Simple Italian Cake with 12 Tablespoons 🇮🇹
Ingredients:
3 eggs
12 tablespoons of sugar
12 tablespoons of oil
12 tablespoons of milk
12 tablespoons of flour
Zest and juice of half a lemon
11g baking powder

Nigerian Puff Puff Recipe

Ingredients:
- 2 cups (250 grams) all-purpose flour
- 1/2 cup (100 grams) granulated sugar
- 2 teaspoons instant yeast
- 1/4 teaspoon salt
- 1/2 teaspoon nutmeg (optional)
- 1 1/4 cups (300 milliliters) warm water
- Vegetable oil, for frying

Instructions
In a large mixing bowl, combine the flour, sugar, instant yeast, salt, and nutmeg (if using). Mix well.

Gradually add the warm water to the dry ingredients, stirring continuously until you get a smooth and slightly thick batter. The batter should be thick enough to hold its shape but still slightly runny.

Cover the bowl with a damp cloth or plastic wrap and let the batter rise in a warm place for about 1-2 hours, or until it has doubled in size and is bubbly.

In a deep fryer or a large, heavy-bottomed pot, heat vegetable oil over medium-high heat until it reaches about 350°F (175°C). There should be enough oil to submerge the batter completely.

Using a small ice cream scoop or your hands, scoop small portions of the batter and carefully drop them into the hot oil. Be sure not to overcrowd the pot.

Fry the dough balls until they are golden brown and cooked through, turning occasionally to ensure even frying. This should take about 3-5 minutes per batch.

Use a slotted spoon to transfer the fried puff puff to a paper towel-lined plate to drain any excess oil.

Serve the puff puff warm and enjoy them as a snack or dessert. They can be eaten plain or dusted with powdered sugar for extra sweetness.
