Nigerian cracky buns recipe

Ingredients
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter (cold and cut into small pieces)
- 1/2 cup whole milk (room temperature)
- 1 large egg (room temperature)
- 1 teaspoon vanilla extract
- Vegetable oil for frying

Instructions
In a large bowl, whisk together the flour, sugar, baking powder, and salt.

Add the cold butter pieces to the dry ingredients. Use your fingers or a pastry cutter to rub the butter into the flour mixture until it resembles coarse crumbs.

In a separate bowl, whisk together the milk, egg, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix; the dough should be slightly sticky.

In a large skillet or deep fryer, heat the vegetable oil to 350°F (175°C). There should be enough oil to submerge the dough balls.

Using a spoon or your hands, scoop small portions of the dough and gently drop them into the hot oil. Fry in batches, being careful not to overcrowd the skillet or fryer.

Fry the buns for about 3-4 minutes, or until they are golden brown and crispy, turning occasionally to ensure even cooking.

Use a slotted spoon to remove the buns from the oil and place them on a paper towel-lined plate to drain excess oil.

Allow the buns to cool slightly before serving.
