olive oil, salt, and pepper. Roast at 200°C (400°F) for 20 minutes until tender. Blend with cream and butter until smooth and silky. Adjust seasoning.

3 tbsp unsalted butter

2 cups mixed nuts (walnuts, pecans, almonds, hazelnuts, cashews)

1 tsp vanilla extract

Pinch of salt

Instructions:

400 g (about 14 oz) shrimp, peeled and deveined

2 tbsp olive oil

1 onion, finely chopped

2 garlic cloves, minced

1 tomato, peeled and diced

1 tbsp tomato paste

4 cups (1 liter) vegetable or fish broth

1 tsp paprika

½ tsp chili flakes (optional)

Salt & black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions:

Heat olive oil in a pot and sauté onion and garlic until golden.

Add tomato and tomato paste, cook for 5 minutes.

Pour in the broth, season with paprika, chili, salt, and pepper. Simmer for 10 minutes.

Add shrimp and cook for another 5 minutes, until pink and tender.
