Let's talk abt masa this morning...

Alot of people love Masa and some do try it out at home but getting the right way of making it to come out well is really the problem.

Some of the things to look out..if you want some yummy and fluffy Masa...

1. Rice selection should be your best option..don't opt for any kind of rice..Go for rice that looks abit long and ash kind of colour.

2. Soak your rice for 3_5hrs not too long that it gets over soak.

3. Make sure the handful,you are cooking is not over cooked...

4. The cooked rice is cold,before mixing with the other one to blend

5. Do not over yeast..alot of people this is wer the mistake is coming...they add excess yeast to have double of batter and it over rise...when is fried, it becomes flats and doesn't stay long in the belly...my masa can last you hrs...b4 getting hungry

6. Grease your Masa pan 24hrs before frying...to enable easy flipping to both sides... especially those using local pan

7. I don't like Masa over oily...I do not add excessive oil while frying...

8. Add sugar at minimal too much sugar makes Masa to stick...which makes shape not to come out well...

9. Masa batter can be kept in the freezer or fridge for easy usage...
