Master Vinegar Maker Ian Henderson brought twenty years of craft expertise to Penang, showcasing why this humble ingredient deserves attention in fine dining.
The Queensland craftsman led an exclusive session at Shangri-La Rasa Sayang Resort & Spa, sharing fermentation techniques learned from European artisans. His state-of-the-art facility produces award-winning vinegars recognised for purity and balance.

The evening dinner at Feringgi Grill featured Jade Tiger Abalone, Southern Rock Lobster, Spencer Gulf Garfish, Scallops, and Premium Australian Wagyu, paired with Henderson's gold medal-winning Grand Reserve vinegars from the 2023 Sydney Royal Fine Food Awards.
Vivien O.P. Lee, Executive Director of The Model Cook, organised the showcase alongside Dr. Kate Makin from the Australian High Commission, Jegan Selvarajan, General Manager of Shangri-La Rasa Sayang, and Dato' Suleiman Tunku Abdul Rahman.
