沙巴的卡达山杜顺(Kadazan Dusun)传统美食中,Hinava是一道令人难忘的酸香生鱼片。以新鲜的鲭鱼(tenggiri)为主角,鱼肉切成细块后,与辛辣的辣椒、辛香的姜末、清脆的葱丝混合,再淋上酸橙汁腌制。柑橘的酸味渗透鱼肉,既去腥又提鲜,搭配香料的层次,入口清爽醒胃。

Featuring fresh mackerel (tenggiri) as the star ingredient, the fish is finely diced and mixed with spicy chilies, pungent minced ginger, and crisp shredded onions, then marinated in lime juice. The citrusy acidity permeates the fish, effectively removing any fishy taste while enhancing its freshness, complemented by the layers of spices, resulting in a refreshing and appetizing flavor.
This dish requires no cooking—the natural acidity of the lime juice "cooks" the fish, giving it a tender yet slightly crisp texture with a perfect balance of sour and spicy notes, making it especially suited for tropical climates.
