Prof. Yemi Osinbajo, SAN, GCON, is a distinguished Nigerian lawyer, professor, and public servant born on March 8, 1957, in Lagos State but hails from Ogun State. He studied law at the University of Lagos and later earned his Master’s degree from the London School of Economics. Osinbajo has had an illustrious career in law and academia, serving as a professor of law at the University of Lagos and a Senior Advocate of Nigeria (SAN). He was the Attorney General and Commissioner for Justice in Lagos State (1999–2007), where he championed key legal reforms.

From 2015 to 2023, he served as the Vice President of Nigeria, during which he chaired the National Economic Council and played a central role in driving economic policies, social investment programs, and Nigeria’s climate transition. Known for his intellect, humility, and progressive leadership, he now serves as Global Advisor for the Global Energy Alliance for People and Planet (GEAPP) and chairs the Climate Action Platform for Africa. A respected pastor in the RCCG and advocate for youth empowerment, Osinbajo embodies excellence, integrity, and service — earning him his place as this week’s Africa Giant

Alright 😊 Let’s have a little talk on Apapa, a special traditional meal from the Ebira people of Kogi State, Nigeria.

Apapa is a wholesome dish made mainly from beans (usually black-eyed or brown beans). The beans are not peeled, blended into a smooth paste, and then mixed with ingredients like palm oil, pepper, onions, and seasoning before being wrapped in leaves (often banana or uma leaves) and steamed.

It’s quite similar to moin-moin but has its own Ebira twist in preparation and flavor. Apapa is highly nutritious, rich in protein, and filling, making it a staple for both everyday meals and special occasions in Ebira culture.

Beyond the taste, Apapa carries cultural pride—it’s often served at festivals, family gatherings, and traditional ceremonies, symbolizing unity and hospitality.

👉 So, when you hear “Apapa,” think of a delicious, protein-packed, leaf-wrapped delicacy that reflects Ebira tradition and love for good food.

Masa starts with soaked rice (sometimes mixed with a bit of cooked rice), blended smoothly. Yeast or a natural fermentation process helps it rise, giving it that airy texture. Some recipes add a splash of milk, sugar, or even onions. Once the batter is ready, it's poured into a *masa pan* (with round molds) and cooked over fire till golden brown at the bottom and soft on top.

Think pancake meets tradition fluffy inside, a little crispy outside.

*What it’s eaten with:*
Masa is super versatile. It goes with miyan taushe (pumpkin soup), suya, spicy pepper sauce, or even honey for a sweet version.
