Castella Sponge cup Cake

Ingredients
6 egg whites
6 egg yolks
85 g sugar
80 ml of vegetable oil
90 g cake flour/sponge flour
70 ml of milk
1/4 tsp salt
Instructions

Beat the egg whites until foamy, then add sugar.
Keep beating until still peak formed.

Heat the oil in a microwave for 90 seconds on
high, or you can heat the oil on the stove for one
minute. Add in flour and salt, mix well. Add in egg
yolks and milk, mix until smooth.

Add meringue bit by bit into the batter, fold it
gently.

Pour the batter into a lined baking tin, bang the
cake tin for few times to release the air bubbles.
Put the cake tin in a larger baking sheet, then pour
hot water into it to make a water bath.
5. Pop into a preheated oven at 150C, bake for about
an hour or until fully cooked.

Once it cooked, bang the cake tin a few times, this
can prevent the cake from shrinking. Let it cool
completely then slice it.

Pancake Recipe
Ingredients :
°1 cup flour
°Two eggs
°½ c water or milk
°¼ tsp salt
°2 tsp butter, melted

Instructions:

In a bowl, combine flour, butter and eggs. Gradually add milk or water, stirring to consolidate. Add salt and beat to smooth till you get a running consistency

Heat oiled iron pan or skillet on medium-high heat. Pour the batter over the frying pan, using about 1/4 cup for each pancake.

Tilt the dish in a circular motion so that the batter evenly coats the surface.

Cook the pancake for about 2 minutes, until the base is lightly golden and bubbles appear on the dough

Release with a spatula, flip and repeat on opposite side. Serving hot.

So, I promised to post meal plans for mothers who their children will be starting school for the first time and those not doing it right but network has been showing me shege😲.

Let me start by talking about the almighty NOODLES!
The quick fix meal most mother's prepare for their children. From my experience with children, that food starts giving off some aweful smell right before lunch break!! Avoid it as much as you can! Most times we have to force the children to eat it.
If you must I'll advice you get pasta /spaghetti instead. Though they both are made from flour, this last longer in the cooler.

Now to the meal plan.

First up, you have to ask yourself what your child loves. That is the type of food they love.

Then consider the classes of food .
What are these
1: carbohydrates
2proteins
3fats and oil
4 vitamins
5water
6: minerals
Make sure you're incorporating these adequately into their meals daily.

Take for instance.
If you wanna prepare jollof spaghetti (bolognese) for your child.

Let your recipe include

Some shredded beef or sausages
Onion, most children don't like onion so you could blend it into a paste alongside your tomatoes and peppers.
Make use of vegetable oil
Season with some dry blended crayfish or just sprinkle the cleaned crayfish inside the sauce if your child likes crayfish.
Add your spaghetti into your sauce and there you have a nice meal.

You can add one boiled egg if you so wish as it's a nice idea to give your child an egg a day

Next, instead of biscuits,cheese balls daily, you can add sliced fruits like bananas, apples, carrots etc. These are quite common and affordable.

Water is very important! Your child must have sufficient water if the school doesn't provide dispensers in their class. I always advice parents to add a backup bottle in their bags during summer because children tend to take a lot of water after recess due to their activities.
Now, the recipe above isn't limited to pasta alone.

You can use that sauce for yams ,plantains etc you just have to be creative! Children will always show off their 'loaded' meals to their classmates. What I mean by loaded is not large sized meat but a well garnished plate of food .
Then for each other day alternate and swap.

❌Plants are a great way to brighten up a home! But no matter how green your thumb is, some plants are a no-go for pets! When choosing greenery to decorate your space, make sure you avoid these 10 common household plants that are toxic for cats and dogs.



❌Lilies. Beautiful though they may be, lilies are one of the most toxic house plants for cats. Ingesting even a small amount or licking a bit of pollen off their coat can cause kidney failure and death.

❌Philodendron. These resilient, easy-to-grow houseplants contain high levels of calcium oxalate crystals. If ingested, this plant can cause burns to the mouth, excessive drooling and vomiting. Other houseplants with high levels of calcium oxalate include the snake plant and pothos (devil’s ivy).

❌Oleander. Also known as Nerium, oleander is more commonly found in outdoor gardens, but some gardeners bring them inside for the winter. These plants contain cardiac glycosides, which can cause drooling, diarrhea, abdominal pain, abnormal heart rhythm and neurologic signs.

How To Make Hausa sweet(stick sweet)

Ingredients
• Small nylons (Type used in tying granulated sugar for sale with a pointed edge) those days they used brown paper.

