GINGER PRODUCTION IN AFRICA

Nigeria is the largest ginger producer in Africa. The states that produce ginger the most in Nigeria include:
Kaduna State: The largest producer of ginger, known for its high-quality produce.
Gombe State: Another significant producer, contributing to Nigeria's overall ginger output.
Nasarawa State: Also involved in substantial ginger cultivation.
Benue State: Participates in ginger farming, adding to the national production.
Sokoto State: Known for growing ginger among other crops.
Plateau State: Historically significant in ginger cultivation since the 1920s.
Other states involved in ginger production include Osun, Anambra, Zamfara, Akwa Ibom, Oyo, Abia, and Lagos, though to a lesser extent compared to the major producers listed above.

GINGER CULTIVATION PROCESS
1. Land Preparation: The land is cleared, ploughed, and beds are created that are 50 cm apart, 15 cm high, and 1 meter wide.
2. Soil Preparation: Pasteurized animal manure or composted manure is added to improve the soil.
3. Planting: Ginger rhizomes are cut into pieces with at least one eye and 4-6g of weight per piece. They are planted 8 cm deep in holes spaced 30 cm apart.
4. Weeding and Fertilization: Periodic weeding and fertilization are required during the growth process to boost growth and ensure good yields.
5. Harvesting: The ginger is harvested after 8-10 months using a hoe or digger. The roots are washed, peeled, and dried in the sun.

CHALLENGES FACING GINGER CULTIVATION
Lack of Adequate Storage Facilities
• Nigeria lacks sufficient storage facilities to properly store harvested ginger, leading to post-harvest losses and reduced shelf life.
High Cost of Inputs
• The high cost of inputs like fertilizers, pesticides, and labour makes ginger production expensive for smallholder farmers.
Poor Market Access
• Ginger farmers often struggle to access good markets for their produce, especially international markets. Middlemen problems and lack of direct export channels are major constraints.
Rainfall Abnormalities
• Irregular rainfall patterns can negatively impact ginger yields. Ginger requires consistent moisture during the growing season.
Pests and Diseases
• Ginger is susceptible to pests like snails, mites, borers, and nematodes as well as diseases such as rust, damping off, and soft rot. Proper pest and disease management is crucial.
Low Value Addition
• Nigeria has limited processing and value addition for ginger. Most ginger is exported raw rather than as processed products like ginger powder, oil, or oleoresin.

Nigeria is the largest producer of ginger in Africa and the fourth-largest producer in the world.

Ginger cultivation in Nigeria began in 1927 in southern Zaria, Jemma Federated district, and the neighbouring parts of Plateau State.

Major ginger producing regions in Nigeria include Kaduna, Taraba, Sokoto, Plateau, and the southern part of Kaduna State.

Ginger is mainly grown by smallholder farmers, but there has been an increase in commercial ginger farming in recent years.

Red yeast rice also called Went Yeast, has been used for centuries in China as food and medicine. It is made by fermenting a type of yeast called Monascus purpureus over red rice. Homemade rice flour works great for making rice puddings, gluten-free baked goods, thickening sauces, and more.

Few examples of rice puddings are

Rice flour and milk pudding:
Blend rice flour with water to make a smooth paste.
Bring milk and sugar to a boil, then stir in the rice flour mixture.
Cook for 15 minutes, stirring constantly, until thickened.
Flavour with rose water or vanilla and serve chilled, sprinkled with cinnamon.

Thandai Phirni - Spiced Rice Flour Pudding:
