If you want a break from tomatoe stew & oil wahala, this coconut chicken sauce is your best bet. Saute fresh ginger, onion & garlic in little oil, then add your well marinated chicken & let it kinda fry for some minutes. Pour in your coconut milk,let it boil for some minutes, add your spices to taste , add your veggies like carrot, green peas and others, add your mashed irish potatoe as thickener(its a healthier alternative to cornflour) add the green, red, yellow bell peppers if you want. Bring down & enjoy with hot white rice
