Nigerian Fried Rice💜
Ingredients:
4 cups long grain rice
1/2 cup vegetable oil or butter
1 tbsp curry powder
1 tsp dried thyme
1 tbsp minced garlic
1 tsp minced ginger
1 medium onion
seasoning cubes
Salt
chicken or meat stock
diced carrots
sweet corn
diced green bell peppers
diced red bell peppers
diced liver (optional)

*Rinse rice thoroughly with warm water to remove excess starch.
*cook the rice with curry, thyme, a pinch of salt, seasoning and half of the stock until it’s about 90% cooked(still firm).
*In a separate pan, heat some oil or butter.
*Sauté onions, garlic, and ginger until fragrant.
*Add diced liver or shrimp/chicken and stir-fry for 5 mins.
*Add carrots, green beans, and sweet corn. *Stir-fry for 2–3 mins.
*Add bell peppers last and stir for 1 min (to keep their crunch).
*Season lightly with curry, seasoning cube, and a pinch of salt.
*In a large pot or wok, combine veggies and the rice. do this in batches until it is well combined.
*Serve hot with fried chicken, dodo (plantain), or salad.

NOTE: • Don’t overcook your vegetables they should stay colorful and slightly crunchy

This serves 6-8 people

✅ WHITE SOUP (Ofe Nsala)

White soup, also known as Ofe Nsala is a mouth savouring soup made with Uziza or Utazi leaf. It is called white soup because of the absence of palm oil when making it. While it is traditionally made with catfish, chicken could be a replacement. Yam powder or flour serves as the thickening agent for this soup!

Puff Puff Recipe in Large Quantity (4kg Flour Batch)
Let’s settle this once and for all!
Too many people still struggle with puff puff in large quantity, but you can’t be on my timeline and still be having issues with basic things 😌

This tested-and-trusted Puff Puff recipe is for those baking in bulk, especially for events or sales.

📌 Measurement Breakdown (for 4kg flour / 4 Congo):
👉🏾 Note: 1 Congo = 8 cups = 1kg (aka “oresenya” for my Yoruba people)

✨ Ingredients:
• 4kg all-purpose flour
• 12 tbsp active dry yeast
• 1.1kg sugar (adjust to taste)
• ½ cup pepper (optional)
• 2 cups powdered milk (optional)
• ⅓ tbsp salt
• 16 cups water (add more if needed)
• 2–3 tbsp nutmeg
• 4 liters of oil (some will remain)

👩🏽‍🍳 Procedure:

1. Combine all dry ingredients in a large bowl

2. Gradually add water and mix thoroughly until smooth

3. Cover and allow it to rise for 1 hour 30 minutes

4. Fry in hot oil over medium heat until golden brown

5. Drain, serve, and enjoy!

✅ That’s it! Whether you’re feeding a crowd or selling in bulk, this will deliver consistent, fluffy puff puff every time.

CHICKEN STEW RECIPE (Step-by-Step Guide with Pictures)

Ingredients:
• Chicken
• Tomatoes
• Red bell peppers (Tatashe)
• Cayenne peppers
• Scotch bonnet peppers
• Onions
• Garlic & ginger
• Parsley (optional)
• Rosemary
• Curry powder
• Thyme
• Salt
• Seasoning cubes or powder

1. Thoroughly wash the chicken and place it in a clean pot. Season with salt, curry, thyme, rosemary, grated or crushed garlic and ginger, chopped onions, parsley (optional), and scotch bonnet peppers.

2. Mix everything well to combine. Cover and cook on low heat for about 15 minutes without adding water. Allow the chicken to release its natural juices.

3. Once the chicken releases its juice, add just enough water to cook it through. Let it simmer until the chicken is tender.

4. While the chicken is cooking, wash the tomatoes, red bell peppers (Tatashe), cayenne peppers, scotch bonnet peppers, and onions thoroughly. Remove the seeds from the Tatashe and cayenne peppers. Blend everything to your preferred texture.

5. Pour the blended mixture into a clean pot and boil it until most of the liquid evaporates.

6. Check if the chicken is fully cooked. Once tender, remove from the pot and lightly fry until golden brown.

7. In a separate pot, heat some cooking oil. Add chopped onions and sauté briefly. Then add the boiled pepper mix, stir well, and season to taste. Cover and let it fry until the oil separates from the sauce.

8. Pour in the reserved chicken stock to loosen the stew. Stir and allow it to come to a boil.

9. Add the fried chicken to the boiling stew and let it simmer for a few more minutes so the flavors combine.

10. Sprinkle chopped parsley leaves or any garnish of your choice for added flavor and color.

11. Enjoy your chicken stew with hot white rice, spaghetti, yam, or any side of your choice!