• Toothpicks

• 1 cup Granulated sugar

• 1 cup water

Directions:

Step 1: The first step is to prepare the cone. You could use Aluminum foil (cut up into little squares) for this or you could use nylon bags (the type used in tying sugar for sale). Either way, you’d get the desired end product. Set this aside

Step 2: In a sauce pan, dissolve 1 cup of sugar in 1 cup of water ratio one to one (1:1)

Place the pot on the burner and heat up on medium heat. Leave it to boil for a while till the sugar starts to caramelize and turn brown.

Once you notice this, turn off the heat and leave to cool just a little.

Step 3: This step should be done quickly. Get out your pointed edged nylons or foil and quickly pour in little quantities of the sugar caramel before it hardens in the pot. Add the toothpick handles quickly and hang somewhere to harden. Once it hardens, you can now remove the nylon and enjoy your sweet.

HOW TO MAKE ABACHA (African salad)

Abacha is an Eastern Nigeria dish made using dried, shredded cassava. You can eat it as a snack or a full meal. There are many variations to making this salad, but the more ingredients you add, the tastier the dish is. Whichever way you prepare or eat it, warm or cold, it will still come out delicious.

Ingredients

600g or one much abacha
2 cups ugba or ukpaka I love it.😁
1 cup palm oil
2 tbsps powdered potash
Fish, spiced and cooked
Ponmo, cooked and sliced
1 large onion, chopped
1 medium onion, sliced (to serve)
6 garden eggs, diced
Garden egg leaves, chopped optionsl
Salt and dry pepper (to taste)
4 tbsps ground crayfish
2 seasoning cubes
1 tsp ground Ehuru seeds (Calabash nutmeg)
1 tsp ogiri or iru
Fresh utazi leaves
Boiling water

Method
Sort your abacha for dirt or grit.
Soak the abacha in cold water for 10 minutes until it softens, then pour boiling water over it and drain.

Rinse the ugba with warm water.
Dissolve the potash in water and sieve out the water. Stir the potash water with the palm oil in a pot until it forms a yellowish paste.

Place on heat and add the ground Ehuru, pepper, crayfish and seasoning.

Stir, then add crushed stock cubes, diced onions and ugba. Take off the heat.

Add the ogiri and mix, then add meat and fish.

Add the abacha and mix, allowing the ingredients to blend.
Serve the abacha on a platter.

Add sliced utazi and salt to taste.
Garnish with chopped garden egg leaves and sliced onions.

1. Cucumbers contain most of the vitamins you need every day, just one cucumber contains Vitamin B1, Vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6, Folic Acid, Vitamin C, Calcium, Iron, Magnesium, Phosphorus, Potassium and Zinc.

FISH PIE
INGREDIENTS FOR THE DOUGH
500 Grams Flour

1/2 teaspoon Salt
1/2 teaspoon baking powder
1 teaspoon Nutmeg (optional)
2 tablespoon Sugar
200 Grams Margarine or butter or 50/50
2 eggs
100 ml evaporated milk or fresh or water
Vegetable oil for frying
INGREDIENTS FOR THE FILLING
2-3 Tablespoon Vegetable oil
1 small Onions

1/2 teaspoon Cayenne pepper
1/2 teaspoon Oregano
1/2 Teaspoon each Curry & Thyme
Salt to taste
1 medium-size Fried Mackerel
1 Can Sardine in Tomato sauce
Instructions
INSTRUCTIONS FOR THE FILLING
Remove the bones in the mackerel, shred it into small pieces and set aside.
Add the vegetable oil in the sauce pan on a medium heat.
Add the diced onions, add curry, thyme, garlic, cayenne pepper, and oregano and stir everything together and allow to simmer for about 1 minute.
Add the set aside fried mackerel and stir.
Add the sardine in tomatoes sauce to the above mixture.
Fry everything for about 5 minutes and remove from the heat to cool down.

INSTRUCTIONS FOR THE DOUGH
Mix all the dry ingredients in a mixing bowl (flour, margarine/ butter, nutmeg, salt and sugar). You should either use a stand mixer, spatula or whisk if you don’t want to use your hands but nevertheless hand does the job better.
Add the milk to the dry ingredients, then add the water bit by bit until the dough is properly formed. The reason I suggest bit by bit is because the consistency of our margarine or butter may differ, so add according to the texture of your dough and stop when the right consistency has been achieved.
Remove the dough from the bowl and drop it on a floured surface and knead until smooth but don’t over knead the dough.
Drop it back in the bowl and cover with a neat kitchen towel or clingy film or foil and allow to rest for about 30-40 minutes at room temperature.
Take it out and drop it on the rolling mat or a floured clean surface, divide it and start rolling out with a rolling pin.
Add about 1 teaspoon of the filling and roll.
Repeat the process until you roll out all the dough.

Fry until it is golden brown.
Enjoy and serve! Enjoy with any drink of your choice – water, juice, soda, tea etc
