🍋 Lemon Blueberry Crumb Bars – Sweet, Tangy & Perfectly Crumbly!

These Lemon Blueberry Crumb Bars are the perfect mix of soft, fruity, and crunchy!

🧈 Ingredients:
For the crust & crumble:
2 ½ cups (300 g) all-purpose flour
¾ cup (150 g) sugar
1 tsp baking powder
1 pinch of salt
¾ cup (170 g) cold butter, cubed
1 large egg
Zest of 1 lemon
For the blueberry filling:
2 cups (250 g) fresh or frozen blueberries
½ cup (100 g) sugar
Juice of 1 lemon
2 tbsp cornstarch
👩🍳 Instructions:
Preheat your oven to 350°F (180°C).
Line an 8x8 inch (20x20 cm) baking pan with parchment paper.
Make the crust:
In a bowl, combine flour, sugar, baking powder, salt, and lemon zest.
Add the cold butter and rub it into the flour mixture until it looks like coarse crumbs.
Add the egg and mix until the dough comes together but stays crumbly.
Prepare the filling:
In another bowl, mix blueberries, sugar, lemon juice, and cornstarch.
Assemble:
Press 2/3 of the dough into the bottom of the pan.
Spread the blueberry mixture evenly over it.
Sprinkle the remaining dough on top as a crumble.
Bake for 35–40 minutes, until golden and bubbling at the edges.
Cool completely before cutting into bars.
Serve as is or with a scoop of vanilla ice cream for extra indulgence 🍨💙

These bars keep perfectly in the fridge for up to 4 days, or can be frozen for later!
