*Basic Nigerian Fried Rice*
*Serves: 3-4 people*

*Ingredients*
*For the rice:*
- *Rice*: 2 cups long grain rice
- *Water*: for boiling
- *Salt*: 1 tsp
- *Bay leaf*: 1-2 pieces
- *Thyme*: 1/2 tsp
- *Curry powder*: 1/2 tsp
- *White pepper*: 1/4 tsp

*For the stir-fry:*
- *Oil*: 1/4 cup vegetable oil
- *Onions*: 1 medium, diced
- *Bell peppers*: 1 red + 1 green, diced
- *Carrots*: 2, diced small
- *Green beans*: 1 cup, chopped
- *Peas*: 1/2 cup
- *Liver*: 200g, diced and boiled - optional but gives that party flavor
- *Seasoning*: 2 cubes, salt, curry, thyme
- *Soy sauce*: 1 tbsp - optional, adds color

*Steps*
1. *Parboil the rice*
Rinse rice till water is clear. Boil with bay leaf, salt, thyme for 8-10 mins. It should be 70% done. Drain and rinse with cold water so it doesn’t get mushy. Set aside.

2. *Prep your liver*
Boil liver with 1 seasoning cube + onions for 10 mins. Dice it. Fry it lightly in a bit of oil and set aside.

3. *Stir-fry the veggies*
Heat oil in a big pan. Add diced onions, fry 1 min.
Add curry powder, thyme, 1 seasoning cube. Stir 30 seconds.
Add carrots first - they take longer. Fry 2 mins.
Add green beans, bell peppers, peas. Stir fry 3-4 mins on high heat. You want them crunchy, not soggy.

4. *Combine*
Add the parboiled rice. Add soy sauce if using. Mix gently so the grains don’t break.
Add the fried liver. Taste and adjust salt/seasoning.
Cover on low heat for 5 mins to let flavors mix.

5. *Serve*
Serve hot with fried chicken, plantain, or stew.

*Quick tips*
- *Don’t overcook the rice* when parboiling. Mushy rice = ruined fried rice
- *High heat* for the veggies keeps them bright and crunchy
- *No liver?* Use diced chicken, sausage, or just veggies
