Ingredients
For Yam Porridge:
 • 1 medium-sized yam (peeled and cut into cubes)
 • 1 cup palm oil (or vegetable oil, if preferred)
 • 2-3 medium fresh tomatoes (blended) or 1/2 cup tomato paste
 • 2 fresh red peppers (blended, optional for spice)
 • 1 medium onion (chopped)
 • 1-2 cups vegetable stock or water
 • 1 cup chopped spinach, ugu, or scent leaf (optional, for garnishing)
 • Crayfish (2 tablespoons, ground)
 • Smoked fish or dried prawns (optional)
 • Salt and seasoning cubes to taste
For Beef:
 • 500g beef (cut into bite-sized pieces)
 • 1 small onion (chopped)
 • 1 teaspoon ginger and garlic paste
 • 1 teaspoon curry powder
 • 1 teaspoon thyme
 • Salt and seasoning cubes to taste
Instructions
Step 1: Cook the Beef
 1. Season Beef: Place the beef in a pot, add chopped onions, ginger-garlic paste, curry powder, thyme, salt, and seasoning cubes.
 2. Cook: Add a little water and cook the beef on medium heat until tender (about 25-30 minutes). Add more water if needed.
 3. Fry or Grill (Optional): For extra flavor, you can fry or grill the cooked beef.
Step 2: Prepare the Yam Porridge
 1. Boil the Yam:
 • Place the cubed yam in a pot and add enough water to cover it.
 • Add a little salt and boil for about 10-12 minutes until it’s halfway cooked.
 2. Prepare the Sauce:
 • In another pot or pan, heat palm oil on medium heat.
 • Add chopped onions and sauté until fragrant.
 • Stir in the blended tomatoes and peppers (or tomato paste) and cook until the oil separates from the mixture.
 3. Combine Yam and Sauce:
 • Add the half-cooked yam into the sauce.
 • Pour in the vegetable stock or water to cover the yam slightly.
 • Add ground crayfish, smoked fish or dried prawns (if using), and seasoning cubes.
 4. Cook:
 • Stir gently, cover the pot, and let it simmer on low heat until the yam is soft and begins to thicken.
 • Use a wooden spoon to mash some of the yam cubes to give the porridge a creamy consistency.
 5. Add Greens:
 • If using spinach, ugu, or scent leaf, stir it in during the last 2-3 minutes of cooking.
Step 3: Serve
 • Dish the yam porridge into a plate or bowl.
 • Top it with the cooked (or fried/grilled) beef for a complete meal.
