Chinese New Year Lunar recipe series : Lotus leaf braised meat Lap Mei Fan (Chinese Cured Meat Rice) Recipe

年夜饭食谱：荷叶扣肉腊味饭

Lap Mei Fan is a comforting Cantonese dish made with fragrant rice cooked together with chinese cured meats which infuse the dish with their rich aroma and flavour.

Ingredients
• Rice: 2 cups (jasmine rice)
• Chinese Sausage (Lap Cheong): 1-2 pieces, sliced
• Chinese Cured Duck (Lap Ngap): 1 - 2 pieces , sliced
• Braised meat 扣肉 1 can,
• Dark Soy Sauce: optional
• Oyster Sauce: 1 tbsp
• Optional Garnish: Chopped green onions or fried shallots

Pan-Fried Meat & shrimp Dumplings (Gyoza) 香煎肉虾饺子

Ingredients

For the Filling:
• 1kg ground meat
• 300g raw prawns / shrimps (peeled, deveined, and finely chopped)
• 2 cups napa cabbage (finely chopped)
• 15 cloves garlic (minced)
• 2 green onions (finely chopped)
• 1 tsp ginger (grated) optional
• 5 tsp soy sauce
• 2 tsp sesame oil
• 4 tsp oyster sauce
• 3 tsp cornstarch
• 1/2 tsp white pepper
• some icy cold water (to make the meat bouncier)

For Cooking:
• 2 pack store-bought gyoza wrappers
• 4 tbsp vegetable oil
• ¼ cup water (per batch of frying)

For Dipping Sauce:
• 2 tbsp soy sauce
• 1 tbsp black vinegar or rice vinegar
• 1 tsp chili oil (optional)
