🍗🥔 Chicken Wings with Potato Salad, Broccoli & Cauliflower
Crispy, juicy chicken wings paired with a creamy, veggie-packed potato salad. Perfect for family dinners, game nights, or weekend gatherings!
Ingredients (4 servings):
For the chicken wings:
1 kg chicken wings
2 tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp cayenne pepper (optional)
Salt & black pepper to taste
For the potato salad:
4 medium potatoes, peeled & cubed
1 cup broccoli florets
1 cup cauliflower florets
½ small red onion, finely chopped
½ cup mayonnaise
2 tbsp Greek yogurt (optional, for creaminess)
1 tbsp Dijon mustard
1 tbsp apple cider vinegar
Salt & pepper to taste
Fresh parsley (for garnish)
Instructions:
Cook the wings: Preheat oven to 200°C (400°F). Toss wings with olive oil, paprika, garlic powder, onion powder, cayenne, salt & pepper. Spread on a baking tray and roast 35–40 minutes, flipping halfway, until golden and crispy.
Make the potato salad: Boil potatoes in salted water until tender (10–12 min). In the last 3–4 minutes, add broccoli and cauliflower florets. Drain and cool slightly.
Assemble salad: In a bowl, mix mayo, yogurt, mustard, vinegar, salt & pepper. Add potatoes, broccoli, cauliflower, and red onion. Toss gently to coat.
Serve: Plate crispy chicken wings alongside creamy potato salad. Garnish with parsley and enjoy warm or chilled.
